- In 12-inch nonstick skillet, melt I Can't Believe It's Not Butter Spread over medium-high heat and cook tomatoes and garlic, stirring occasionally, 3 minutes or until tomatoes are tender.

- Cook pasta according to package directions. Meanwhile, in a large skillet, bring the tomatoes to a boil. Cook until most of the liquid is evaporated, about 5 minutes. - Boil the noodles in a pot of water.
- In a medium-sized saucepan, saute the garlic, onions, and cherry tomatoes in the butter on medium heat.
- When the ingredients are sauteed, add the milk, basil, cayenne pepper, and Parmesan cheese.
- Stir the sauce and turn down to low heat. Smash the tomatoes as you stir the sauce to get the juice in the sauce.
- Keep the sauce on low heat, until the noodles are done boiling. If the noodles are done before the sauce, strain them, add them to the sauce, and stir.
- Top with more cheese and cayenne pepper if desired.
- Enjoy!

CREAMY SHRIMP ALFREDO WITH TOMATO AND BASIL

- Heat olive oil in deep 12-inch skillet over medium-high heat and cook onion, celery, red pepper and garlic 5 minutes or until vegetables are tender. Stir in broth and bring to a boil over high heat. Reduce heat to low and simmer 5 minutes. Stir in sauces. Simmer, stirring occasionally, 15 minutes. LIGHTER TOMATO "ALFREDO" PASTA BAKE

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 3-quart saucepan, heat 1 teaspoon of the oil over medium heat. Add onions and 1 teaspoon of the garlic; cook 5 to 6 minutes or until just tender. Transfer to blender. Return saucepan to medium heat; add water and frozen cauliflower. Increase heat to medium-high; heat to boiling. Reduce heat to medium-low; cover and cook 3 to 4 minutes or until tender. Drain and transfer cauliflower to blender; cool 10 minutes. Add whipping cream; cover and blend 60 to 90 seconds or until nearly smooth. Add Parmesan cheese and 1/2 teaspoon of the salt; blend 60 to 90 seconds or until smooth.
- Cook and drain pasta as directed on package. Add to baking dish.
- Meanwhile, in 12-inch nonstick skillet, heat remaining 2 teaspoons oil over medium-high heat. Add mushrooms and remaining 1/4 teaspoon salt. Cut sausage casing, and discard. Crumble sausage into skillet with mushrooms. Cook 8 to 10 minutes, stirring occasionally to break up sausage, until sausage is no longer pink. Stir in bell pepper and remaining 2 teaspoons garlic; cook 1 to 2 minutes or until garlic is fragrant. Stir in tomatoes; heat 3 to 4 minutes or until heated through.
- Add sausage mixture to baking dish; stir to completely combine. Top with mozzarella cheese; carefully pour cauliflower sauce over top. Bake uncovered 30 to 35 minutes or until bubbly on edges.
- Let stand 10 minutes. Top with basil.

- 1. Put up a large pot of water to boil for the pasta. 2. In a small saute pan, add the oil and heat over medium heat. When the oil is warm, add the garlic. Watch the garlic because it will brown very quickly. Once it starts browning, add the tomatoes to the pan. Salt and pepper the tomatoes. Salt brings out the flavor in tomatoes and also helps them start to release their juices. Cook for about a minute or two, then add the wine.
- 3. Once you can no longer smell the wine (this means the alcohol has cooked out), then add the basil and stir into the tomatoes. At this point the tomatoes should be soft. If they are, you want to lightly press down on them, either with your spatula or a potato masher. You don’t want to pulverize them. The point in doing this is to get the juices out of the tomatoes just enough to create a little bit more of a sauce. You don’t want this to be a full on sauce, but you want it to have a little bit of a saucy aspect to it. Let the sauce thicken on low heat as you begin the Alfredo sauce.
- 4. At this point, the pasta water should be boiling. Add the pasta to the water and lots of salt (pasta water should be salty like the ocean – this is the only way to flavor the pasta itself). 5. Add the heavy cream and butter to a medium pot and cook over medium-high heat. Bring to a boil but watch the pot. This mixture boils over very quickly and you’ll be cleaning up a big mess. When it boils, lower the heat and simmer for about a minute or two. Add salt and pepper. You should go light on the salt and heavy on the pepper.
- 6. Now whisk in 6 tablespoons of the cheese. Let it cook for another minute and you are done.7. When the pasta is al dente, drain and be sure to get a lot of the water out. You don’t want a watery Alfredo sauce. Add the pasta back to the pot, sprinkle in the rest of the cheese and mix it up. This will help the sauce adhere to the pasta. Add the Alfredo sauce and mix well. I will usually put the entire pot back on one of the hot ranges of the stove top keeping the heat off. The stove is still warm and mixing it up while its on the hot stove helps the sauce and pasta to come together and not leave you with Alfredo sauce on the bottom of the pot and pasta without sauce on top. Let it sit for a few minutes and give it another good mix. When it all comes together, transfer to a serving dish and top the with tomato mixture. Voila! Serve with crushed red pepper.
