ZUCCHINI CASSEROLE I
This is a great recipe to use up all those summer zucchinis from your garden. Makes a nice brunch dish.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl combine stuffing and butter. In a separate bowl combine zucchini, carrots, onion, soup and sour cream. Mix in 1/2 of the stuffing mixture, then spread into a 9x12 inch casserole dish and sprinkle the remaining stuffing on top.
- Cover the dish with aluminum foil and bake in preheated oven for 60 minutes.

Steps:
- Melt butter in 12-inch skillet over medium-high heat. Add zucchini and onions; cook six to eight minutes or until tender, stirring occasionally, adding garlic for the last two minutes. Stir in parsley, salt, pepper, basil and oregano. Set aside to cool. In large bowl, combine eggs and cheese and ham; mix well. Add cooked vegetable mixture, stir gently to mix. Place dough in ungreased pan. I use a 9 x 11 disposable sheet pan if I'm taking it to a covered dish affair. You can also use a 2 quart glass baking dish or an 11 inch quiche pan. Press dough over bottom and up sides to form crust. Spread crust with mustard. Pour egg/veggie mixture evenly into crust-lined pan. Bake at 375 degrees for 18 to 25 minutes or until knife inserted near center comes out clean. You might need to cover edge of crust with foil during last ten minutes to prevent excessive browning. Let stand ten minutes before serving. Can be made the day before. Cover refrigerate cook next day uncovered

This is very delicious! I like to use fresh vegetables from the market when I make this. It has a juice after it's cooked that is great for dipping bread into.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Cover bottom of baking dish with half of the zucchini slices. Layer with half of the onion rings, tomato slices and pepperoni slices. Sprinkle with half of each of the cottage cheese, Cheddar cheese and mozzarella cheese. Repeat layers.
- Bake in preheated oven for 30 to 40 minutes, or until zucchini is tender, and cheese is melted.

- Preheat oven to 400°. In a large bowl, combine squash, 3/4 cup cheese, onion, chiles and jalapenos. Sprinkle with flour and salt; toss to combine., Transfer to a greased 13x9-in. baking dish. Bake, covered, until squash is tender, 30-40 minutes., Spoon salsa over top; sprinkle with remaining 1-1/2 cups cheese. Bake, uncovered, until golden brown, 10-15 minutes longer. Let stand 10 minutes. Top with green and red onions before serving.

TEXAS CASSEROLE
This is a nice, smooth, cream cheese & noodle casserole with a tomato based sauce and was a favorite of mine when I was growing up. Mom says it's been in the family for years! Feel free to tinker with the amounts!
