Time 35m

Yield 4 serving(s)

Number Of Ingredients 14

2 3/4 cups chicken stock
2 tablespoons butter
1 1/2 cups white rice
vegetable oil, for stir-frying
1 1/2 lbs boneless skinless chicken breasts, chopped into bite-size pieces Finely ground white or 1 1/2 lbs black pepper
1/4 pineapple, trimmed and sliced into thin, bite-size pieces (1 cup)
1 bell pepper, seeded, quartered lengthwise and thinly sliced
1 thai chili pepper, seeded and thinly sliced
1 piece fresh ginger, grated
3 -4 large garlic cloves, chopped
2 tablespoons tamari plus 1 tsp. sugar
1 1/2 tablespoons fish sauce
1 cup basil leaves, torn (about 20 to 24)
1 lime, 1/2 juiced and 1/2 cut into wedges, plus 1 tsp. zest

Steps:

  • In a medium saucepan, bring the chicken stock and butter to a boil, then stir in the rice and return to a boil. Lower the heat, cover and simmer until tender, 16 to 18 minutes. Fluff with a fork.
  • When the rice is about ready, heat a thin layer of oil, about 1 1/2 tbsp., in a large nonstick skillet over high heat. Pat the chicken dry and season with pepper. Add the meat to the pan in a single layer and do not touch for 2 minutes; stir-fry until golden, about 3 minutes more. Transfer to a plate.
  • Add a little more oil to the skillet and heat up, then add the pineapple, bell pepper, chile pepper, ginger and garlic and stir-fry until crisp tender and the pineapple pieces are light golden at the edges, about 3 minutes. Stir in the kecap manis (or tamari and sugar) and fish sauce. Add the chicken and toss to coat.
  • Turn off the heat and add half the basil leaves to wilt. Stir in the lime juice and zest and toss again to combine. Serve with the rice and garnish with the lime wedges and remaining basil.

THAI-STYLE CHICKEN WITH BASIL (COOK'S ILLUSTRATED)

Thai-Style Chicken With Basil (Cook's Illustrated) image

I have yet to try a recipe from the Food Gods that are Cook's Illustrated that I didn't care for and this one fails to disappoint as well. The method here requires slower cooking than the usual stir-fry in order to allow the aromatics to permeate the oil. It should be noted that my version had some ingredients substituted with what I could find: jalapenos for the Thai chilies (I know...what was I thinking?) and Italian basil for what C.I. recommends; "hot basil". I'm not even sure what that is, but apparently it has a "robust texture that can stand up to prolonged cooking". Anyway, it was still delicious with my substitutions! Times are estimated.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

2 cups fresh basil leaves (hot basil or Thai holy basil if you can find it)
3 medium garlic cloves, peeled
6 Thai green chili or 6 red Thai red chili peppers, stemmed
2 tablespoons fish sauce, plus extra for serving
1 tablespoon oyster sauce
1 teaspoon white vinegar, plus extra for serving
1 tablespoon sugar, plus extra for serving
1 lb boneless skinless chicken breast, cut into 2-inch pieces
3 medium shallots, peeled and thinly sliced (about 3/4 cup)
2 tablespoons vegetable oil
red pepper flakes, for serving

Steps:

  • Process 1 cup basil leaves, garlic and chiles in food processor until finely chopped, 6 to 10 1-second pulses, scraping down the bowl with a rubber spatula as needed (turn off processor first!).
  • Transfer 1 tablespoon basil mixture to small bowl and stir in 1 tablespoon fish sauce, oyster sauce, vinegar and sugar; set aside. Transfer remaining basil mixture to 12-inch heavy-bottomed nonstick skillet. Do not wash food processor bowl.
  • Pulse chicken and 1 tablespoon fish sauce in food processor until meat is chopped into approximate 1/4-inch pieces, six to eight 1-second pulses. [ NOTE: I used a blender and it started to make the chicken mushy, which was *not* what you want here. I stopped immediately and ended up hacking away at the remains with a cleaver. :o) ] Transfer to medium bowl and refrigerate 15 minutes.
  • Stir shallots and oil into basil mixture in skillet. Heat over medium-low heat (mixture should start to sizzle after about 1 1/2 minutes; if it doesn't, adjust heat accordingly), stirring constantly, until garlic and shallots are golden brown, 5-8 minutes.
  • Add chicken, increase heat to medium, and cook, stirring and breaking up chicken with potato masher or rubber spatula, until only traces of pink remain, 2 to 4 minutes. Add reserved basil-fish sauce mixture and continue to cook, stirring constantly until chicken is no longer pink, about 1 minute.
  • Stir in remaining cup basil leaves and cook, stirring constantly, until basil is wilted, 30 to 60 seconds. Serve immediately, passing extra fish sauce, sugar, red pepper flakes and vinegar separately.

THAI CHICKEN SOUP(COOK'S ILLUSTRATED)

Thai Chicken Soup(Cook's Illustrated) image

If you want a soup with less fat, it is possible to substitute light coconut milk for one or both cans of regular coconut milk. Fresh lemon grass can be omitted. If you want a spicier soup, add more red curry paste to taste. For a more substantial meal, serve the soup over 2 to 3 cups of cooked jasmine rice. The soup can be prepared through step 1 up to one day ahead of time and refrigerated, but it should be completed immediately before serving, as the chicken and mushrooms can easily overcook.

Time 45m

Yield 1 pot, 4-6 serving(s)

Number Of Ingredients 15

1 tablespoon canola oil
1 -2 stalk lemongrass, outer sheath removed, bottom 3 inches trimmed and minced (3 tablespoons)
2 tablespoons fresh ginger, minced
1 large garlic clove, minced
2 -3 teaspoons Thai red curry paste
6 cups homemade chicken stock or 6 cups canned low sodium chicken broth
3 tablespoons fish sauce or 3 tablespoons soy sauce
1 tablespoon sugar
2 (14 ounce) cans unsweetened coconut milk
1 boneless skinless chicken breast, cut into 1 by 1/4-inch strips (about 12 ounces)
1 (15 ounce) can straw mushrooms, drained and rinsed
3 tablespoons lime juice
salt
1/2 cup fresh cilantro leaves, loosely packed
3 scallions, greens only, sliced thin on an angle (optional)

Steps:

  • 1. Heat the oil in a large stockpot or Dutch oven over medium heat. Add the lemon grass, ginger, and garlic and cook, stirring constantly, until aromatic, 30 to 60 seconds. Add the curry paste and cook, stirring constantly, for 30 seconds.
  • 2. Add 1/2 cup chicken stock to the pot and stir to dissolve the curry paste. Add the remaining stock, fish sauce or soy sauce, and sugar and bring to a boil over medium-high heat. Reduce the heat to low, partially cover, and simmer to blend flavors, about 20 minutes.
  • 3. Stir in the coconut milk, chicken, mushrooms, and lime juice. Bring back to a simmer and cook until the stock is hot and the chicken is no longer pink, about 5 minutes. Taste for seasoning and add salt if desired. Serve immediately, garnishing each bowl with cilantro and scallions.

A combination of oyster sauce and white vinegar adds a rich but bright flavor to the sauce.
