THAI RED CURRY FRIED CHICKEN BURGER

If you love fried chicken and the flavour of Thai red curry, then we've combined the two to make the most epic burger around. Juicy and tender with one heck of a crunch... and we're even giving the mayo a zhuzh with some of our very own curry paste. Totally wholesome, even more awesome.

Number Of Ingredients 16

1½ tbsp Marion's Kitchen Thai Red Curry Paste
100ml (3.5 fl oz) coconut milk
1 tbsp fish sauce
4 chicken thigh fillets
¾ cup plain (all-purpose) flour
4 cup cornflour (cornstarch)
½ tsp baking powder
sea salt
vegetable oil, for deep-frying
4 x brioche buns
oak or butter lettuce leaves
Thai red curry mayo
1 cup whole egg mayonnaise
2 tbsp Marion's Kitchen Thai Red Curry Paste
1 lime, juiced
1 tsp sea salt

Steps:

  • 1.In a large bowl, whisk together the Thai red curry paste, coconut milk and fish sauce. Add the chicken thighs to the paste mixture, then cover and set aside for 1 hour to marinate.
  • 2.To make the chicken coating, place the plain flour, cornflour, baking powder and 1 teaspoon of salt in a large bowl. Whisk to combine.
  • 3.Pick up one chicken thigh and allow excess red curry marinade to drip off. Place the chicken into the flour mixture and toss to coat, pressing flour firmly onto the chicken. Repeat with remaining chicken thighs.
  • 4.Preheat the oven grill to high. Fill a wok or deep frying pan one-third full with oil. Heat the oil to 165°C (325°C) or until bubbles form when you dip a wooden spoon or chopstick into the oil. Add coated chicken thighs and cook for 10-12 minutes, turning the chicken every so often, or until cooked through.
  • 5.Meanwhile, To make the Thai red curry mayo, whisk together the mayonnaise, red curry paste, lime juice and salt in a small bowl until well combined.
  • 6.Slice brioche buns in half and place on a baking tray, cut sides facing up. Lightly toast under the hot grill until golden Spread with the red curry mayo, then top the four burger bun bases with some lettuce leaves.
  • 7.Transfer chicken pieces to a wire rack set on a rimmed baking sheet to drain. Season with extra salt then place on top of the lettuce. Finish by adding the burger tops, then serve with extra mayo on the side for a cheeky sauce top-up.

1 tablespoon Thai red curry paste
3/4 cup fresh breadcrumb
2 tablespoons fresh coriander, chopped finely
4 kaffir lime leaves, chopped finely
1 egg, beaten
1 tablespoon soy sauce

Steps:

  • Place mince in bowl, stir in red curry paste.
  • Add breadcrumbs, coriander, lime leaves, egg and soy sauce.
  • Mix till sticky with clean hands.
  • Shape mixture into large patties.
  • Cook on preheated grill pan, 4 - 5 minutes each side till cooked through.
  • Serve in buns with sweet chilli sauce.

You don't need too many special ingredients on hand to make this delicious Thai red curry meal!

1 ½ cups water
1 cup jasmine rice
2 tablespoons peanut oil, divided
1 pound skinless, boneless chicken breast, cut in bite-sized pieces
2 cloves garlic, minced, divided
salt and ground black pepper to taste
1 (1/2 inch) piece fresh ginger, minced
2 tablespoons Thai red chile paste
1 (14 ounce) can coconut milk
1 cup chicken broth
1 stalk lemongrass, bruised
3 makrut lime leaves (optional)
1 medium lime, juiced
1 teaspoon fish sauce
1 crown broccoli, cut into bite-sized pieces

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 15 minutes. Keep warm until ready to use.
  • Meanwhile, heat 1 tablespoon oil in a large saute pan over medium-high heat. Add chicken, 1/2 of the garlic, salt, and pepper. Cook and stir until chicken is browned and the juices run clear, 8 to 10 minutes. Remove chicken to a plate.
  • Add remaining oil to the same pan. Saute remaining garlic and ginger until fragrant, about 1 minute. Stir in chile paste. Add coconut milk and stir until blended. Simmer for 5 minutes.
  • Add chicken broth, lemongrass, lime leaves, lime juice, and fish sauce. Simmer, uncovered, for 10 minutes.
  • Add chicken and broccoli, and simmer gently for 10 more minutes. Taste and season as necessary. Serve over warm rice.

1 lime, Finely grated peel
1 tablespoon lime juice

1 (20 ounce) package ground turkey breast
1/2 cup peanuts, finely chopped dry-roasted
1/3 cup cilantro, chopped fresh
3 tablespoons mint, chopped fresh
2 teaspoons Thai red curry paste
1 lime, finely grated peel
1 tablespoon lime juice
1/2 teaspoon salt
1/4 teaspoon pepper
4 hamburger buns, split
4 leaves lettuce

Steps:

  • In small bowl, stir the first 5 ingredients with whisk. Cover; refrigerate until serving time.
  • Heat gas or charcoal grill. In large bowl, mix all burger ingredients except buns and lettuce. Shape mixture into 4 patties, 1/2 inch thick.
  • Carefully brush oil on grill rack. Place patties on grill over medium heat. Cover grill; cook 9 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 165°F.
  • Place burgers on bottom halves of buns. Spread tops of burgers evenly with Red Curry Mayo. Top with lettuce. Cover with top halves of buns.

500g turkey mince
85g fresh breadcrumb
3 tbsp red Thai curry paste (2 tbsp if you are using an authentic hot Thai brand
½ bunch spring onion finely chopped
1 egg , beaten
1 tbsp sunflower oil
mango pickle mayo
Spicy mango salsa
4 ciabatta rolls, split
handful Baby Gem lettuce leaves
½ cucumber , peeled and sliced
4 ripe tomatoes , sliced

Steps:

  • Place mince, breadcrumbs, curry paste, spring onions and egg into a large bowl. Season lightly, then mix well with your hands to combine. Divide into 4 and shape into burgers. Chill for 20 mins.
  • Meanwhile, make the salsa and mayo. Brush the burgers with oil and grill for 7 mins each side, or until firm, golden and cooked through. Alternatively, cook on the barbecue.
  • Once cooked, toast the rolls, cut-side up, under the grill. To serve, top the rolls with a turkey burger, add lettuce, cucumber, tomato slices and a spoonful of mayo or salsa and put the lids on.
