Steps:
- Dissolve yeast and sugar in hot water in a bowl. Let stand until yeast forms a creamy foam, 5 to 8 minutes.
- Mix 1 3/4 cup flour and salt in a large bowl. Pour in yeast mixture; mix well until dough comes together.
- Transfer dough to a floured surface and knead until smooth, adding remaining 1/4 cup flour if dough is too sticky, about 2 minutes. Roll dough into a 12-inch circle. Transfer to a greased pizza pan.

PIZZA WITH CARAMELIZED ONIONS AND CRISPY BACON

- Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
- In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
- In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
- On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
- Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
- In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
- In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
LAVASH OR FLATBREAD THIN AND CRISPY PIZZA

- Prepare Lavash Bread or use your favorite flatbread. There are so many options!
- Next, make the Chimichurri Sauce which will be used in the place of pizza sauce. Or use one of the other sauces suggested earlier.
- Fry bacon, but not too crispy, it will continue to cook in the oven. When cool, chop it into small pieces.
- Next, chop ham (or whatever meats you want to use). Slice or chop your vegetables too. In this case, I'm using red onions and black olives.Preheat oven to 450 degrees F.
- Toss sliced onion into the skillet and sauté for a few minutes in the bacon grease until slightly caramelized.
- Brush approximately 2 tablespoons of Chimichurri or barbecue sauce over the cooked Lavash Bread or flatbread.
- Sprinkle half of the shredded mozzarella cheese over the sauce, followed by the ham, bacon, caramelized onions, and black olives. Top with the remaining shredded cheese.
- Bake for 5 to 7 minutes or until the cheese is bubbly and the edges of the pizza are golden. Sprinkle with crushed red pepper or garnish the crispy pizza with chopped cilantro.

- Preheat the oven to 400 degrees F (200 degrees C). Line a nonstick baking sheet with foil.
- Place tomatoes and mushrooms on the prepared baking sheet; drizzle with 1 tablespoon balsamic vinegar and sprinkle with salt and pepper.
- Roast in the preheated oven for 20 to 25 minutes, turning halfway through. Remove from the oven and allow to cool to room temperature, about 25 minutes. Leave oven on.
- Meanwhile, heat 1 1/2 tablespoons olive oil in a large, nonstick skillet over medium-high heat. Add onions, reduce heat to medium, and caramelize until golden brown and soft, turning occasionally, 15 to 20 minutes. Season with salt and pepper and a light drizzle of balsamic vinegar; set aside to cool.
- Cook bacon on a paper towel-lined, microwave-safe plate on high heat at 1 to 2 minutes intervals until almost crisp. Coarsely chop.
- Brush sides of the pizza crust with a thin layer of olive oil and place on a pizza pan. Spread Alfredo sauce evenly in a thin layer around the crust, leaving about 1/2 inch crust showing around the edge. Sprinkle with Fontina cheese. Spoon tomato-mushroom mixture over top, then caramelized onions. Sprinkle bacon and Gorgonzola crumbles over the vegetables.
- Return to the oven and bake until the top is bubbly and starting to turn golden and the edges are golden brown, 15 to 18 minutes.

- Preheat oven to 400°. In a large skillet, heat 1 tablespoon butter and 1 tablespoon oil over medium-high heat. Add onion; cook and stir 2-3 minutes or until softened. ROASTED GARLIC AND MUSHROOM PIZZA

- It is easiest to roast the garlic immediately before making this recipe. If you preroasted it, turn on your oven and preheat to 400°F.
- Heat the oil or butter in a large skillet. Add the mushrooms, sherry and thyme. Cook, stirring frequently, until mushrooms change color and are softer, but not significantly shrunken. Remove from heat.
- In a bowl, combine the roasted garlic, cream cheese and goat cheese together (preferably when the garlic is still warm to melt everything together). Resist the temptation to use a food processor; mix by hand to maintain the chunks of roasted garlic. Spread mixture on top of the pizza crust.
- Evenly distribute the mushrooms on top of the garlic-cheese spread.
- Bake 15 minutes. Enjoy!

- About one hour before you want to eat, preheat your oven with your pizza stone or baking steel set on the highest rack inside (no need to put a pan in the oven if you don’t have a stone/steel) to 500-550°F (as high as your oven will go). Make sure your pizza dough is resting at room temperature.
- After the oven comes to temperature. Toss the mushrooms with the olive oil in a mixing bowl and spread in an even layer on a baking sheet (if you like, you can line it with parchment or aluminum foil for easy clean up). Don't worry of some the mushrooms look dry--they don't all need to be coated in oil. Make sure the mushrooms are not significantly overlapping or they'll steam. They should fit, just barely, in a half sheet pan.
- Roast for 8-10 minutes, or until the edges are starting to brown and the mushrooms have shrunk significantly. Let cool until cool enough to handle, 5-10 minutes.
- Set your pizza dough on a piece of parchment paper set on an inverted sheet pan or cutting board (some kind of flat, moveable surface), and gently stretch into a circle or oval as large as will fit comfortably on your pizza stone (or steel or baking pan). Mine is usually about 14-inches in diameter. Sprinkle with a pinch of sea salt or kosher salt, focussing especially around the edges.
