1 Reynolds KITCHENS® Slow Cooker Liner
2 pounds lean ground beef
2 medium green bell peppers, chopped
2 small onions, chopped
2 (15 ounce) cans red kidney beans, undrained
2 (1.25 ounce) packages chili seasoning mix
2 (15 ounce) cans tomato sauce
2 (10 ounce) cans diced tomatoes and green chiles
½ cup Shredded cheese
½ cup Sour cream

Steps:

  • Line a 5 to 6-quart slow cooker with a Reynolds KITCHENS® Slow Cooker Liner. Fit liner snugly against bottom and sides of bowl; pull top of liner over rim. Set aside.
  • Brown ground beef, bell peppers, and onions in a large skillet over medium-high heat, stirring occasionally, until beef is no longer pink. Drain well.
  • Spoon beef mixture into the lined slow cooker. Add beans, seasoning mix, tomato sauce, and diced tomatoes and green chilies to beef mixture; stir gently with wooden or plastic spoon.
  • Cover and cook 6 to 7 hours on Low or 3 to 3 1/2 hours on High, until hot and bubbly throughout.
  • Carefully remove lid to allow steam to escape. Stir gently and serve chili directly from slow cooker liner. Serve directly from lined slow cooker. Top with cheese and sour cream, if desired.
  • Do not lift or transport liner with food inside. Remove all food and cool slow cooker completely before lifting liner from slow cooker.

1 can (12 oz) tomato paste
1/2 cup water
3 to 5 tablespoons chili powder
1 teaspoon freshly ground pepper
1/2 teaspoon paprika
Shredded Cheddar cheese
Sour cream
Chopped green onions
Sliced ripe olives
Corn chips

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
  • In slow cooker, stir together cooked beef, bell pepper, tomatoes, soup, beans, tomato paste, water, chili powder, pepper and paprika.
  • Cover; cook on High heat setting 4 hours. Serve chili with desired toppings.

1 (15 ounce) can kidney beans, rinsed and drained

¾ cup chili powder
1 cup water

Steps:

  • Place the ground beef in a large pot over medium-high heat. Cook, stirring to crumble, until evenly browned. Drain off grease. Don't freak about the crushed corn chips....they just kinda "disappear" and serve as a thickening agent.

1 1/2 lbs beef stew meat, cut into 3/4 "- 1-inch pieces
1 large onion, finely chopped
2 garlic cloves, minced
1/2 cup chopped green bell pepper
1/2 cup finely crushed corn tortilla chips, such as Tostitos, measure AFTER crushing
3 (15 ounce) cans kidney beans, drained
1 (15 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
1/4 teaspoon cinnamon
1/2-1 1/2 teaspoon chili powder
1 -2 teaspoon cumin
1/2 teaspoon ground coriander
1/2 teaspoon pepper
1/2-1 teaspoon salt
1/4 teaspoon sugar

Steps:

  • Place all in the crock pot in the order listed.
  • Gently stir everything together.
  • Cover and cook on low for 6-8 hours or on high for about 4 -5 hours.
  • When done, mix again very well.
  • Serve topped with sour cream, shredded cheese, green onions, etc.

First, thank you to *Parsley* - Chef # 199848 - for inspiring me with her "Thick and Chunky Crock Pot Game Day Chili," Recipe #251837. I had tried about 20 different recipes for Chili, and *Parsley*'s was the best. But I've been tweaking it for a year and a half now, and I think I did it! This chili is medium to medium-hot, not very sweet, hearty and stew-like, with depth and a delicious aftertaste. I make in a 7-quart crockpot, for my large family. If you like your chili sweeter, use a red onion instead of a white onion; add more brown sugar; and/or add more chocolate chips. Be careful: a little chocolate - just like cumin and cinnamon - goes a looonnnngggg way!

5 (15 1/2 ounce) cans beans, I use 2 cans dark red kidneys, 2 cans light red kidneys, and 1 can black
2 (16 ounce) jars chunky salsa, medium (I like Pace)
1 (6 ounce) can tomato paste
1 (14 1/2 ounce) can beef broth
1 1/2-2 cups crushed tostito tortilla chips
1 chicken bouillon cube, crushed
1 beef bouillon cube, crushed
1 1/4 teaspoons sazon goya
1/8 teaspoon cinnamon
5 teaspoons Mexican chili powder
4 teaspoons cumin
1 teaspoon ground coriander
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon light brown sugar
5 -10 dark chocolate chips, yes, between 5 and 10 chips, depending on desired sweetness

Steps:

  • Combine all ingredients in a 7-quart crockpot. It might be easier to combine in a larger vessel, mix, and THEN transfer to your crockpot. Cook on "High" for 5 hours, or "Low" for 8 hours.
  • I typically serve the chili over a bed of whole Tostito chips, with a layer of shredded cheese in between.
