1 hamburger bun, hotdog bun, or sandwich bun
1 tbsp (14.2 g) of butter (optional)
1 tbsp (15 mL) of olive oil (optional)

Steps:

  • Set your oven or toaster oven to BROIL and let it heat up for 5-10 minutes. Turn the dial on your regular oven or toaster oven to its broil setting. Use its highest broil setting if it has different ones. Let it preheat for 5-10 minutes so it is ready to toast your buns. If you are using a regular oven, make sure there is an oven rack in the top position right under the broiler. If you are using a toaster oven that has multiple rack positions, you can put the rack in the top position to get the buns closer to the broiler as well.
  • Place the buns cut-side-up on a baking sheet. Cut or pull the buns apart to expose the inside for toasting. Set the halves of the buns face-up on a baking sheet so the cut side will get toasted.Tip: For an easy flavor boost, spread about 1 tbsp (14.2 g) of butter or 1 tbsp (15 mL) of olive oil on each bun before you place them under the broiler. If you have to cut the buns in half, then try to make the 2 halves as even as possible so they toast evenly. If the buns are supposed to be attached, such as hotdog or sub buns, you can just spread them apart as much as you can without pulling the halves off of one another.
  • Broil the buns for 30 seconds or until they turn golden brown. Put the baking sheet in the oven or toaster oven and close the door. Keep an eye on the buns and remove them after 30 seconds or when you see that they start to turn a golden brown color. It's easy to go from toasted to burnt with a broiler, so it's important to stay and watch the buns as they toast.

We're going to make our own, and not only are these going to be the perfect shape, they're going to taste way better than anything that comes out of a plastic bag. The total time takes almost 4 hours, but the actual amount of work involved is maybe 10 minutes.

1 (.25 ounce) package active dry yeast (such as Fleischmann's ActiveDry Yeast®)
1 pound all-purpose flour, or as needed - divided
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons butter, melted
3 tablespoons white sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
1 egg, beaten
1 tablespoon milk
1 teaspoon sesame seeds, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
  • Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
  • Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
  • Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

1 cup warm water, divided (110 F-115 F)
1/2 teaspoon sugar
1 (1/4 ounce) package active dry yeast
2 tablespoons extra virgin olive oil, divided
2 -2 1/2 cups bread flour, divided
1 teaspoon salt
3 large garlic cloves

Steps:

  • Place 1/2 cup of the water, sugar and yeast in a large bowl of a stand mixer with the paddle attachment.
  • Let stand for 2-3 min or until yeast is dissolved.
  • Add remaining 1/2 cup water, 1 Tbs of the oil and 1 cup of the flour.
  • Beat at low speed until combined.
  • Add the salt.
  • With the mixer running, slowly add enough of the remaining flour to form a soft dough.
  • Beat at medium low speed for 5 min or until smooth and elastic.
  • Place in a greased medium sized bowl, turn over to grease both sides.
  • Cover and let rise in a warm place for 30 min or until doubled in size.
  • Gently punch down the dough to deflate.
  • Place on a lightly floured surface.
  • Divide the dough into 6 pieces.
  • Form each piece inot a ball and place on a parchment lined baking sheet.
  • Cover with a towel and let stand for 3 minute.
  • Flatten into 3 3/4-inch rounds.
  • Cover again with a towel and let rest for 15 minute.
  • Place another lightweight baking sheet or pan on top of the towel covering the buns. This will act as a weight, making the buns flatter and more even.
  • Let the buns rise again for 25 min or until doubled in size. The dough should hold slight indentation when gently pressed.
  • Meanwhile, heat the oven to 375ºF.
  • With the side of a knife, mash the garlic with a dash of salt until a fine paste forms, or you can use a mini food processor.
  • Place in a small cup and stir in the remaining 1 Tbs of olive oil.
  • Brush the tops of the buns with the garlic mixture.
  • Bake for 20 min or until golden brown and bottoms sound hollow when gently tapped.
  • Cool completely on a wire rack.

  • Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.
  • Mix in enough flour to make a soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes.
  • Shape dough into 12 slightly flat balls, and place on greased baking sheet to rise until doubled in size.
  • Bake in a preheated 400 degrees F (200 degrees C) oven for 12 to 15 minutes.
