Number Of Ingredients 8

Ingredients

1/3 cup regular or low-fat mayonnaise
2 tablespoons chopped fresh cilantro
1 to 2 tablespoons minced pickled jalapeño chilies
6 slices firm whole grain bread
6 ounces thinly sliced smoked turkey
4 thin slices red onion
1 ripe avocado, peeled, sliced
1 cup radish sprouts or alfalfa sprouts

Steps:

Stir mayonnaise, cilantro and jalapeños in small bowl to blend. Season dressing to taste with salt.
Place 2 bread slices on plates. Spread each with 1/4 of dressing. Top with turkey, onion, a second bread slice, remaining dressing, avocado slices and sprouts. Place third bread slice atop each sandwich; press to compact slightly. Cut sandwiches into quarters; skewer together with extra-long toothpicks, if desired.

Number Of Ingredients 11

Ingredients

4 tablespoons mayonnaise
2 tablespoons chopped fresh cilantro
1 large garlic clove, pressed
1 small jalapeño chili, minced
1/2 teaspoon ground cumin
6 slices hickory-smoked bacon
4 slices sourdough bread
8 thin slices smoked turkey (about 4 ounces)
4 large tomato slices
1/2 avocado, pitted, peeled, sliced
Romaine lettuce leaves

Steps:

Mix first 5 ingredients in small bowl. Cover and refrigerate until ready to use. Cook bacon in heavy large skillet over medium heat until crisp. Transfer to paper towels and drain. Toast bread. Spread mayonnaise mixture evenly over bread slices. Cover 2 bread slices with turkey, then tomato, avocado and bacon. Season generously with salt and pepper. Top with lettuce and remaining bread slices. Cut diagonally into quarters. Skewer each with frilly toothpick if desired and serve.

Ingredients

1/4 lb cooked ham or 4 slices bacon, diced
1 green bell pepper, chopped
1 medium onion, chopped
4 eggs
salt
pepper
butter
bread, for toast

Steps:

cook bacon or ham in butter in pan to desired preference.
Toss in green pepper and onion and cook until vegetables are almost tender.
Beat eggs in a bowl with salt and pepper.
Pour over mixture in skillet and cook until eggs are set.
Turn with a spatula and brown second side lightly.
Place between 2 slices of buttered toast.
