TIRAMISU (SOUTH BEACH DIET)
I've recently gone on the south beach diet and have lost 11 pounds to date. This recipe looks so tasty and I can't wait to try it. Being that so many desserts are so filled with carbs I was delighted to find this recipe. So you can have your cake and eat it too! I don't eat dairy so I'm going to substitute all the dairy with non-dairy ingredients.

Steps:
- Heat oven to 350'F.
- Lightly spray an 8x8 inch baking pan with cooking spray. I use grape seed oil.
- Using an electric mixer, in a large bowl beat the egg whites at high speed, with the cream of tartar and salt until stiff peaks form. About 5 minutes.
- Add 1/2 teaspoons of the vanilla extract and beat to combine. Add 1/3 cup sugar substitute and beat the mixture to form stiff peaks.
- Sift 2 tablespoons of the flour over the beaten egg whites and fold gently to incorporate. Repeat twice with remaining flour until all the flour is folded into the egg whites.
- Pour the batter into your prepared pan and gently smooth the top. Bake turning once half way through the cooking time until the cake is golden and the tester comes out clean. About 20 minutes. Cool completely.
- In a small bowl combine the ricotta, whipped topping, remaining 2 teaspoons sugar substitute, and remaining 1/4 teaspoon vanilla.
- Cut the cake in half vertically down the middle to make two 4 by 8 inch pieces. Place the halves on a flat work surface.
- Drizzle 2 tablespoons espresso onto each half. Spread half of the ricotta mixture onto one of the halves and dust with half of the cocoa powder.
- Top with the remaining cake half; spread the top with the remaining ricotta mixture and dust with remaining cocoa powder.
- Using a serrated knife, gently cut cake crosswise into 4 slices and serve with mint leaves for garnish if using.

CHEATER'S TIRAMISU
This tiramisu isn't fancy but it's delicious and it's the easiest recipe I have. Always a hit.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease the bottom only of a 9x13-inch glass baking pan.
- Combine cake mix, water, oil and eggs in a large bowl with a mixer on medium speed until well combined. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 29 to 34 minutes. Remove from the oven and let cool completely, about 30 minutes.
- Poke 12 holes in the cooled cake with the base of a serving spoon or any utensil that has a rounded bottom.
- Whip whipping cream, adding sugar and vanilla when it's about halfway whipped; you want it to hold its shape, but don't overwhip.
- Pour coffee over the cake, then immediately spread whipped cream evenly over top. Dust with cocoa powder, covering it completely. Cut and serve or chill in the refrigerator until ready to serve.

MEGAN'S TIRAMISU

Steps:
- Start syrup: Combine white sugar and boiling water in a medium bowl; stir until sugar dissolves. Set aside.
- Prepare filling: Combine powdered sugar, mascarpone cheese, 1/4 cup tuaca, and vanilla extract in a bowl; whip with the whisk attachment of an electric mixer until smooth. Gradually add whipping cream and whip until soft peaks form.
- Continue syrup: Mix coffee and tuaca into the sugar-water mixture.
- Assemble tiramisu: Line the bottom of a 9x13-inch glass baking dish with ladyfingers. Pour 1/2 of the syrup over top, then layer with 1/2 of the filling. Add another layer of ladyfingers and cover with remaining syrup and filling. Smooth with the back of a spoon and sprinkle with grated chocolate. Refrigerate for at least 4 hours before serving.

- beat egg whites to stiff peaks and fold in 10 equal packets.
- beat cheese and egg yolks together, then fold in 14 equal packets.
- toss ladyfingers in cognac and coffee.
- butter a pyrex dish and line it with the lady fingers.
- spoon cheese mixture on top of them.
- top with egg white mixture.
- if needed, repeat layering process.
