If you're looking for a snack, or a dinner party finger food, look no further, these tasty little pastries are perfect.

Number Of Ingredients 5

1 package of ready rolled puff pastry
4 ounces cream cheese
2 ounces feta cheese (crumbled)
12 Peppadew Piquante Peppers (chopped)
1 egg (lightly beaten)

Steps:

  • Preheat oven to 375F
  • Line a cookie sheet with non-stick foil
  • On a lightly floured surface, unroll the pastry into a rectangle. Set aside.
  • In a small bowl combine the cream cheese, Piquante peppers, and feta.
  • Spread the cheese mixture over the pastry and from the longer side, roll up the dough and pinch edge together to seal. Cut into 10 - 12 slices.
  • Place on a baking tray lined with non-stick foil and brush with the egg. Bake for 20-25 minutes until golden brown.

Number Of Ingredients 9

1 cup crumbled feta cheese
2 tablespoons chopped fresh dill or 2 teaspoons dried dill
2 tablespoons red wine vinegar
4 red bell peppers, roasted, peeled, and cut into thin strips
2 yellow bell peppers, roasted, peeled, and cut into thin strips
2 orange bell peppers, roasted, peeled, and cut into thin strips
4 garlic cloves, minced
8 (8 inch) flour tortillas
8 leaves curly leaf lettuce

Steps:

  • Combine first 7 ingredients. Line each tortilla with a lettuce leaf. Spoon 1/2 cup bell pepper mixture down center of each tortilla; roll up.

One of my favorite meals when I was younger was a recipe my mother made called Quick Chili Rice Casserole. I put a Greek spin on it and stuffed it in a pepper. It works great paired with a garden salad and fresh bread. -Sacha Morgan, Woodstock, Georgia

3 large green peppers
1/2 pound lean ground beef (90% lean)
1 small onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
2 cups chopped fresh spinach
3/4 cup uncooked whole wheat orzo pasta
2 tablespoons minced fresh oregano or 2 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
6 tablespoons crumbled feta cheese

Steps:

  • Cut peppers in half lengthwise and remove seeds. In a Dutch oven, cook peppers in boiling water for 3-5 minutes. Drain and rinse in cold water; invert onto paper towels., In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Stir in the tomatoes, spinach, orzo, oregano, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 5-7 minutes or until orzo is tender., Spoon into peppers. Place in an 11x7-in. baking dish coated with cooking spray. Cover and bake at 350° for 30-35 minutes or until peppers are tender. , Sprinkle with cheese; bake 5 minutes longer or until cheese is softened.

I found this in the "Healthy Bites" publication at my local Weis grocery store and I am posting for safe keeping. It was in the "Cancer Control" section of the magazine.

Number Of Ingredients 13

3 teaspoons olive oil
1 garlic clove, minced
5 ounces fresh spinach
1/2 cup reduced-fat feta cheese
2 teaspoons lemon juice
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon black pepper
1/2 teaspoon oregano leaves
4 (4 -6 ounce) boneless skinless chicken breasts, pounded to 1/4-1/2 inch thickness
2 large eggs, beaten
3/4 cup panko breadcrumbs
nonstick cooking spray
1 cup crushed tomatoes (they recommend Furmano's Chunky Crushed Tomatoes with Basil, Garlic and Oregano)

Steps:

  • Preheat oven to 350.
  • Heat 1 tsp olive oil in a large skillet over Medium heat.
  • Add garlic and saute 1-2 minutes or until fragrant.
  • Add spinach and cook until wilted, about 3-5 minutes, tossing constantly; remove from heat.
  • In a medium bowl, combine spinach, feta, lemon juice, crushed red pepper, black pepper and oregano; set aside.
  • Dredge each chicken breast into beaten egg, then panko breadcrumbs.
  • Spread one quarter of the spinach/feta mixture over chicken, then carefully roll up and secure with 2 toothpicks.
  • Repeat with remaining chicken breasts.
  • Heat remaining 2 tsp olive oil in a large skillet.
  • Add rolled chicken breasts to skillet and cook about 5-7 minutes or until browned on all sides.
  • Remove from heat and place in a square baking dish, sprayed with nonstick cooking spray.
  • Bake 20-25 minutes or until minimum internal temperature reaches 165.
  • Top with tomatoes and serve. Warm the tomatoes first, if desired.

4 boneless skinless chicken breast halves (4 ounces each)
8 bacon strips, cooked and drained
1 cup (4 ounces) crumbled feta cheese
4 roasted sweet red pepper halves, drained and patted dry
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1/2 teaspoon Italian seasoning

Steps:

  • Flatten to 1/4-in. thickness. Top each with two strips bacon, 1/4 cup feta cheese and a red pepper half; sprinkle with salt and pepper. Roll up starting with short side, bringing the ends to meet. Tie at 1-1/2-in. intervals with kitchen string. , In a large skillet over medium heat, brown chicken in oil on all sides. Transfer to an ungreased 8-in. square baking dish. Sprinkle with Italian seasoning. , Bake, uncovered, at 350° for 35-40 minutes or until chicken is no longer pink. Remove string.
