GRAMMIE'S NO-CRUST APPLE PIE
A very easy and quick recipe for a GREAT apple pie!

Steps:
- Preheat oven to 350 degrees F (175 degrees C.)
- In a large bowl, combine apples, cinnamon, nutmeg, white sugar and 1/2 cup baking mix. Stir together the milk and eggs and mix into apple mixture, Pour filling into pie plate and dot with butter.
- To make the Topping: In a large bowl, combine 1 cup baking mix, walnuts, brown sugar and margarine. Mix until crumbly and sprinkle over top of apples.
- Bake in the preheated oven for 60 minutes, or until apples are cooked and topping is golden brown.

NO PIE APPLE PIE

- For the apple pie spice: Mix together the cinnamon, nutmeg, allspice and cardamom if using in a small bowl.
- For the apples: Preheat the oven to 400 degrees F.
- Place the apple halves core-side down on a flat surface. Before slicing, place chopsticks or wooden spoons on either side of them to make sure you don't cut all the way through. Slice almost all the way to the bottom of each apple half at 1/4-inch intervals, then place them on a sheet pan.
- Mix 1 tablespoon of the butter, 1 tablespoon of the brown sugar, 2 teaspoons of the apple pie spice and the orange juice in a pitcher. Drizzle over the apples, making sure they are well coated and the drizzle goes into the slits. Bake until they are just starting to get tender, about 15 minutes.
- Meanwhile, mix together the oats, almonds, salt, remaining melted butter, remaining brown sugar, orange zest and remaining apple pie spice. Sprinkle the oat mixture over the apples, making sure to get some between the slices without breaking the apples. Bake until the topping is slightly crisp and golden, another 10 minutes. Drizzle with honey and serve with ice cream.
CRAZY CRUST APPLE PIE
No fuss - no crust to roll out and uses canned apple pie filling. Use cherry, blueberry or any other filling as well. Doesn't get much easier than this!

- In small mixer bowl, combine flour, baking powder, salt, sugar, egg, shortening and water; blend well and beat two minutes at medium speed.
- Pour batter into deep 9" pie pan.
- Combine pie filling, lemon juice and apple pie spice and pour into center of batter.
- Bake at 425° for 45 to 50 minutes.

NO CRUST APPLE PIE
This is a delicious apple pie without a bottom crust. It has a brown sugar crumble on top and very good. This pie was devoured by the three of us at one sitting, so I will make two next time. Southern Living

- Combine 6 or 7 large cooking apples with the sugar, water, cinnamon, ground allspice in a large saucepan; bring to a boil.
- (I also add fresh grated nutmeg and a squeeze of lemon juice.)
- Cover, reduce heat, and simmer 8 to 10 minutes or until apples are almost tender.
- Spoon mixture into a deep-dish 9-inch pie-plate.
- Combine flour, brown sugar, baking powder, and salt; cut in butter with a pastry blender or use finger tips until mixture resembles coarse meal.
- (Next time I will use only 1/8 tsp of salt in the crumble.).
- Crumble brown sugar mixture over apples.
- Bake at 350°F for 30 minutes or until top is browned.
- Serve with ice cream, if desired.
- Yield: one 9-inch pie.
APPLE CRISP PIE
I had an abundance of apples and needed to use them. We love apple crisp but I just made it a few days before. Pie sounded nice, so I combined 4 different recipes to get this one. It has almost a shortbread type crust and is just the right balance of sweet and tart. I had to hurry and write the recipe down so I wouldn't forget it because I will definitely be making this again!

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9-inch pie dish with cooking spray.
- To make the crust, beat 1/2 cup of butter with cream cheese in a mixing bowl with an electric mixer until thoroughly combined; scrape the sides of mixing bowl occasionally to incorporate all the butter and cream cheese. Beat in 1 1/4 cups flour, the white sugar, and salt on medium-low speed until the mixture looks like coarse cornmeal, about 20 seconds. Increase the speed to medium-high, and beat until the dough begins to clump together, about 30 more seconds.
- Lay out a 24-inch piece of waxed paper on a work surface, and scoop the dough out onto the left half of the paper. Form it into a ball, and flatten it into a 6-inch disk; fold the right side of the paper over the dough disk, covering the dough. With the rolling pin on top of the paper, gently roll the dough out into a round crust about 1/8-inch thick; peel off the top half of the waxed paper, turn the dough out onto the prepared pie dish, and fit the dough into the dish. Peel of the remaining portion of waxed paper.
- To make the filling, mix together the apples and lemon juice in a bowl. In a small bowl, mix 1/4 cup of brown sugar, 2 tablespoons of flour, the cinnamon, nutmeg, and ginger together until thoroughly combined, then mix the flour mixture with the apples. Pour the apple filling into the crust.
- To make the topping, combine 1/4 cup of brown sugar, 2 tablespoons of flour, and the oats; with a pastry cutter, cut in 6 tablespoons of butter, until the mixture looks like coarse crumbs. Spoon the topping evenly over the apple filling.
- Bake in the preheated oven until the apple filling is bubbling and the topping is golden brown, about 40 minutes. If the crust begins to look brown after about 20 minutes of baking, cover the crust edge with a strip of aluminum foil.
