Thai Style Vegetables & Raw Papaya Rice Recipe, a wonderful way to add raw papaya to make a one pot rice recipe that has the flavors of thai yellow curry paste. All you need is some of the paste that can be kept ready a day advance so that you stir up this recipe quickly. The rice has the richness of all the nutrients and can be easily packed for your lunch box. Raw papaya is a powerhouse of enzymes and nutrients and is really good for skin and hair. Serve the Thai Style Vegetables & Raw Papaya Rice Recipe along with salad or Spicy Stir Fried Broccoli to make it a delicious meal for your lunch box. 3 Stalks Lemon Grass , pruned and chopped
4 Dry Red Chillies , soaked in warm water
2 cloves Garlic
1 inch Ginger
1 tablespoon Coriander (Dhania) Seeds
1/2 teaspoon Turmeric powder (Haldi)
2 tablespoons Water , as required
4 Stalks Spring Onion (Bulb & Greens) , finely chopped
2 Red Bell pepper (Capsicum) , finely chopped
2 cup Cooked rice
2 cups Raw papaya , grated
1/2 cup Roasted Peanuts (Moongphali)
Salt , to taste
6 sprig Basil leaves , torn

Steps:

  • To begin making the Thai Style Raw Papaya Fried Rice Recipe, prep all the ingredients and keep ready.
  • Take all the ingredients for the curry paste, add to the mixer grinder and blend to make a coarse paste. Add very little water.
  • Heat oil in a kadai on medium heat, add spring onions, chopped bell peppers, raw papaya and saute till they turn soft.
  • Add thai curry paste and salt and mix it well into the vegetables.
  • At this stage you can add the cooked rice and toss well into the raw papaya. Stir well to combine and saute on high heat for 2 to 3 minutes.
  • Check the salt and seasonings and adjust according to taste. If the seasoning is perfect, turn off the heat and add chopped basil leaves and peanuts and serve hot.
  • Serve the Thai Style Raw Papaya Fried Rice Recipe as is or along with a Thai Pineapple Curryto make it a delicious meal.

1 cup uncooked long-grain rice
1/4 cup water
salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 (14 ounce) can coconut milk (not cream of coconut)
1 ripe papaya, peeled, seeded and chopped (1 pound)

Steps:

  • Heat all ingredients except papaya to boiling in 2-quart saucepan, stirring once or twice; reduce heat. Cover and simmer 19 minutes (do not lift cover or stir); remove from heat. Fluff rice lightly with fork. Cover and let steam 5 to 10 minutes.
  • Mash half of the papaya. Reserve 2 tablespoons chopped papaya. Stir mashed papaya and remaining chopped papaya into rice. Heat, stirring occasionally, until mixture is hot. Sprinkle with reserved papaya and, if desired, additional cinnamon.
  • Substitution.
  • If you're in the mood to experiment, go ahead and replace the papaya with an equal amount of chopped mango.
