This Pomegranate Spritzer is the perfect holiday mocktail. Warm spice-infused pomegranate juice is topped with sparkling water. See how!

2 cups pomegranate juice
2 oranges (sliced into ~1/8″ thick rounds)
2 cinnamon sticks (plus extra for garnish if desired)
4 whole cloves
4 whole allspice berries
64 oz sparkling water or club soda (chilled (I like San Pellegrino))
1 pomegranate (arils separated for garnish)

Steps:

  • Get the sparkling water into the fridge to chill.
  • In a small saucepan, combine the pomegranate juice, 4 slices orange slices, 2 cinnamon sticks, the cloves, and allspice berries. Bring to a boil, then reduce to a low simmer for about 30 minutes. Turn off the heat and use a slotted spoon to remove the orange slices and spices.
  • Chill the juice in the refrigerator until ready to use. Be sure it's cold or else it'll knock the bubbles out of the sparkling water.
  • To serve, pour ¼ cup (2 oz) of the mulled pomegranate juice into a glass. (I use stemless wine glasses but use what you have on hand. You can even chill the glasses for an extra-refreshing spritzer.) Then top with 1 cup (8 oz) sparkling water immediately before serving. Garnish with a cinnamon stick, slice of orange, and pomegranate arils.

This is a wonderfully festive beverage to open a dinner party: Sweet-tart pomegranate juice is balanced by bitters and spiked with vodka and fizzy rosé. Find pomegranate arils in the refrigerated area of the supermarket produce section; they'll save you at least 10 minutes because you won't need to pull the arils from a whole pomegranate.

1/2 cup pomegranate juice
1/4 cup granulated sugar
1/2 cup (4 oz.) chilled vodka
2 tablespoons fresh lime juice
1 1/2 teaspoons Angostura bitters
5 cups (40 oz.) chilled sparkling rosé wine
1/3 cup pomegranate arils

Steps:

  • Combine pomegranate juice and sugar in an 8-cup microwavable measuring cup. Microwave at high until warmed, about 2 minutes; stir until sugar dissolves. Stir in vodka, lime juice, and bitters; chill 20 minutes. Gently stir in rosé. Serve in Champagne glasses; top each with 4 to 5 pomegranate arils.

1/2 cup sliced fresh gingerroot
1 medium lime, sliced
3 cups pomegranate juice
3/4 cup orange juice
3 cups chilled club soda
Optional: Lime wedges, pomegranate seeds and ice

Steps:

  • Place ginger and lime slices in a pitcher; stir in pomegranate and orange juices. Refrigerate overnight. , Just before serving, strain and discard ginger and lime. Stir club soda into juice mixture. Garnish as desired.

1 cup pomegranate juice
3 tablespoons sugar
½ tablespoon lemon juice
sugar, for coating rim
½ tablespoon lemon juice
1 ½ tablespoons pomegranate juice
4 oz sparkling wine, or as needed
1 tablespoon pomegranate seeds
1 sprig fresh rosemary

Steps:

  • Make the pomegranate molasses: In a small saucepan, stir together the pomegranate juice, sugar, and lemon juice. Bring to a simmer over medium heat, then reduce the heat to low and cook for 20-30 minutes, stirring occasionally, until syrupy. Be careful not to burn the syrup. Remove the pot from the heat and let the pomegranate molasses cool completely before using. Any leftovers will keep in an airtight container in the refrigerator for up to 2 weeks.
  • Make the cocktail: Add a few tablespoons of sugar to a small plate. Dip the rim of a champagne glass in the pomegranate molasses, then in the sugar to coat.
  • Add ½ tablespoon of the pomegranate molasses to the bottom of the glass, then pour in the lemon juice and pomegranate juice. Fill the rest of the way with sparkling wine.
  • Float the pomegranate seeds on the top of the cocktail and garnish with the rosemary sprig.
  • Serve immediately.
  • Enjoy!

Steps:
