1 tablespoon chili oil
1 garlic clove, chopped
3 scallions, sliced
1 red bell pepper, seeded and finely sliced
2 tablespoons cornstarch
4 cups vegetable stock
1 tablespoon soy sauce
2 tablespoons rice wine (or dry sherry)
5 1/2 ounces pork tenderloin, sliced
1 tablespoon lemongrass, finely chopped
1 small red chili pepper, seeded and finely chopped
1 tablespoon fresh ginger, grated
4 ounces fine egg noodles
7 ounces canned water chestnuts, drained and sliced
salt and pepper

Steps:

  • Heat a large pan, then add the oil. Add the garlic and scallions and cook over medium heat, stirring for 3 minutes, until slightly softened. Add the bell pepper and cook for an additional 5 minutes, stirring.
  • In a bowl, mix the cornstarch with enough of the stock to make a smooth paste and stir it into the pan. Cook, stirring, for 2 minutes. Stir in the remaining stock, the soy sauce, and rice wine, then add the pork, lemongrass, chile and ginger. Season to taste with salt and pepper. Bring to a boil, then reduce the heat and simmer for 25 minutes.
  • Cook the noodles according to the package directions. Remove from the heat, drain, then add to the soup along with the water chestnuts. Cook the soup for an additional 2 minutes, then remove from the heat. Ladle into warmed bowls, and serve immediately.

1 1/2 cups dried orzo pasta
2 tablespoons cooking oil
12 ounces pork tenderloin or 12 ounces lean boneless pork, cut into bite-size pieces
8 ounces green beans, bias-sliced into 1 . 5-inch pieces (2 cups)
1 sweet red pepper, cut into thin bite-size strips
2 green onions, bias-sliced into 1/4-inch pieces
1 (14 ounce) can reduced-fat unsweetened coconut milk
4 teaspoons bottled curry paste
2 teaspoons sugar
2 tablespoons lime juice

Steps:

  • Cook pasta according to package; drain. Meanwhile, pour one tablespoon of the oil into a large nonstick skillet. Preheat over medium-high heat. Stir-fry meat in hot oil for 3 to 4 minutes or until slightly pink in center. Remove from skillet.
  • Add the remaining 1 tablespoon oil to skillet. Add green beans; stir-fry for 3 minutes. Add sweet pepper and green onions; stir-fry about 2 minutes more or until vegetables are crisp-tender. Add coconut milk, curry paste, and sugar. Reduce heat to low, stirring until combined. Stir in cooked meat and lime juice; heat through. Serve immediately over pasta.

1 ½ tbsp Thai red curry paste
1 tsp vegetable oil
1l vegetable stock
400ml can half-fat coconut milk
2 tsp brown sugar
175g medium egg noodles
2 carrots , cut into matchsticks
½ head Chinese leaf , sliced
½ x 300g bag beansprouts
6 cherry tomatoes , halved
juice 1 lime
3 spring onions , halved, then finely sliced lengthways
handful coriander , roughly chopped

Steps:

  • Place the curry paste in a large saucepan or wok with the oil. Fry for 1 min until fragrant. Tip in the vegetable stock, coconut milk and brown sugar. Simmer for 3 mins.
  • Add the noodles, carrots and Chinese leaf and simmer for 4-6 mins, until all are tender. Mix in beansprouts and tomatoes. Add lime juice to taste and some extra seasoning, if you like. Spoon into bowls and sprinkle with spring onions and coriander.

I love Thai curry, and I love noodle bowls, and this is a blend of the two. It may not be authentic but it hits the spot.

12 ounces refrigerated chow mein noodles
¼ cup soy sauce
1 tablespoon honey, or to taste
1 ½ teaspoons fish sauce
1 tablespoon vegetable oil
2 tablespoons red curry paste
1 tablespoon chopped garlic
1 teaspoon ginger paste
1 (13.5 ounce) can coconut milk
1 ½ pounds boneless pork loin chops, cut into thin strips
1 cup julienned carrots
1 (8 ounce) package sugar snap peas
¼ cup chopped fresh cilantro, or to taste
½ lime, zested and juiced

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook noodles in the boiling water, stirring occasionally, until tender yet firm to the bite, about 2 minutes. Drain and set aside.
  • Meanwhile, combine soy sauce, honey, and fish sauce in a small bowl until blended; set aside.
  • Heat a large nonstick skillet over medium heat for 1 to 2 minutes. Pour in vegetable oil. Add curry paste, garlic, and ginger paste; cook until fragrant, about 1 minute. Add coconut milk in intervals, stirring as you pour it in to keep the sauce from separating.
  • Add pork strips, carrots, and snap peas and cook until pork is cooked through, about 5 minutes. Add drained noodles to the skillet, then add soy sauce mixture. Simmer until sauce has thickened, 4 to 5 minutes.
  • Divide pork and noodle mixture among serving bowls and top with cilantro, lime zest, and juice. Serve immediately.
