3 3 3 oz packaged rice noodles, or linguine
2 2 2 Tbsp fresh lime juice
1 1 1 Tbsp fish sauce, Asian
2 2 2 tsp packed light brown sugar
1 1 1 tsp chili sauce, or chili garlic sauce
1 1 1 tsp low sodium soy sauce
1 1 1 tsp canola oil
2 2 2 medium uncooked scallion(s), thinly sliced
1 1 1 clove(s) garlic clove(s), minced
1 1 1 cup(s) uncooked bean sprouts, fresh
1 1 1 medium uncooked carrot(s), shredded
1 1 1 large egg(s), lightly beaten
1 1 1 Tbsp unsalted dry roasted peanuts, chopped
1 1 1 Tbsp cilantro, fresh, coarsely chopped

Steps:

  • 1 Break the tuna into small chunks; set aside. Cook the rice noodles according to package directions. Drain in a colander under cold running water to stop the cooking and set aside. 2 Combine the lime juice, fish sauce, sugar, chili garlic sauce, and soy sauce in a small bowl; set aside. 3 Heat the oil in a large nonstick skillet over medium heat. Add the scallions, and garlic. Cook, stirring frequently, until fragrant, about 1 minute. Add the bean sprouts and carrot; cook until softened, about 2 minutes. Add the egg, stirring gently, until it begins to set, about 30 seconds. Add the lime juice mixture and cook, stirring until the sugar dissolves, about 30 seconds. Add the tuna and rice noodles; cook, tossing gently, until mixed and heated through, about 3 minutes. Sprinkle with the peanuts and cilantro just before serving. Yields 1 1/2 cups per serving.

½ pound dried rice noodles
1 pound skinless, boneless chicken breast halves
1 dash soy sauce
1 green bell pepper, sliced
1 red bell pepper, sliced
1 cucumber, coarsely chopped
1 carrot, grated
10 mushrooms, halved
1 onion, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 ½ tablespoons red chile sauce
¾ cup peanut sauce
2 tablespoons oyster sauce
1 tablespoon sesame oil
1 tablespoon sesame seeds

Steps:

  • Cook rice noodles according to package directions.
  • Slice chicken breasts into strips. Marinate in soy sauce for about 1/2 hour.
  • In a large saucepan or wok, heat sesame oil over medium heat. Cook chicken until no longer pink. Add garlic, ginger, and onions; cook until onions are tender. Add mushrooms and cucumbers; cook until mushrooms are tender. Add peppers, carrot, peanut sauce, oyster sauce, and hot chili pepper sauce. Heat through.
  • Toss cooked rice noodles with saute. Garnish with sesame seeds.

1/3 cup chopped onion
2 tablespoons butter
1 tablespoon all-purpose flour
3/4 cup milk
1 chicken bouillon cube
1/4 teaspoon salt, optional
1/8 teaspoon pepper
1 can (3-1/4 ounces) light water-packed tuna, drained and flaked
1/2 cup frozen peas
2 teaspoons diced pimientos
1 cup hot cooked egg noodles

Steps:

  • In a small saucepan, saute onion in butter until tender. Stir in flour until blended; cook and stir for 1 minute. Gradually stir in milk. Add the bouillon, salt if desired and pepper. Bring to a boil. Cook and stir for 1 minute or until thickened. Stir in the tuna, peas and pimientos; heat through. Serve with noodles.

8 ounces whole wheat spaghetti
1 (6 ounce) can tuna in olive oil
3 garlic cloves
1 teaspoon hot pepper flakes
1 cup bell pepper, diced (I used mixed colors, frozen)
1 tablespoon soy sauce
1 teaspoon toasted sesame oil
1 tablespoon peanut butter
1/2 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
1 cup cilantro, for garnish
2 tablespoons sesame seeds, for garnish

Steps:

  • Cook pasta according to package directions.
  • In the meantime, heat a saucepan on medium-low heat.
  • Drain the oil from the tuna into the pan.
  • Add crushed & chopped garlic cloves and hot pepper flakes to pan, to infuse flavors into the oil, about 5 minutes.
  • Increase heat to medium high, and add bell peppers. Cook for 2 minutes, stirring occasionally.
  • In a small bowl blend soy sauce, sesame oil, and peanut butter.
  • Transfer cooked pasta noodles to the saucepan. Add the peanut butter sauce and toss to coat.
  • Add the tuna, and toss, breaking up the tuna.
  • Season with salt & pepper as desired.
  • Serve with a sprinkling of sesame seeds and cilantro leaves.

1/2 cup white miso paste
3 teaspoons low-sodium soy sauce
2 tablespoons mirin
2 tablespoons canola oil
2 tablespoons seasoned rice vinegar
1 teaspoon sesame oil
Kosher salt
10 ounces sugar snap peas, julienned into matchsticks
12 ounces buckwheat soba noodles
2 medium organic carrots, peeled and julienned into matchsticks
2 tablespoons canola oil, plus more for brushing
1 tablespoon sweet soy sauce
2 teaspoons yuzu
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
3 pounds good-quality ahi (or yellowfin) tuna, sushi-grade if possible
1/4 cup black sesame seeds
1/4 cup white sesame seeds
4 scallions, thinly sliced on the bias, for garnish
Special equipment: 8 bamboo skewers soaked in water for 10 to 15 minutes

Steps:

  • For the noodles and dressing: Begin by making the dressing. In a large bowl, combine the miso, soy sauce, 1/4 cup hot water, mirin, canola oil, rice vinegar and sesame oil. Whisk together well and set aside.
  • In a large pot of salted boiling water, blanch the sugar snap peas until bright green and just tender, 10 to 15 seconds. Set aside. Add the soba noodles to the hot water and cook for 2 to 3 minutes. Then strain and rinse under cold running water (this will stop the cooking process and gives the soba noodles their distinctive springy texture). Toss the noodles in the dressing and fold in the sugar snap peas and julienned carrot. Set aside until ready to serve.
  • For the seared ahi tuna: In a large mixing bowl, make a quick marinade of the canola oil, sweet soy sauce, yuzu, sesame oil and ginger. Whisk together to combine. Carefully cut the tuna into 1 1/2-inch cubes and place in the marinade and toss to coat well (it will be a very light coating/marinade as the tuna shouldn't be too wet when searing).
  • Thread 4 pieces of tuna per bamboo skewer (4 cubes per skewer, 8 skewers total). Mix the sesame seeds together and spread out on a flat platter. Take each skewer and press the tuna into the sesame seed mixture so it is well coated on all 4 sides.
  • Heat a flat grill plate to high heat. Brush lightly with some oil to clean the grates and create a nonstick surface. Grill the tuna skewers just a few seconds on each of the 4 sides so the sesame seeds are toasted and crunchy and the tuna is rare in the middle, 30 to 35 seconds.
  • Serve the tuna skewers on a bed of the dressed soba noodles and garnish with some sliced scallions.
