I came up with this recipe one summer as a way to use up vegetables from our garden. Grilling the veggies first brings out their sizzling flavors. Try it with a sprinkling of olives or pine nuts before adding the cheese. -Susan Marshall, Colorado Springs, Colorado

8 small fresh mushrooms, halved
1 small zucchini, cut into 1/4-inch slices
1 small sweet yellow pepper, sliced
1 small sweet red pepper, sliced
1 small onion, sliced
1 tablespoon white wine vinegar
1 tablespoon water
4 teaspoons olive oil, divided
2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1 prebaked 12-inch thin whole wheat pizza crust
1 can (8 ounces) pizza sauce
2 small tomatoes, chopped
2 cups shredded part-skim mozzarella cheese

Steps:

  • In a large bowl, combine the mushrooms, zucchini, peppers, onion, vinegar, water, 3 teaspoons oil and seasonings. Transfer to a grill wok or basket. Grill, covered, over medium heat for 8-10 minutes or until tender, stirring once., Prepare grill for indirect heat. Brush crust with remaining oil; spread with pizza sauce. Top with grilled vegetables, tomatoes and cheese. Grill, covered, over indirect medium heat for 10-12 minutes or until edges are lightly browned and cheese is melted. Rotate pizza halfway through cooking to ensure evenly browned crust.

1 tablespoon extra-virgin olive oil
2 cups thinly sliced onions
1 teaspoon chopped fresh thyme
2 cups thinly sliced red bell peppers
5 garlic cloves, thinly sliced
1 cup fresh corn kernel, about 2 ears
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (16 ounce) refrigerated fresh pizza dough
5 ounces thinly sliced mozzarella cheese
1/2 cup grated parmigiano-reggiano cheese
1/3 cup fresh basil leaf

Steps:

  • Preheat oven to 425 degrees, and position an oven rack in the next to lowest setting.
  • Place a 16 inch pizza pan on the rack.
  • Heat a nonstick skillet over medium-high heat, and add olive oil to pan and swirl to coat.
  • Add 2 cups onion and thyme to pan, cook 3 minutes or until onion is tender, stirring occasionally.
  • Add bell pepper, and garlic to pan, cook 1 minute or until thoroughly heated.
  • Roll dough into a 16 inch circle on a lightly floured surface.
  • Remove pan from oven, and coat with cooking spray.
  • Place dough in pan, and arrange mozzerella slices evenly over dough.
  • Spread corn mixture evenly over cheese, and top with Parmigiano-Reggiano cheese.
  • Bake at 425 degrees for 23 minutes.
  • Arrange tomatoes evenly over pizza, and bake an additional 5 minutes or until crust is browned.
  • Remove from oven, and sprinkle with basil.
  • Cut into 6 slices.

3 tablespoons ketchup
1 teaspoon hot pepper sauce
1 tablespoon olive oil
1 (12-ounce) package plant-based burger patties
½ cup finely chopped onion
1 (16 ounce) package refrigerated pizza dough
1 (8 ounce) package shredded Colby-Monterey Jack cheese
½ cup dill pickle slices
1 tablespoon prepared yellow mustard, or to taste
¼ cup shredded lettuce, or to taste
¼ cup diced tomatoes, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 12-inch pizza pan.
  • Whisk together mayonnaise, ketchup, and hot sauce in a small bowl.
  • Heat oil in a large skillet over medium heat. Crumble burger patties into the skillet. Add onion; cook, stirring to break up patties, until crumbles are browned and onion is tender, 4 to 5 minutes.
  • Roll dough to a 12-inch circle on a lightly floured surface, allowing dough to rest as necessary. Transfer to the prepared pizza pan, building up edges.
  • Bake crust in the preheated oven for 8 minutes.
  • Remove from the oven and spread mayonnaise mixture over crust. Sprinkle with 1/2 of the cheese. Top with burger mixture and remaining cheese. Bake until crust is brown and cheese is melted, about 15 minutes. Top with pickles and drizzle with mustard. Top with lettuce and tomatoes.

  • Make sure all veggies are roughly chopped and cheese is shredded finely.
  • Take pizza crust and add the sauce.
  • Cover with finely grated cheese (I recommend pepper Jack), or for a vegan option try vegan shreds by Galaxy Brands or for a cheesy soy alternative use crumbled tofu with nutritional yeast flakes.
  • Add all of the veggies to pizza
  • Bake in a preheated 400° oven for 30 minutes or until crust is brown and cheese is melted.

1/4 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon dried oregano

Cornmeal
3 tablespoons pizza sauce
2 tablespoons each chopped onion, green pepper and fresh mushrooms
1/4 cup shredded part-skim mozzarella cheese

Steps:

  • In a small bowl, dissolve yeast in milk. Let stand for 5 minutes. Add the flours, xanthan gum, oil, vinegar, sugar and seasonings. Mix until a ball forms (dough will be soft)., Sprinkle cornmeal over a 7-1/2-in. pizza pan coated with cooking spray. Press dough onto prepared pan, building up edges slightly. Do not let rise.
