- Cook the garlic and ginger for 1 minute.
- Add the chicken and brown for 4-5 minutes.
- Add the sugar, soy,chilli and fish sauces and lime juice. Simmer until the chicken is cooked.
- Cook the noodles in boiling water until tender.
- Drain, add to the pan ,along with the broccoli, and toss well.
- Serve with the Coriander Mango Salsa: combine all ingredients in a bowl and mix well.

- Mix mangoes, red onion, bell pepper, mint, cilantro, and chile pepper together in a bowl.
- Mix fish sauce and sugar together in a bowl until dissolved. Pour dressing over salad. Refrigerate at least 2 hours.
- Top with peanuts and lime juice just before serving.
