These Thai-style pork ribs drenched in a sticky barbecue sauce and then slow-cooked are so finger-licking good you'll be struggling to share. The sweet peanut and mango salad takes the flavours of this dish to a whole new level.

Vegetable oil for rubbing
2 racks British free-range pork baby back ribs
6 tbsp barbecue sauce
2 fat garlic cloves, crushed
2cm piece fresh ginger, grated
Grated zest and juice 1 lime
For the mango salad
1 red chilli, cut into chunks
1 garlic clove
Juice 2 limes
3 tbsp fish sauce
Splash groundnut oil1 tsp palm sugar (or demerara sugar)
1 tsp dried shrimp paste (from larger supermarkets, Asian grocers or http://amazon.co.ukamazon.co.uk)
1 large mango, thinly sliced1 large papaya, thinly sliced
1 shallot, thinly sliced100g salted peanuts, chopped
Bunch fresh coriander leaves, roughly chopped
Bunch fresh mint leaves, roughly chopped

Steps:

  • Heat the oven to 170°C/150°C fan/gas 3½. Rub a little oil on the ribs, then put on the roasting rack in a large roasting tin. Season with salt and pepper and pour 350ml water into the tin. Cover the tin tightly with foil, then cook for 2 hours until the meat is tender (see Make Ahead). Remove the ribs and leave to cool if making ahead.
  • When ready to serve, turn up the oven to 200°C/180°C fan/gas 6. Mix the barbecue sauce with the garlic, ginger, lime zest and juice. Put the cooked ribs on a foil-lined baking tray and brush generously all over with the barbecue sauce. Cook for 20 minutes until sticky and caramelised (or see Make Ahead).
  • For the mango salad, first make the dressing. In the small bowl of a food processor whizz together the chilli, garlic, lime juice, fish sauce, oil, sugar and shrimp paste. (Or finely chop the chilli and garlic and put in a bowl, then add the lime juice, fish sauce, oil, sugar and shrimp paste and mix well.) Toss the dressing in a serving bowl with the mango, papaya, shallot, chopped peanuts and herbs. Serve straightaway with the ribs.

One 3- to 4-pound rack pork spare or back loin ribs, halved
Kosher salt and freshly ground black pepper
3/4 cup Food Network Kitchen™ Inspirations Thai Style Sweet & Spicy Chili Cooking Sauce
Chopped cilantro, chopped roasted and salted peanuts and lime wedges, for serving

Steps:

  • Sprinkle the ribs all over with salt and pepper. Brush the ribs with 1/2 cup of the Thai Style Sweet & Spicy Chili Cooking Sauce. Transfer to a 6- to 8-quart slow cooker insert. Cover and cook on low for 8 hours.
  • Preheat the broiler and line a baking sheet with foil.
  • Place each rib rack half, bone-side down, on the prepared baking sheet. Brush with the remaining cooking sauce. Broil until the glaze is bubbling and browned, 3 to 5 minutes.
  • Slice the ribs between the bones. Transfer to a platter and sprinkle with cilantro and peanuts. Squeeze lime juice over the ribs.

OVEN-BAKED SWEET AND STICKY PORK BACK RIBS

I have to say that this is one of the best recipes for back ribs, and since my family loves ribs I have tried many in the past, although they certainly could be grilled on a barbecue the sticky sauce tends to burn on the grill, oven-baking produces a moist tender rib with the most wonderful sticky sauce, so make sure to have lots of napkins when serving these ribs!!! Plan ahead the ribs need to marinade for 8-24 hours (the longer, the better!). This recipe can easily be doubled to serve a crowd, and baked in two separate roasting pans. I make these ribs in a heavy foil baking pan, since the drippings char slightly it makes clean up a breeze, just toss the baking pan in the garbage after baking, if you are not using a disposable baking dish then make certain to line your pan with foil for easy clean-up. You will LOVE THESE RIBS!!!!!!

3/4 cup soy sauce
3/4 cup orange marmalade
1/2 cup pineapple juice
1/4 cup honey
2 tablespoons fresh minced garlic (or to taste, if you love garlic use lots!)
2 tablespoons minced fresh ginger
1 tablespoon lemon juice
1/2 teaspoon crumbled dried rosemary
black pepper
4 -5 lbs pork back ribs

Steps:

  • In a bowl mix soy sauce, orange marmalade, pineapple juice, honey, garlic, fresh ginger, lemon juice, rosemary and black pepper.
  • Rinse the ribs under cold water and pat dry with paper towels; place half of the ribs in each of 2 heavy plastic ziploc freezer bags (1-gallon size).
  • Pour half of the soy sauce mixture into each bag, seal bags, toss to coat ribs with marinade.
  • Set in a large bowl and refrigerate from 8-24 hours turning occasionally.
  • Set oven to 350 degrees.
  • Line a 11 x 17-inch or a 12 x 15-inch baking pan with foil.
  • Set a rack in the pan, then arrange the ribs in a single layer with edges curving down on rack.
  • Pour the remaining marinade from the bags into a bowl.
  • Bake the ribs basting with the remaining marinade about every 20 minutes for the first hour, until the meat is well browned and pulls easily from the bones (about 1-1/4 hours total baking time).
  • Transfer the ribs to a serving platter and cut between bones.
  • Delicious!

1 cup sliced shallots
10 scallions, coarsely chopped
One 3-inch piece fresh ginger, sliced
8 large cloves garlic, peeled
1 cup coarsely chopped fresh cilantro including thin stems (and roots, if possible)
6 tablespoons soy sauce
2 tablespoons Thai or Vietnamese fish sauce (nam pla or nuoc mam)
1 teaspoon kosher salt
1 teaspoon fresh coarsely ground black pepper
2 tablespoons sugar
4 pounds pork spare ribs, cut by your butcher across the bone into 2- to 3-inch "racks," each rack cut between the bones into individual 2- to 3-inch-long riblets
Thai Chile-Herb Dipping Sauce

Steps:

  • 1. Put the shallots, scallions, ginger, garlic, cilantro, soy sauce, fish sauce, salt, pepper, and sugar in the bowl of a food processor. Process to a loose, finely chopped paste, scraping down the sides of the bowl once or twice.
  • 2. Place pork ribs in a large bowl or a pair of heavy resealable plastic bags. Thoroughly coat the ribs with the marinade, massaging the paste into the flesh for a minute or so. Cover and marinate at room temperature for 2 hours or up to 5 hours in the refrigerator, tossing the ribs once or twice during this time.
  • 3. Preheat oven to 350°F. Spread the ribs out, bone-side down, on two large, parchment-lined baking sheets and bake until ribs are deeply colored and very tender but not yet falling from the bone, about 11/2 hours, occasionally rotating the pans to encourage even cooking. Remove from the oven and serve with small bowls of Thai Chile-Herb Dipping Sauce .

3 1/2 lb pork baby back ribs, cut in half across bones
1 can (11.5 oz) frozen orange-pineapple-apple juice concentrate, thawed
3/4 cup soy sauce
1/4 cup finely chopped fresh cilantro
1/4 cup creamy peanut butter
2 tablespoons finely chopped gingerroot
1 clove garlic, finely chopped
2 teaspoons sugar

Steps:

  • Place ribs in large shallow dish or resealable freezer plastic bag.
  • In small bowl, stir remaining ingredients with wire whisk. Reserve 3/4 cup sauce for dipping; cover and refrigerate. Pour remaining sauce over ribs. Cover dish or seal bag; refrigerate 8 hours, turning occasionally.
  • Spray 5- to 6-quart slow cooker with cooking spray. Remove ribs from marinade; discard marinade. Place 1 rack of ribs in bottom of slow cooker; stand remaining rib racks on their sides around edge of slow cooker. Cover; cook on High heat setting 1 hour. Reduce heat setting to Low; cook 5 hours longer.
  • In 1-cup microwavable measuring cup, microwave reserved 3/4 cup sauce uncovered on High 1 minute to 1 minute 30 seconds or, stirring once, until thoroughly heated. Serve sauce with ribs.
