This hot artichoke dip is the life of any party. Serve hot with celery, toasted bread or crackers.

½ cup mayonnaise
½ cup sour cream
1 cup grated Parmesan cheese
1 (14 ounce) can artichoke hearts, drained
½ cup minced red onion
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium-sized mixing bowl, stir together mayonnaise, sour cream, Parmesan cheese and onion. When these ingredients are combined, mix in artichoke hearts, lemon juice, salt and pepper. Transfer mixture to a shallow baking dish.
  • Bake at 400 degrees F (200 degrees C) for 20 minutes, or until light brown on top.

I got this recipe over 10 years ago from a friend at work. Since then, I have always had to make a double recipe for Thanksgiving. There is never any left. Just grab a few crackers and start dipping! I have only made this with an electric skillet. Also, I use the artichokes that are already quartered as they mix more easily than bigger chunks. Fat-free or low-fat mayonnaise is okay and helps reduce the fat content of the dip.

1 cup mayonnaise
1 cup shredded parmesan cheese
1 (14 ounce) can non-marinated artichoke hearts
1 -2 teaspoon lemon juice
1 dash garlic powder

Steps:

  • Mash/flatten artichokes.
  • Combine all ingredients.
  • Bake for 30 minutes at 350 or warm in an electric skillet @ 200°F.
  • If using the electric skillet, stir mixture once cheese has melted.

1 cup chopped carrot
1 cup chopped celery
1/2 cup butter
1/2 cup flour
2 tablespoons cornstarch
4 cups chicken broth
4 cups milk
2 cups shredded cheddar cheese
1 teaspoon fresh ground pepper
2 (14 ounce) cans artichoke hearts, drained, cut into fourths
salt (to taste)

Steps:

  • Saute the onions, carrots and celery in the butter in a stockpot ntil tender.
  • Stir in the flour and cornstarch. Add the chicken broth and milk.
  • Cook over medium heat until the mixture begins to boil and thicken; stirring frequently; reduce heat.
  • Add the cheese and pepper. Simmer until the cheese is melted, stirring frequently.
  • Stir in the artichoke hearts and salt. Ladle the warm soup into soup bowls.

This dip was given to our family from a friend during the holidays a few years ago. It was absolutely wonderful! The family wanted it all the time after that so my friend was kind enough to share the recipe with me. I've also taken it to work and everyone raved about it. My friend also told me that if you don't care for spinach it is great even without it. We all like it just the way it is. We serve it with tortilla chips but it can also be served with toasted sliced bread.

1 1/2 cups real mayonnaise
4 ounces green chilies, drained and diced

10 ounces frozen chopped spinach, partially cooked and drained

Steps:

  • In a medium bowl, mix together all ingredients except only 1/2 cup of the parmesan cheese.

1 clove garlic, pressed
1 (14 ounce) can artichoke hearts in water, drained and chopped
1 ½ cups cooked crabmeat
¾ cup grated Parmesan cheese
⅓ cup chopped green onion
⅓ cup chopped red bell pepper
1 teaspoon ground cayenne pepper
½ cup dry bread crumbs
2 teaspoons chopped green onion, or to taste
2 teaspoons chopped red bell pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine cream cheese and mayonnaise in a large bowl until smooth; stir in garlic. Gently stir artichoke hearts, crab, Parmesan cheese, 1/3 cup green onion, 1/3 cup red bell pepper, and cayenne pepper into cream cheese mixture. Transfer the dip to a 9-inch pie dish and sprinkle top with bread crumbs.
