BEST CANDIED YAMS WITH MARSHMALLOWS
Wonderful, traditional candied yams ... my way! Not for those counting calories and enough to feed a crowd!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Spray 2 pieces of aluminum foil with cooking spray.
- Mash drained yams in a large bowl with a fork. Add ingredients in the following order, mixing well after each addition: brown sugar, cinnamon, cloves, allspice, and heavy cream. Pour mixture into two 8-inch square baking dishes. Sprinkle 1/2 of the marshmallows over each dish and cover with aluminum foil, spray-side down.
- Bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 5 minutes.

CANDIED YAMS AND MARSHMALLOWS
My honey kept asking for candied yams with the OJ and marshmallows. I couldn't find a recipe, so I made one up. I must say it came out mighty fine!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Roast whole yams in preheated oven until heated through but not quite tender, 35 to 40 minutes. Allow to cool.
- Reduce oven heat to 350 degrees F (175 degrees C).
- Melt butter in a large pot over medium heat. Stir brown sugar, orange juice, and nutmeg with the melted butter to dissolve the sugar completely; bring to a boil, reduce heat to low, and cook until the liquid thickens into a syrup, 10 to 15 minutes.
- Peel cooled yams. Cut yams into bite-size chunks; arrange in a single layer in a 13x9-inch baking dish. Drizzle syrup over the yams.
- Bake in the preheated oven, twice opening the oven to spoon syrup over the yams, until the chunks are fork-tender, about 35 minutes. Arrange marshmallows over the yams and continue baking until the marshmallows are puffy and browned, about 10 minutes more.

These candied yams topped with sugary pecans and marshmallows are a perfect choice during the holidays, but also fun to serve as a sweet winter side dish any night of the week.

- Bring a large pot of lightly salted water to a boil. Add yams and cook, stirring occasionally, until tender, 12 to 15 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Drain and transfer to a bowl with butter, 4 tablespoons brown sugar, cream, and 1/2 teaspoon cinnamon. Mash until all ingredients are incorporated and butter is melted. Transfer to a casserole dish and sprinkle with remaining brown sugar and cinnamon. Arrange pecans and marshmallows over the top.
- Bake in the preheated oven for 20 minutes.

CANDIED YAMS CASSEROLE WITH PECANS
This recipe was given from a friend of mine. She has been using this recipe for 10-plus years. It is absolutely easy. Great for Thanksgiving or for any time of the year. Let the casserole cool and serve with whipped topping.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
- Put yams in a microwave safe bowl; heat in the microwave oven until softened, about 75 seconds.
- Transfer cooked yams to a large mixing bowl; add white sugar, milk, 1/2 cup butter, and eggs and beat with a hand mixer until smooth. Pour the yam mixture into the prepared baking dish.
- Mix brown sugar, pecans, 1/2 cup butter, and flour together in a bowl with a wooden spoon until crumbly, sprinkle over the yam mixture to cover.
- Bake in preheated oven until golden brown, about 30 minutes.

- Make candied pecans. Preheat oven to 350 degrees F. Place peeled and cubed yams in a large pot, fill with water, then place over medium heat. Bring to boil and let boil for about 20-25 minutes, until yams are fork tender. Drain. Place yams in blender (I used a blendtec) and blend until smooth, using a spatula to mix yams and scrape down sides of blender as needed to help them puree into a smooth mixture. Then add heavy cream, maple syrup, rosemary and salt. Blend again until combine. Taste to see if you would like to add any more salt. Grease a 2 quart baking dish then pour pureed yams into baking dish and smooth out with spatula. On top of the casserole, place candied yams in whatever shape or formation you prefer. Place dish into oven and bake for 20-25 minutes, until pecans become fragrant but no do not burn. Garnish with extra maple syrup and fresh rosemary. by juli

- Place yams into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain and mash; measure out 3 cups of mashed yams.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart ovenproof casserole dish.
- Combine mashed yams, brown sugar, eggs, milk, and melted butter in a bowl. Transfer to the prepared casserole dish.
- Combine pecans, brown sugar, flour, and melted butter in a bowl and mix well. Sprinkle topping over yams.
- Cover and bake in the preheated oven until heated through, about 1 hour.
