My boyfriends mother made these over the weekend and they are the best I have ever had. I pride myself on being a "sweets snob" so if I say they are the best then either they are, or they are darn close to it! This recipe came out of a magazine but all that it says on the bottom is July/August 2006. Enjoy!

3/4 cup butter
1 3/4 cups sugar
3/4 cup cocoa
1/2 teaspoon vanilla extract
3 large eggs
1 3/4 cups pioneer biscuit and baking mix
1/4 cup butter
5 tablespoons evaporated milk
3 tablespoons cocoa
2 1/2 cups confectioners' sugar
1/4 teaspoon vanilla extract

Steps:

  • Please note that the first 6 ingredients listed are for the brownies. The last 5 ingredients listed are for the chocolate frosting!
  • Preheat oven to 350°F and grease a 13x9x2-inch baking pan.
  • Beat butter, sugar, cocoa, and vanilla until well blended. Add eggs, mixing thoroughly. Gradually stir in Biscuit & Baking Mix, mixing until batter is smooth.
  • Pour into prepared pan. Bake 22 to 25 minutes. Remove from oven. Cool in pan on wire rack.
  • While brownies are cooling prepare the Chocolate Frosting.
  • Mix butter, milk and cocoa in a medium saucepan. Heat until boiling, stirring constantly. Remove from heat and stir in confectioners' sugar, blending well. Stir in vanilla. Frost cooled brownies.

½ cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

I believe I found this recipe in one of my mother's old cookbooks as a teenager and made them so much that I practically memorized the recipe. It's one of my and my family's favorites. This is not your typical brownie. It's a different take on a blonde brownie--with gooey chocolate chips, crunchy walnuts and chewy coconut. They're best described as a sinfully rich chocolate delight.

1/3 cup butter, softened
1 cup brown sugar, packed
1 egg
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon vanilla
3/4 cup flour
1/2 cup coconut, flaked
1 1/2 cups chocolate chips
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 350°F.
  • Combine butter, sugar, egg, salt, baking powder and vanilla.
  • Gradually stir in flour (batter will be quite thick).
  • Fold in coconut, chocolate chips and walnuts one at a time.
  • Spread batter into a greased 9-inch brownie pan.
  • Bake for 25-30 minutes or until done.
  • Cool on a wire rack for 30 minutes.
  • Cut into squares and serve warm.
