A fruity summer cocktail that's a good way to use fancy herbs and that totally random raspberry vodka someone left at your last party. It's also a pretty nifty cocktail to serve to friends named Lucy on their birthdays.

1 cup water
1 cup white sugar
3 sprigs lemon thyme
½ fluid ounce lemon juice
5 fresh raspberries, divided
ice
1 ½ fluid ounces raspberry vodka
1 cup lime-flavored sparkling water (such as La Croix®), or as needed
½ slice lemon
1 sprig lemon thyme

Steps:

Heat water, sugar, and 3 sprigs lemon thyme in a small saucepan, stirring, until bubbles form and sugar is dissolved, about 5 minutes. Remove from heat and let steep, about 10 minutes. Strain out lemon thyme.
Pour 1/2 fluid ounce of the lemon thyme syrup into a tall glass. Add lemon juice and 3 raspberries; mash with a muddler or wooden spoon. Fill glass with ice and vodka; stir vigorously with a long spoon until well chilled. Fill glass with sparkling water.
Garnish with remaining raspberries, lemon slice, and 1 lemon thyme sprig.

1 cup granulated sugar
4 sprigs fresh rosemary
4 sprigs fresh thyme
1 cup water
4 ounces vodka
Juice of 2 lemons, plus more for the glass rim
Ice
2 tablespoons superfine sugar
Pinch cayenne pepper

Steps:

To make the rosemary and thyme simple syrup, add the granulated sugar, 2 sprigs or the rosemary, 2 sprigs of the thyme and the water to a small saucepan. Turn on the heat and bring to a gentle boil, then stir to dissolve the sugar. Turn off the heat and let it cool. Discard the rosemary and thyme. Store in an airtight container in the fridge for up to 1 month.
Add the vodka, lemon juice and 2/3 cup of the rosemary and thyme simple syrup (or more if you like a sweeter cocktail!) into a cocktail shaker with ice.
Mix together the superfine sugar and cayenne pepper then spread onto a plate. Run a lemon wedge around the rim of each glass and dip into the sugar and cayenne mixture. Fill each glass with ice, then divide the vodka lemonade between the 2 glasses. Garnish each glass with a sprig of rosemary and a sprig of thyme. Enjoy!
