Time 1h30m

Yield 36

Number Of Ingredients 12

3 eggs, beaten
1 cup raisins
1 teaspoon vanilla extract
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons baking soda
2 cups rolled oats
¾ cup chopped pecans

Steps:

  • In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed. Next, stir in the egg and raisin mixture, then stir in the rolled oats and pecans. Dough will be stiff. Drop by teaspoonfuls onto an unprepared cookie sheet.
  • Bake for 10 to 12 minutes in the preheated oven, until the edges are golden. Allow cookies to cool 5 minutes on the baking sheet before removing to a wire rack to cool completely.

THE VERY BEST OATMEAL RAISIN COOKIES EVER!

The Very Best Oatmeal Raisin Cookies Ever! image

Categories     Dessert

Time 1h25m

Yield 2 Dozen, 12 serving(s)

Number Of Ingredients 13

3 large eggs, lightly beaten
1/4 cup water
1 cup raisins
1 teaspoon vanilla extract
1 cup Crisco shortening
1 teaspoon ground cinnamon
2 1/2 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 cups quick-cooking oatmeal (not instant)
1/2 cup chopped walnuts
1 cup firmly packed brown sugar
1 cup granulated sugar

Steps:

  • Preheat oven to 350°.
  • Whisk eggs in a small bowl, add 1/4 cup water, 1 tsp vanilla and raisins; mix well. VERY IMPORTANT let set on counter for at least 1 hour.
  • In another bowl, combine crisco, and sugars, mix well.
  • Gradually add dry ingredients.
  • Blend in raisin mixture -- mix well.
  • I use a cookie scoop, slightly less than 1/4 cup and place them on a greased cookie sheet. I slightly flatten them with the back of the scoop.
  • Bake at 350° for 10-12 minutes. Do not flatten cookies a lot -- just a gentle tap.other wise they will flatten out too much.
  • Baking note: please remember to reverse position of cookie sheets halfway through baking. DO NOT OVER BAKE. Cookies should be slightly golden brown around edges. Centers will look set-- let cool 1 minute on cookie sheet and then remove to wire rack to complete cool.
  • I have used this recipe for over 30 years-- always outstanding-- most important thing to remove cookies from oven before they are finished-- residual heat in cookies will complete cooking-- and result in a cookie that is not dried out.
  • I also add more walnuts, as I like lots of big nuts in my oatmeal cookies-- I have often left the egg, raisin mixture on counter, for a couple of hours while cleaning house and came back and baked marvelous cookies.

THE VERY BEST OATMEAL COOKIES

The Very Best Oatmeal Cookies image

One of the best oatmeal cookies I've ever tasted. A definite family favorite. They are fantastic without the optional nuts, raisins or chocolate. Photo by KC Cooker is how these cookies look when I bake them--fairly flat, chewy in the middle with crispy edges. Yum.....

Find out why Alton Brown's Food Network cookie recipe earns the title of Oatiest Oatmeal Cookie.

Provided by Alton Brown

Categories     dessert

Time 27m

Yield 3 dozen cookies

Number Of Ingredients 10

16 ounces old fashioned rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon kosher salt
10 ounces unsalted butter, room temperature
6 ounces dark brown sugar
3 1/2 ounces granulated sugar
2 large eggs
2 teaspoons vanilla extract
8 ounces raisins

Steps:

  • Heat the oven to 375 degrees F. Spread oats in a single layer on half-sheet pans and bake until lightly toasted, about 20 minutes. Remove the oats from the oven and let cool for 2 to 3 minutes.
  • Grind 8 ounces of the toasted oats in a food processor for 3 minutes or until the consistency of whole-wheat flour. Add the baking powder, cinnamon and salt and pulse to combine.
  • Combine the butter, brown sugar and granulated sugar in the bowl of a stand mixer, and mix on medium speed until light in color, about 3 minutes. Stop once to scrape down the sides of the bowl. Reduce the mixer speed to the lowest speed, add the egg and vanilla and mix to combine. Stop to scrape down the sides of the bowl, if necessary.
  • With the mixer on the lowest speed, slowly add the oat mixture, the remaining 8 ounces of oats and the raisins until just combined. Stop once to scrape down the sides of the bowl. Scoop the dough with a 1-ounce ice cream scoop or disher onto parchment-lined half-sheet pans, leaving 2 inches between each mound. Bake the cookies for 12 minutes, rotating the pans after 6 minutes, until the cookies begin to brown around the edges. Remove the pans from the oven and let the cookies cool on the pans for 2 minutes. Transfer the cookies to a cooling rack to cool completely.
