WEIGHT WATCHERS (WW) ZERO POINT CARROT AND GINGER SOUP
This came from a leaflet in a Weight Watchers meeting. I have replicated it as the original recipe but i found for my tastes I liked a little more ginger and a little less water to make it thicker. It freezes well and is ideal for when the munchies strike. I think this would also be nice if the ginger was replaced with cumin or chili and the stock with coconut milk (although this would add a points value)

Steps:
- Heat the onion and ginger in a pan with 6 tbsp of the stock.
- When the onion has softened slightly add the carrots and stock.
- Simmer for 20 minutes.
- Liquidise the soup and season if desired.
- Place the soup back in the pan and add the mini pasta shapes.
- Simmer for a further 5 minutes.

A nice, fresh way to prepare carrots. Weight Watcher 2 points Crockpot version: I have made this ahead of time and put them in the crockpot just to heat up. If you plan on doing it this way, have the carrots a bit under cooked. They take roughly 3/4 - 1 hour to heat up (depending on crockpot)

- Cut carrot, parsnip, and potato into 1/8-inch-thick slices using vegetable slicer or thin slicing blade of food processor. Combine vegetables in large bowl and generously spray with olive oil nonstick spray, tossing to coat evenly. Sprinkle vegetables with salt and cayenne, tossing to coat.
- Arrange vegetables in single layer on prepared baking sheets. Bake until lightly browned, about 30 minutes, rotating baking sheets halfway through baking time and transferring vegetables to large bowl as they are browned. (Chips will crisp a bit as they cool.)

Bake until chips are browned, 30–35 minutes, rotating position of pans from upper to lower racks, and rotating front to back halfway through baking time.
