BREAKFAST PIZZA RECIPE WITH TOMATOES AND EGGS



Breakfast Pizza Recipe with Tomatoes and Eggs image

Add your favorite breakfast meats or vegetables to this pizza. Crumbled cooked bacon or sausage are excellent.

Number Of Ingredients 9

12 ounces store-bought pizza dough
1 tablespoon olive oil plus more for serving
1 garlic clove, minced
1 teaspoon lemon zest
3/4 cup sliced plum tomatoes
3 ounces crumbled goat cheese
1/2 cup fresh basil leaves, chopped
3 large eggs
Salt and fresh ground black pepper

Steps:

  • Remove the pizza dough from the refrigerator and set aside for about 20 minutes. Place a pizza stone in the oven and heat the oven to 500 degrees F.
  • On a lightly floured countertop, pat the dough into a disc with your fingertips, then shape it into a 12-inch circle. Dust the surface of a pizza peel or large inverted sheet pan with flour and place the shaped dough on it.
  • Brush pizza with olive oil then sprinkle the dough with garlic, lemon zest, and season with salt and pepper. Arrange tomatoes, goat cheese and half of the basil over dough. Crack 3 eggs over the top and season with salt and pepper.
  • Shake the pizza peel or baking sheet slightly to make sure the dough is not sticking. Carefully lift any areas that are and sprinkle a bit more flour underneath, then slide the pizza directly onto the preheated baking stone. Bake for 6 to 10 minutes. When the crust is golden, the cheese is melted and the egg whites are cooked, transfer the pizza to a cutting board.
  • Scatter remaining basil on top and drizzle with a small amount of olive oil. Cut into slices and serve.

This recipe will make two pizzas. I came up with it by accident by throwing a bunch of ingredients together. We make it on the weekends at the lake for breakfast/brunch. You can modify toppings. I usually make one sausage and one bacon. Each pizza will serve 3 to 4 people.

1 pound ground sausage
2 (12 inch) prepared pizza crusts
12 eggs
¾ cup milk
salt and pepper to taste
1 (10.75 ounce) can condensed cream of celery soup
1 (3 ounce) can bacon bits
1 small onion, minced
1 small green bell pepper, chopped
4 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Place pizza crusts upside down on cookie sheets and bake for 5 to 7 minutes. Do not allow to brown.
  • Beat eggs, milk, salt and pepper. Scramble eggs until firm.
  • Remove crusts from oven, turn right side up, spread 1/2 can of cream of celery soup on top of each crust. Spread 1/2 of egg mixture on each crust. Sprinkle bacon bits on one pizza and cooked sausage on the other. Cover each with onions and peppers. Top each pizza with 2 cups of cheese.
  • Bake in preheated oven, for 25 to 30 minutes, until cheese is golden brown.

1 refrigerated pizza dough (12 inch)
3/4 cup CLASSICO Tomato and Basil Pasta Sauce
1/4 tsp. crushed red pepper
4 eggs
1-1/2 cups KRAFT Shredded Pepper Jack Cheese
4 slices cooked OSCAR MAYER Bacon, crumbled
1 Tbsp. chopped fresh parsley

Steps:

  • Heat oven to 400ºF.
  • Pat and stretch dough into 14x6-inch rustic rectangle on baking sheet lined with parchment paper; prick with fork. Mix pasta sauce and crushed pepper; spread onto pizza crust.
  • Slip cracked eggs, 1 at a time, evenly spaced over pizza; top with cheese and bacon.
  • Bake 15 to 18 min. or until whites are set and yolks are cooked to desired doneness. Sprinkle with parsley.

  • Preheat oven and line a rimmed baking sheet with parchment paper drizzled with 1 tbsp olive oil. To learn the temperature to make breakfast pizza with premade crust, consult the directions on the package to find the oven heat setting. For making breakfast pizza with store bought dough, set the oven to 450 degrees. Stretch the fresh dough and put it on the baking sheet. Par-bake the dough for 7 minutes without any toppings.
  • Make the roasted tomatoes. Heat a large pan on the stove on medium heat. Add cherry tomatoes and olive oil. Stir regularly for about three minutes, until cherry tomatoes begin to soften and wrinkle. Add garlic and butter to the pan and reduce the heat to medium-low. Stir roasted cherry tomatoes with garlic for 30-60 seconds and turn off the heat before the garlic burns. Preserve the garlic butter in the pan, and set roasted tomatoes aside.
  • Add the pizza toppings. Using a spatula, spread the garlic butter from the roasted tomatoes pan on to the pizza crust. Add mozzarella cheese, leaving three distinct 3” circles, or wells, for the baked eggs. Distribute roasted tomatoes on top of the mozzarella cheese.
  • One by one, crack each egg in a bowl and transfer carefully, without breaking the yolk, to the wells. Sprinkle salt and pepper on the eggs.
