FLANK STEAK WITH HERB SAUCE AND THREE CHEESE WAFFLE HASH BROWNS

- For the herb sauce: Whisk together the herbs, olive oil, vinegar, serrano, garlic, shallot, salt and pepper in a small bowl. Set aside.
- For the three cheese waffle hash browns: Preheat a waffle iron to medium.
- Toss the shredded potatoes in a bowl with the melted butter, the three cheeses and the salt and pepper. Mix until well combined.
- Spray the top and bottom of the waffle iron well with cooking spray. Put a mounded cup of the potato mixture (about 1 1/4 cups worth) in each well and gently pat down. (They will start to sizzle.)
- Close the waffle iron and cook until the hash browns are golden brown and crispy; time will vary based on your waffle iron, but it will take roughly 12 minutes. (Check on them occasionally to make sure they aren't burning.) Use a butter knife or fish spatula to gently and very carefully remove the hash browns. They are very fragile when they are hot and just out of the iron.
- For the flank steak: Meanwhile, preheat a grill or grill pan to medium-high. Pat the steak dry and sprinkle liberally with salt and pepper. Grill the steak for about 5 minutes on each side for medium-rare. Set on a cutting board to rest for 10 minutes.
- Thinly slice the steak against the grain. Divide the hash browns and steak among 4 plates and drizzle the steak with the herb sauce.
MOZZARELLA STICK WAFFLES RECIPE BY TASTY

- Preheat a waffle maker to medium heat.
- Cut the mozzarella into four equal slices, then cut each slice in half into square chunks, making eight chunks total.
- Place the flour, beaten eggs, and bread crumbs into three separate bowls.
- Dredge a mozzarella square in the flour, shaking off the excess, then dip into the beaten egg. Roll it in the bread crumbs, making sure that it is completely coated. Put the breaded mozzarella on a plate; repeat with the remaining mozzarella chunks.
- Spray the waffle iron on both sides with cooking spray.
- Cook the mozzarella squares in the waffle iron for about two minutes, until the bread crumbs are golden brown and the cheese is starting to bubble.
- Garnish with scallions and serve with marinara!

HOW TO MAKE CHEESE STICKS
These super-simple breadsticks are easy, cheesy, and there's no dough to make because we're going to use frozen puff pastry for this. They're very cool for entertaining.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.
- Place a sheet of frozen puff pastry dough onto a floured work surface and allow dough to thaw just until it can be unfolded. Unfold dough into a flat sheet; brush top of puff pastry dough with olive oil. Season with salt, black pepper, and cayenne pepper.
- Sprinkle white Cheddar cheese and 1/4 cup Parmigiano-Reggiano cheese onto the dough, covering the surface. Top with a piece of plastic wrap; press cheese and seasonings firmly into the dough with your fingers or by laying a sheet pan onto the dough over the plastic and pressing it down.
- Remove plastic and use a pizza cutter or sharp knife to cut the dough down the seam lines into thirds; cut each third lengthwise into thirds for a total of 9 breadsticks.
- Pick up a dough strip, place it seasoned side down on the work surface, and twist from both ends 8 or 9 times to make a rolled tube of dough with the seasoned side out. Place breadsticks onto prepared baking sheet.
- Sprinkle remaining 1 tablespoon Parmigiano-Reggiano cheese over the sticks. Roll the sticks lightly to even up their shapes and pick up and press any dropped cheese onto the surfaces.
- Bake in the preheated oven for about 10 minutes; flip and continue baking until breadsticks are browned and crisp, 10 to 20 more minutes. If you pick up a stick by one end and it droops, bake for several more minutes. Cool on a wire rack before serving.

- Sift together flour, baking powder, and baking soda three times; set aside.
- In a medium bowl, whisk together eggs, 1 1/2 cups buttermilk, and butter until well combined. Add flour mixture and whisk until smooth. Batter should have a pudding-like consistency. If necessary, add more buttermilk, 1/4 cup at a time, until pudding-like consistency is reached. Stir in cheese, sugar, and salt; season with pepper.

- Preheat a waffle-stick maker or regular waffle maker.
- In a medium bowl, whisk together the egg yolks, buttermilk, and butter.
- In a large bowl, mix together the flour, cornmeal, baking powder, baking soda, salt, and pepper.
- Using a stand mixer fitter with the whisk attachment, whip the egg whites on med-high speed until firm peaks form, 5-6 minutes.
- Make a well in the center of the dry ingredients and pour in the buttermilk mixture, stirring until just combined.
- Gently fold in the egg whites, then fold in the three cheeses.
- Ladle the batter into the waffle maker, using ½-3/4 cup batter per batch if using a waffle maker.
- Spread the batter so that it almost reaches the edges of the waffle maker.
- Cook until the waffles are crisp and browned, 3-4 minutes (if using a waffle-stick maker, follow the manufacturer's instructions).
- Using a spatula, remove the waffles from the waffle maker.
