Vegetarian Broccoli Salad image

Great vegetarian or vegan (if you use vegan mayo) recipe. Perfect for a summer bbq, love the creamy salad taste.

1/2 cup Miracle Whip or 1/2 cup vegan mayonnaise
2 tablespoons red wine vinegar
2 teaspoons sugar (use less if you prefer less sweet taste)
4 cups broccoli, chopped
1/2 cup walnuts
1 cup craisins

Steps:

  • Combine miracle whip, vinegar and sugar in a small bowl.
  • Mix broccoli, walnuts, and craisins.
  • Pour dressing over broccoli mixture, mix to combine.
  • Chill one hour or overnight.

While it may not sound like much, this vegan broccoli salad is a fresh and easy to make side dish that is chock full of flavor. With a simple almond and orange based dressing, this recipe is healthy, crisp and ready in 15 minutes!

4 cups chopped broccoli florets (about 2 small heads)
1 1/2 cups shredded purple cabbage
1/2 cup golden raisins
1/2 cup sliced almonds
1/3 cup green onion
1/4 cup cilantro
6 tbsp creamy almond butter
2 tbsp honey or maple syrup
2 tbsp rice vinegar
5 tbsp orange juice
2 tbsp low sodium soy sauce or tamari
2 tsp toasted sesame oil
2 cloves garlic, minced
1 tbsp freshly grated ginger
1/4 tsp red pepper flakes (or more, to taste)

Steps:

  • Add all of the salad dressing ingredients to a bottle and shake well to combine. You can also stir it up in a bowl, but I find shaking is easiest. Taste and adjust flavors as desired.
  • Add all salad ingredients to a bowl.
  • Toss the salad with half of the dressing and let sit for about 10-15 minutes to marinate.
  • Toss with the rest of the dressing and serve. Enjoy!

3/4 cup raw cashews, soaked
1/4 cup water
2 tbsp pure maple syrup
2 tbsp apple cider vinegar
1/2 tsp minced garlic
heaping 1/2 tsp sea salt
Freshly ground black pepper
2 large broccoli crowns (florets only), finely chopped
1 1/2 cups red grapes, halved
1/3 cup roasted salted almonds, finely chopped
3/4 cup diced red onion
1/3 cup dried cranberries or raisins

Steps:

  • Place cashews in a bowl. Cover with water and soak for 2 hours or overnight. If you have a Nutribullet or high speed blender, simply soak them in hot water for 10 minutes.
  • Drain cashews. Add to blender with with rest of the dressing ingredients. Blend until completely smooth and creamy.
  • Place broccoli, grapes, almonds, red onion, and dried cranberries in a medium or large mixing bowl. Add dressing and toss thoroughly to coat. Season with salt and pepper to taste. Serve chilled.

  • Chop the broccoli florets into ½-inch pieces and any finely dice the remaining stems, peeling any woody or course parts from the stem as needed. Add the chopped broccoli, onion, cranberries, and vegan cheese (if using) to a serving bowl. Set aside.
  • To make the dressing, whisk together the non-dairy yogurt, olive oil, lemon juice, mustard (if using), maple syrup, and sea salt in a small bowl. Pour the dressing over the salad, sprinkle with paprika powder as desired and stir until all of the broccoli is lightly coated in dressing. (I highly recommend letting the salad marinate for at least 20 minutes, or overnight in the refrigerator).
  • Toast the seeds & nuts (optional): Toast the seeds and nuts in a skillet over medium heat, stirring frequently, until the seeds are turning golden, about 3 minutes (be careful as they burn quickly!). Then transfer the toasted seeds into a large serving bowl and set aside. (Alternatively, bake the seeds 10 minutes at 392°F/200°C or until golden brown).
