Delicious buttery roasted brussels sprouts are the perfect side for any meal!

1 pound brussels sprouts
2 tbsp olive oil
1/4 cup Brummell and Brown Organic Buttery Spread
2 tbsp fresh chopped thyme
1 pinch salt and black pepper
1/2 cup Cotija cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the bottoms from the sprouts and slice in half discarding any outer leaves
  • Lay the sprouts on a baking sheet and drizzle the olive oil over them
  • Roast in the oven for 20 minutes tossing once around halfway cooking
  • Combine the Brummel and Brown with the chopped thyme, salt and pepper and refrigerate
  • Once the brussels sprouts are cooked transfer them to a bowl and add the buttery thyme spread
  • Toss well until the spread has melted
  • Serve at once and garnish with some crumbled Cotija cheese on top
