QUICK SHRIMP THAI NOODLES STIR-FRY



Quick Shrimp Thai Noodles Stir-Fry image

Shrimp Thai Noodles Stir-Fry is a less than 30-minute, gluten-free dish that takes store-bough stir-fry rice noodles, shrimp, fresh vegetables, lime, sugar, and Teriyaki sauce. A weeknight dinner favorite!

1 (14-ounce) package Thai Kitchen stir-fry rice noodles
1 lime, juiced
1 Tablespoon sugar
1/4 cup Teriyaki marinade and sauce
2-3 Tablespoons peanut oil or vegetable oil
8 ounces sliced baby bella mushrooms
1/2 medium red onion, sliced
1 jalapeno, sliced (or 1-2 Thai chili, whole)
1/3 cup shredded carrots
1 garlic clove, minced
4-5 fresh Thai basil leaves, thinly sliced (If desired, use Italian basil or lime basil)
1 pound Jumbo shrimp (raw, shell and tail-off), thawed and pat dry
4-5 grape tomatoes, sliced (optional)

Steps:

  • Place water in a large pot and bring to a boil. Turn off the heat and let noodles soak for about 8-10 minutes or until firmly cooked. Drain and set aside.
  • Meanwhile, combine lime juice, sugar, and teriyaki sauce in a small bowl and set aside. Heat oil over medium high heat in a large wok. Add the mushrooms and onions and let them cook for about 2 minutes, stirring almost constantly. Add the jalapeno, carrots, garlic, and basil and let them cook for about 30 seconds, stirring constantly.
  • Add the shrimp and let cook for about 3-4 minutes or just until turning pink, stirring now and then. Stir in the the reserved lime/sugar/sauce mixture and then toss well the cooked, drained noodles. If desired, garnish the dish with sliced grape tomatoes. Just like your favorite Thai takeout-but better. In Thailand, you'll find street vendors whipping up this noodle dish to order from scratch. There are numerous variations of the ingredients used to achieve the perfect sweet, sour and umami noodle dish. We've chosen to use sriracha in our version for its warming heat and sweetness. It also adds a nice color. In quick-cooking stir-fry dishes, it's imperative to have all your ingredients prepped and ready-to-go before you start cooking.

5 ounces flat rice stick noodles
3 tablespoons fish sauce
2 tablespoons brown sugar
2 tablespoons tamarind concentrate or tamarind paste (see Cook's Note)
1 tablespoon freshly squeezed lime juice, plus more lime wedges for serving
1 to 3 tablespoons sriracha, depending on the desired heat level
3 tablespoons vegetable oil
1/4 cup cubed extra-firm tofu (1-by-1/2-inch cubes)
12 medium peeled and deveined shrimp (about 5 ounces)
1 shallot, thinly sliced
1 large egg, lightly beaten
1/2 red bell pepper, cut into thin strips
3 thin scallions, cut diagonally into 1-inch pieces (halved legthwise if large)
1 cup mung bean sprouts
1/4 cup roasted peanuts, chopped
1/4 cup cilantro leaves

Steps:

  • Cook the noodles according to package instructions and set aside.
  • Stir together the fish sauce, brown sugar, tamarind concentrate, lime juice and sriracha in a small bowl until well combined.
  • Heat the oil in a large nonstick skillet over medium heat. Add the tofu and cook, stirring occasionally, until lightly browned, 4 to 5 minutes. Push the tofu to the side, allowing the excess oil to drip down into the middle of the skillet. Add the shrimp and shallots and cook, stirring occasionally, until the shrimp are opaque and cooked through, 3 to 4 minutes. Push to the side with the tofu, allowing the excess oil to drip down into the middle of the skillet. Add beaten egg to the skillet and cook, stirring occasionally and chopping to break up, until cooked through, about 30 seconds. Push the egg to the side with the tofu and shrimp. Add the peppers to the skillet and cook just to soften slightly, about 2 minutes. Add the noodles, scallions, bean sprouts and sauce to the skillet. Incorporate the tofu, shrimp and egg into the ingredients and stir fry, coating the ingredients with the sauce and simmering to thicken, 3 to 5 minutes.
  • Transfer the stir-fry to a serving dish and top with chopped peanuts and cilantro leaves. Serve immediately with lime wedges.

1 pound cooked medium shrimp, peeled and deveined
1/3 cup Italian salad dressing
8 ounces uncooked angel hair pasta
1/4 cup chicken broth
2 tablespoons minced fresh cilantro
2 tablespoons chunky peanut butter
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon minced fresh gingerroot
1/2 teaspoon crushed red pepper flakes
1 cup julienned carrots
1 cup chopped green onions
2 tablespoons canola oil
1 tablespoon sesame oil

Steps:

  • In a large resealable plastic bag, combine shrimp and salad dressing. Seal bag and turn to coat; refrigerate for at least 15 minutes. Meanwhile, cook pasta according to package directions. , In a small bowl, combine the broth, cilantro, peanut butter, honey, soy sauce, ginger and pepper flakes; set aside. In a large skillet, saute carrots and onions in oils for 2-3 minutes or until crisp-tender. , Drain and discard marinade. Add shrimp to vegetables; cook for 2-3 minutes or until heated through. Drain pasta and place in a large bowl. Add shrimp mixture and peanut butter mixture; toss to coat.

8 ounces spaghetti noodles, broken
1 1/2 lbs broccoli florets (5 cups)
1 lb fresh shrimp or 1 lb frozen shrimp, peeled and deveined with tails intact
1/3 cup creamy peanut butter
1/4-1/3 cup soy sauce
3 tablespoons rice vinegar
2 tablespoons sesame oil
1 tablespoon chili oil (or cooking oil plus dash bottled hot pepper sauce)
1 tablespoon grated gingerroot
3 garlic cloves, minced
4 green onions, chopped
1/3 cup chopped cashews or 1/3 cup almonds

Steps:

  • In a 4 qt Dutch oven, bring a large amount of water to boil.
  • Add pasta and cook 4 minutes.
  • Add broccoli and cook 2 minutes.
  • Add shrimp and cook 2 to 3 minutes or until pink.
  • Meanwhile, in a bowl combine peanut butter and soy sauce.
  • Stir in vinegar, sesame oil, chili oil, gingerroot, and garlic.
  • Drain spaghetti mixture and return to pan.
  • Add peanut butter mixture, green onions and nuts.
  • Toss gently to coat.

1 cup minced fresh basil
3 tablespoons lime juice
4 teaspoons Thai red chili paste
1 garlic clove, minced
1 teaspoon minced fresh gingerroot
1-1/2 pounds uncooked shrimp (26-30 per pound), peeled and deveined
12 ounces uncooked angel hair pasta
4 teaspoons olive oil, divided
1 can (14-1/2 ounces) chicken broth
1 can (13.66 ounces) coconut milk
1 teaspoon salt
1 tablespoon cornstarch
2 tablespoons cold water
2 tablespoons grated lime zest

Steps:

  • Place the first five ingredients in a blender; cover and process until blended. Remove 1 tablespoon mixture; toss with shrimp., Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Add half of the shrimp mixture; stir-fry 2-4 minutes or until shrimp turn pink. Remove from pan; keep warm. Repeat with remaining oil and shrimp mixture., Add broth, coconut milk, salt and remaining basil mixture to same pan. In a small bowl, mix cornstarch and water until smooth. Stir into broth mixture. Bring to a boil; cook and stir 1-2 minutes or until slightly thickened. Stir in lime zest., Drain pasta; add pasta and shrimp to sauce, tossing to coat.
