APPLE BANANA BREAD
This recipe is now back to my original posting as I posted it at Recipezaar many years ago. Recently I noticed that somehow the name got changed as did some of the ingredients. In 2005 I wrote that this is a moist light bread/cake with just a hint of cinnamon. Keeep an eye on cooking times as too long and it will be drier. Also leave in tin for about 5 mins before turning out onto a rack to cool completely. Slices can be served as a dessert topped with custard and whipped cream, or cold and buttered.

Steps:
- Preheat oven to 350 deg F.
- Cream butter and sugars, and beat in eggs.
- Stir in sour cream, bananas and vanilla.
- In separate bowl, combine flour, baking powder, soda and cinnamon.
- Gradually add to butter mixture.
- Gently stir in apples and nuts
- Spoon into greased bread pan and bake 1 hour.

Lots of spices add wonderful flavor to this delicious banana bread. Go as heavy or light as you like. I often add ginger and mace to this recipe, but I didn't have any on hand when I made this loaf - so I just wrote up the recipe exactly as I made it.

- Chop apples 15 seconds/speed 4.
- Add lemon juice and spices to TM bowl. Cook 8 minutes/90 degrees/speed 2. Scrape down,.
- Add the banana, maple syrup, and oil. Puree the mixture 15 seconds/speed 6. Scrape down.
- Add flours and mix 30 seconds/speed 4. Scrape down.
- Add the baking powder, baking soda and salt. Mix 20 seconds/speed 4.
- Pour batter into greased loaf pan - mine is 9x5 inches.
- Bake at 375 F or 190 C for approximately 1 hour. Insert a skewer into the center of the loaf to check for doneness.

- Preheat the oven to 160C. Line a 2-pound loaf tin with greaseproof paper.
- Place the buckwheat flour, Demerara sugar, baking powder, baking soda, ground cinnamon, bananas, egg, Greek style yogurt, vegetable oil, honey or maple syrup and vanilla extract in the mixing bowl. Mix 30 Sec. / Speed 5.
- If you don't have a Thermomix, place the buckwheat flour, Demerara sugar, baking powder, baking soda, ground cinnamon, bananas, egg, Greek style yogurt, vegetable oil, honey or maple syrup and vanilla extract in a blender and blend until smooth.
- Pour into the prepared tin and bake in the oven for 1 hour and 10 minutes. Insert a skewer and test if it comes out clean. If not, bake for a little longer. You can put some foil on top to cover if it gets too dark.
- Once baked, remove from the oven and decorate with the banana halves. brush over some maple syrup and leave to cool entirely on a wire rack. Enjoy!
