TIGHT BUDGET HEALTHY DINNER, MEXICAN OR ITALIAN
This is basically just a very simple and plain chili/casserole. I made this meal for under 8.00 (i already had the seasonings in my pantry) and it made 2 good sized adult portions. Nothing fancy but definitly answers yes to the question of, "can a person still eat good,healthy, non -processed food for cheap?" I always get store brand organic meat or the meat offered that has no hormones, antibiotics, etc... . Some stores even have their own line of organic canned goods to really keep this price low. I have even made this without the meat and just subbed a small container of fresh mushrooms and it was still really good. BE SURE to use the liquid from both the beans and the tomatoes; it gives it more flavor and better texture. Hope it works for you.

- Place ground meat in pot, add oil, garlic powder, salt and pepper.
- Brown ground meat.
- Add beans and tomatoes.
- If making mexican add chili powder.
- Simmer for 1 hour.
- Top with either sour cream for mexican or parm cheese for italian.

TIGHT BUDGET HEALTHY CHICKEN
Inexpensive and very tasty. Makes a very nice, almost carmelized sauce on its own. If I cant afford organic chicken then I go to Wegmans and they have a "Food You Feel Good About" line of foods , and the meats have no hormones, antibiotics, preservatives, etc... I get a pack of 8 chicken drumsticks for 2 dollars or less to make this dish. Most of the ingredients are things usually found around the house. I usually use more garlic for my 3 yr old who likes extra on everything. Hope it works for you.

Steps:
- Place chicken, potatoes and onions in a pyrex casserole baking dish, or other suitable oven proof dish.
- Squeeze lemon over all pieces of chicken, potatoes and onion.
- Sprinkle chicken, potatoes and onion with spices.
- Cut up butter and place around meat and vegetables.
- Cover with foil and bake at 325 for 2 - 3 hours or until chicken and potatoes are done.
