As a full-time teacher, I only have time to cook from scratch a few nights each week. This slow-cooker soup recipe makes a big enough batch to feed my family for two nights. -Julie Kruger, St. Cloud, Minnesota

1 can (46 ounces) V8 juice
2 packages (16 ounces each) frozen mixed vegetables
1 pound ground beef, cooked and drained
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2 teaspoons dried minced onion
Salt and pepper to taste

Steps:

  • In a 5-qt. slow cooker, combine the first 5 ingredients. Cover and cook on high for 4-5 hours or until heated through. Season with salt and pepper.

1 (10 1/2 ounce) can tomato soup
8 ounces tomato sauce
2 cups cooked egg noodles (or rotini)
1 teaspoon parsley flakes
1 teaspoon oregano
1 teaspoon basil
salt & pepper, to taste

Steps:

  • Brown the hamburger with the onion.
  • After the hamburger is cooked, add the rest of the ingredients. Heat until warm enough to eat. If it's too thick, you can add water so that it's the consistency that you like.
  • We like to eat this hotdish on bread, with parmesan cheese sprinkled on top!

1 ½ pounds ground beef
2 (8 ounce) cans tomato sauce, divided
1 large egg
1 teaspoon salt
¼ teaspoon ground black pepper
6 thin slices onion
1 tablespoon olive oil, or as needed
6 thin slices lemon
1 tablespoon Worcestershire sauce
1 tablespoon white sugar
1 teaspoon chili powder
½ teaspoon mustard

Steps:

  • Mix ground beef, 1 can tomato sauce, egg, salt, and pepper in a bowl until combined. Form 6 patties and top each with an onion slice.
  • Heat oil in a large skillet over medium-high heat. Place burgers in the skillet, onion-side down, and brown for 3 to 5 minutes. Turn burgers and drain any grease. Top each burger with a lemon slice.
  • Combine remaining tomato sauce, Worcestershire sauce, sugar, chili powder, and mustard; pour over burgers. Cover and simmer until burgers are cooked through and sauce has thickened, at least 1 hour.

2 tablespoons olive oil
1 cup chopped onion
1 garlic clove, minced
1 lb lean ground beef
1 (28 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1 whole bay leaf
1 -2 cup coarsely cut up mushroom
2 1/2 cups diced carrots
2 1/2 cups diced celery
2 1/2 cups diced green peppers
3 1/2 cups red wine

Steps:

  • Heat oil in a large heavy saucepan; add onion; sauté over low heat, stirring, until tender and golden, about 5 minutes.
  • Add the garlic, sauté 1 minute.
  • Meanwhile, brown the ground beef in a skillet, stirring to crumble meat; drain off fat; add the onion mixture.
  • OPTIONAL: now is when you would add the mushrooms, vegetables or red wine.
  • Sauté until tender or until the wine is reduced by half.
  • Add the tomatoes, tomato sauce and paste, 1 tsp salt, the basil, oregano, pepper and bay leaf.
  • Heat over medium-low heat to simmering.
  • Simmer, uncovered, over low heat, stirring occasionally until sauce is thickened and flavourful, about 1 hour 15 minutes.
