nonstick cooking spray
2 cups white sugar
2 cups light corn syrup
1 pound butter
2 cups heavy cream
2 teaspoons vanilla extract
8 cups pecans

Steps:

  • Line 2 baking sheets with aluminum foil. Coat with nonstick cooking spray.
  • In a large saucepan over medium heat, combine sugar and corn syrup. Heat to 250 degrees F (120 degrees C). Remove from heat, and stir in butter until melted. Gradually stir in cream. Return to heat. Cook, stirring constantly, until temperature reaches 242 degrees F (116 degrees C). Remove from heat, and stir in vanilla and pecans.
  • Drop by spoonful onto prepared pans. Cool completely, then wrap with plastic.

Howdy Ya'll. Ready for some darn good cake? This tasty pecan cake has the subtle flavors of chocolate and coffee, and is frosted with a rich brown sugar whipped cream. This cake prefers Texas pecans!

1 cup butter or margarine
1 cup brown sugar
½ cup white sugar
4 eggs
1 ½ teaspoons vanilla extract
1 ½ cups water
1 tablespoon instant coffee granules
4 cups all-purpose flour
1 tablespoon unsweetened cocoa powder
5 teaspoons baking powder
1 teaspoon salt
1 cup coarsely chopped pecans
1 cup heavy cream, chilled
⅛ teaspoon salt
½ teaspoon vanilla extract
½ cup brown sugar, not packed
10 pecan halves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease just the bottom of a 10 inch tube pan.
  • In a large bowl, cream together the butter, 1 cup brown sugar and white sugar until smooth. Beat in the eggs one at a time, mixing well after each. Stir in vanilla. Dissolve the coffee crystals in water, and stir into the creamed mixture until blended. Stir together the flour, cocoa, baking powder and salt; stir into the batter until just incorporated. Fold in pecans. Transfer the batter to the prepared pan.
  • Bake for about 55 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Cool cake in pan on a wire rack.
  • In a chilled bowl, stir together the heavy cream, salt, vanilla and remaining 1/2 cup brown sugar so that the sugar is dissolved. Whip using chilled beaters until stiff. Run a knife around the outer edge of the cake in the pan, and tap it out onto a serving plate. Make sure cake is completely cool before frosting. Decorate with pecan halves if you like.

3 teaspoons butter
1/2 cup butter, cubed
2 cups sugar
1 cup packed brown sugar
1 cup half-and-half cream
1/2 cup sweetened condensed milk
1 tablespoon light corn syrup
Dash salt
3 cups pecan halves
1/2 teaspoon vanilla extract

Steps:

  • Line 3 baking sheets with foil and grease the foil with 1 teaspoon butter each; set aside., In a large heavy saucepan over medium heat, melt cubed butter. Stir in sugars, cream, milk, corn syrup and salt; cook and stir until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 236° (soft-ball stage), about 20 minutes., Remove from heat; stir in pecans and vanilla. Cool, without stirring, to 170°, about 20 minutes. Stir with a wooden spoon until mixture just begins to thicken but is still glossy, about 2 minutes., Quickly drop by rounded tablespoonfuls onto prepared baking sheets. Let stand until pralines are set and no longer glossy. Refrigerate until completely set, about 1 hour. Store in an airtight container in the refrigerator.

Number Of Ingredients 7

2 cups white sugar
2 cups brown sugar
2 teaspoons vanilla extract
6 tablespoons light corn syrup
4 cups pecans
1 heaping tablespoon unsalted butter
2/3 cup milk

Steps:

  • Mix all ingredients very well in a cold pan.
  • Turn stove on medium high heat, and when mixture comes to a boil, cook and stir for 4 minutes. (If you use a candy thermometer, temperature should be 234F.)
  • Remove from heat. Stir for about 1 minute or until mixture is not so glossy. Spoon pralines onto trays lined with foil or parchment paper. Let cool for about 20 minutes and remove. Can store covered for 1 week.

1/2 cup margarine or 1/2 cup butter
2 tablespoons Karo syrup
2 -3 cups pecans
1 cup light brown sugar, packed
1 (6 ounce) can evaporated milk
1 teaspoon vanilla

Steps:

  • Put all ingredients except pecans and vanilla in a 3 quart saucepan and cook 20 minutes after boiling starts -- stirring occasionally.
  • Add pecans and vanilla
  • Remove from heat and stir well.
  • Drop by spoonfuls on wax paper.
  • Sets up quickly -- work fast.
