SPINACH & CUCUMBER SALAD WITH YOGURT-MINT DRESSING

Steps:
- In a medium bowl, whisk the lemon juice and honey. In another bowl, whisk the yogurt and olive oil. Add the yogurt mixture to the lemon juice in a thin stream, whisking constantly. Add the mint, 1/2 tsp. salt, and pepper to taste. Chill, covered, for up to 24 hours.
- In a large bowl, combine the spinach, cucumbers, and onion. Season lightly with salt and pepper and add just enough dressing to moisten the ingredients. Toss to coat, divide among eight plates, and serve, passing any extra dressing at the table, if you like.

SPINACH-YOGURT DIP WITH SIZZLED MINT
Our version of this dip (called borani esfanaaj in Iran) uses spinach, but it can be made with cooked beets or roasted eggplant, too.

Steps:
- Preheat oven to 350°F. Toast walnuts on a baking sheet, tossing once, until golden brown, 6-8 minutes. Let cool; finely crush with the side of a chef's knife.
- Place a medium skillet over medium heat and add 1/2 cup water. As soon as you see bubbles, add one-third of the spinach and cook, stirring occasionally, until most of the spinach is wilted, then add more. Continue to cook, stirring occasionally, until all the spinach is in the pan and wilted, 6-8 minutes. Transfer spinach to a bowl of ice water to stop the cooking and lock in its bright green color. Drain and squeeze out excess liquid. Finely chop spinach and set aside.
- Wipe out skillet and heat 2 Tbsp. oil over medium. Cook onion, stirring occasionally, until soft but without taking on any color, 6-8 minutes. Add garlic and a pinch of salt and cook, stirring occasionally, until garlic is softened, 2-3 minutes. Transfer to a small bowl.
- Heat remaining 4 Tbsp. oil in a small skillet over medium. Once oil begins to shimmer, remove from heat and stir in dried mint. The oil will sizzle immediately and the mint will become fragrant. Transfer to a small bowl; season with salt.
- Combine yogurt, lemon juice, onion mixture, half of the walnuts, and reserved spinach in a medium bowl. Taste and season with salt and pepper. Scrape into a shallow serving bowl and use the back of a spoon to carve a few swirls into the dip. Top with remaining walnuts and spoon sizzled mint oil over.
SPINACH WITH YOGURT AND MINT
Steps:
- Wash spinach, remove tough stems. Drain and steam in the liquid that clings to leaves.
- Chop onion and heat oil. Cook onion in hot oil until translucent.
- Drain spinach thoroughly.
- Mince garlic; chop mint and combine with yogurt, salt and pepper to taste.
- Chop walnuts, if used, and add to yogurt. Combine yogurt mixture with onion and spinach. Serve warm, not hot.

SPINACH WITH GARLIC YOGURT AND WALNUT DUKKAH
This is inspired by one of my favorite Middle Eastern spinach recipes. Use lush bunches of spinach from the farmers' market. You will only need a small amount of dukkah for this dish, but since it keeps so well and makes a great snack, you might as well make a whole batch and keep what you don't need on hand in a jar in the freezer or refrigerator.

- Make the dukkah. Chop the walnuts very fine. Mix with the toasted sesame seeds in a bowl. In a dry skillet lightly toast the coriander seeds just until fragrant and immediately transfer to a spice mill. Allow to cool. In the same skillet toast the cumin seeds just until fragrant and transfer to the spice mill. Allow to cool. When the spices have cooled, grind and add to the nuts and sesame seeds. Add the nigella seeds, sumac, chili powder and salt and mix together. Measure out 2 tablespoons and store the remainder of the dukkah in a jar in the refrigerator or the freezer.
- Steam the spinach over 1 inch of boiling water until wilted, 1 to 2 minutes (or a little longer, depending on how much spinach you have in your steaming basket; you may have to do this in batches). Turn the leaves with tongs about halfway through the steaming. My pot of choice for this is a pasta pot with an insert. Remove from the heat, rinse briefly with cold water and squeeze out excess water. If desired, chop coarsely.
- Combine the ground clove, allspice, cumin and cinnamon for the spinach, and set aside.
- In a mortar and pestle, combine the garlic and a generous pinch of salt and mash to a paste. Stir into the yogurt. Set aside.
- Heat the olive oil over medium heat in a wide, heavy skillet and add the ground clove, allspice, cumin and cinnamon mix. Cook until the mixture begins to sizzle, add the spinach and salt and pepper to taste. Cook, stirring, until the spinach is heated through and coated with the oil, 2 to 3 minutes. Transfer to a serving dish and spoon the yogurt over the top. Sprinkle the dukkah over the yogurt, garnish with pomegranate seeds, if desired, and serve.

SPINACH AND MINT SOUP

- Heat 1/4 cup oil in large saucepan over medium heat. Add onion; sauté until tender, about 8 minutes. Add potato and garlic; sauté 5 minutes. Add 4 1/2 cups broth and green onions; bring to boil. Cover and simmer until potato is tender, about 15 minutes. Add spinach, 3/4 cup mint, and cilantro. Simmer soup 1 minute.
- Puree soup in blender in batches; return to same pot. Thin with more broth by 1/4 cupfuls, if desired. Season soup with salt and pepper. DO AHEAD Can be made 1 day ahead. Chill until cold, then cover and keep chilled. Rewarm before serving.
- Heat remaining 1/4 cup oil in small skillet over low heat. Mix in paprika; cook 1 minute. Ladle soup into bowls. Drizzle with paprika oil; garnish with 1/4 cup mint.
SPINACH YOGURT DIP RECIPE BY TASTY
