THE BEST HEALTHY COOKIES

The Best Healthy Cookies image

Sometimes you think you want a creative twist on a cookie (pretzel, potato chip, butterscotch, coffee!), but, ultimately, nothing beats the classic: a perfect, grain-free chocolate chip cookie. These babies have everything you want: the crispy edge that cedes to a chewy center; a rich buttery flavor; studs of walnuts, oats, and chocolate chips - yet they're completely gluten-free and refined sugar-free, packed with protein, and won't spike and crash your blood sugar as a normal cookie would. (My husband uses this as an excuse to eat them for breakfast, but you do you...)

Provided by Liz Moody

Time 15m

Number Of Ingredients 11

1 large egg
1 teaspoon vanilla extract
1/2 cup unsalted creamy almond butter (well stirred)
1/4 cup almond flour
1/4 teaspoon fine-grain sea salt
1/2 cup coconut sugar
1/2 teaspoon baking soda
1/4 cup chopped walnuts
1/4 cup rolled oats
1/4 cup dark chocolate chips or chopped dark chocolate
Maldon or flaky sea salt, to sprinkle (optional)

Steps:

  • Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  • In a large bowl, beat together with a large spoon the egg, vanilla, and almond butter until combined. Stir in the almond flour, salt, coconut sugar, and baking soda until smooth. Stir in the walnuts, oats, and chocolate chips, working the dough a bit to get everything distributed evenly (the dough will be thick - that's okay)
  • Scoop the dough into rounded teaspoonfuls and drop them onto the prepared baking sheet. Sprinkle with Maldon salt, if using. Bake for 10 to 15 minutes, until edges turn golden brown.
  • Remove the cookies from the oven and let them cool on the pan for 10 minutes before transferring them to a wire rack to cool completely. While the texture of these is best on the first day (I like to eat small batches and eat them fresh), they'll keep uncovered at room temperature for 2 to 3 days.

THE HEART HEALTHIEST CHOCOLATE CHIP COOKIES

The Heart Healthiest Chocolate Chip Cookies image

This recipe is from The Vegetarian Times magazine, I love them, this is the recipe that I found for my cookie monster husband who has cholesterol problems, and these cookies are excellent for him, no butter, no eggs and the omegas from the nuts, and of course they are delicious . Don't forget to wait until dough is cool to add the chocolate chips or they will melt.

Time 18m

Yield 30 cookies

Number Of Ingredients 10

3 tablespoons canola oil
2 cups walnuts
1 cup light brown sugar
2 teaspoons vanilla extract
1 1/2 cups oat flour
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground cinnamon
2 cups rolled oats
1 1/2 cups semisweet vegan chocolate chips (I use only 3/4 cup chocolate chips, to cut calories)

Steps:

  • 1. Preheat oven to 350°F Coat 2 baking sheets with cooking spray, or line with parchment paper.
  • 2. Blend walnuts in food processor 30 seconds, or until ground into a fine meal. Add canola oil, and blend 2 to 3 minutes more, or until mixture has the consistency of natural peanut butter, scraping down sides of food processor occasionally. Transfer to bowl.
  • 3. Whisk together brown sugar and ½ cup water in small saucepan, and bring mixture to a boil. Pour brown sugar mixture over ground walnut butter, add vanilla extract, and stir until no lumps remain.
  • 4. Whisk together oat flour, baking soda, salt, and cinnamon in separate bowl. Stir oat flour mixture into walnut mixture. Cool 10 minutes. Fold in oats, then chocolate chips.
  • 5. Shape cookie dough into 2-inch balls, and place 2 inches apart on prepared baking sheets. Flatten cookies with bottom of drinking glass dipped in water. Bake 8 to 10 minutes, or until cookies begin to brown and tops look dry. Cool 3 minutes on baking sheets, then transfer to wire rack to cool completely.

HEALTHY OATMEAL COOKIES

Healthy Oatmeal Cookies image

Soft and chewy healthy oatmeal cookies with applesauce, honey, raisins, and chocolate chips. No sugar! The best healthy cookie recipe.

Provided by Erin Clarke / Well Plated

Categories     Dessert

Time 20m

Number Of Ingredients 13

1 1/4 cups quick oats
1 cup white whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon kosher salt
1/4 cup unsweetened applesauce
4 tablespoons unsalted butter (melted and cooled)
1 large egg
1 teaspoon pure vanilla extract
1/2 cup honey
1/3 cup dark chocolate chips
1/4 cup raisins
1/4 cup well chopped raw walnuts or pecans

Steps:

  • In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
  • When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. Remove the dough from the refrigerator (if it is very stiff, you may need to let it sit out for 5 to 10 minutes). With a cookie scoop or spoon, drop the dough into 1 1/2-inch balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten each cookie to be about 3/4-inch thick.
  • Bake until the cookies are golden and firm around the edges and set on top, about 9 to 10 minutes. Place the baking sheet on a wire rack and let the cookies cool on the baking sheet for 2 minutes, then transfer the cookies to the rack to cool completely.

  • Preheat oven to 350°F. Line two cookie sheets with silpat baking mats or parchment paper. (These cookies stick, even to the silicone, so if you are not using silicone, be sure to grease your pans.)
  • Note on mashing avocado: Place your avocado in a small bowl and mash with a potato masher, then measure out ½ cup. Alternately, if you’re worried about avocado lumps, you can puree the avocado in a food processor, then measure out ½ cup. One medium avocado is about ½ cup mashed.
  • Stir avocado and oil in a large bowl with a wooden spoon. Stir in both sugars. Add vanilla, egg, and cocoa and mix until smooth (there may be some lumps from the avocado). Stir in baking soda, salt, oats, and cinnamon. Carefully stir in flour. Dough will be wet.
  • At this point you can mix in the chocolate chips and/or walnuts if you’re using them. I pressed chocolate chips on the top of each cookie instead of mixing them in. Either way will work!
