GRILLED VEGGIE PIZZA
I came up with this recipe one summer as a way to use up vegetables from our garden. Grilling the veggies first brings out their sizzling flavors. Try it with a sprinkling of olives or pine nuts before adding the cheese. -Susan Marshall, Colorado Springs, Colorado

- In a large bowl, combine the mushrooms, zucchini, peppers, onion, vinegar, water, 3 teaspoons oil and seasonings. Transfer to a grill wok or basket. Grill, covered, over medium heat for 8-10 minutes or until tender, stirring once., Prepare grill for indirect heat. Brush crust with remaining oil; spread with pizza sauce. Top with grilled vegetables, tomatoes and cheese. Grill, covered, over indirect medium heat for 10-12 minutes or until edges are lightly browned and cheese is melted. Rotate pizza halfway through cooking to ensure evenly browned crust.

Steps:
- Preheat oven to 425 degrees, and position an oven rack in the next to lowest setting.
- Place a 16 inch pizza pan on the rack.
- Heat a nonstick skillet over medium-high heat, and add olive oil to pan and swirl to coat.
- Add 2 cups onion and thyme to pan, cook 3 minutes or until onion is tender, stirring occasionally.
- Add bell pepper, and garlic to pan, cook 1 minute or until thoroughly heated.
- Roll dough into a 16 inch circle on a lightly floured surface.
- Remove pan from oven, and coat with cooking spray.
- Place dough in pan, and arrange mozzerella slices evenly over dough.
- Spread corn mixture evenly over cheese, and top with Parmigiano-Reggiano cheese.
- Bake at 425 degrees for 23 minutes.
- Arrange tomatoes evenly over pizza, and bake an additional 5 minutes or until crust is browned.
- Remove from oven, and sprinkle with basil.
- Cut into 6 slices.

- Preheat oven to 425 degrees F (220 degrees C). Grease a 12-inch pizza pan.
- Whisk together mayonnaise, ketchup, and hot sauce in a small bowl.
- Heat oil in a large skillet over medium heat. Crumble burger patties into the skillet. Add onion; cook, stirring to break up patties, until crumbles are browned and onion is tender, 4 to 5 minutes.
- Roll dough to a 12-inch circle on a lightly floured surface, allowing dough to rest as necessary. Transfer to the prepared pizza pan, building up edges.
- Bake crust in the preheated oven for 8 minutes.
