Creamy Tomato Orzo With Orzo image

This recipe brings rich tomato flavors along with a full serving of vegetables. It has been a while since I shared a non-Indian recipe and I hope you will find it as an option for dinner or when you are entertaining a large group.

1 ¼ Orzo pasta
1 can diced tomatoes
1 ½ tsp tomato paste
½ cup cashew cream/ paste
1 tsp Oregon
1 tsp chili flakes
1 tbsp olive oil
1 cup chopped kale leaves
Salt to taste
3 garlic cloves
1 medium size onion

Steps:

  • In a large pan, boil the Orzo (pasta) in water and set it aside.
  • Meanwhile, place a pan on medium heat and drizzle few tablespoons of oil.
  • When oil heats up, add chopped kale and saute until they are crispy. Place them aside.
  • In the same pan, saute chopped garlic until they turn golden.
  • Add chopped onion and saute until they turn translucent.
  • Add oregano and chili flakes cook for about 30 seconds.
  • Add the diced tomatoes and cook for about a minute.
  • Add tomato paste and cashew paste or cream. Cook for 4 minutes.
  • Add salt and the cooked orzo. Mix evenly.
  • Turn the heat off and add the Kale leaves
  • Creamy Tomato-Kale Orzo is ready! Serve hot paired with breadsticks! Enjoy!

2 tablespoons olive oil
1 medium onion, chopped
1-1/4 cups uncooked whole wheat orzo pasta
2 cans (14-1/2 ounces each) whole tomatoes, undrained, coarsely chopped
3 cups reduced-sodium chicken broth
2 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
Optional: Crumbled feta cheese and minced fresh basil

Steps:

  • In large saucepan, heat oil over medium heat; saute onion until tender, 3-5 minutes. Add orzo; cook and stir until lightly toasted., Stir in tomatoes, broth and seasonings; bring to a boil. Reduce heat; simmer, covered, until orzo is tender, 15-20 minutes, stirring occasionally. If desired, top with feta and basil. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

1 cup orzo pasta
1 cup carrot, sliced
1 cup sweet onion, chopped
1 cup celery, sliced
2 roma tomatoes, cubed
4 cups vegetable broth
1 tablespoon sugar
3 sprigs thyme
2 bay leaves
2 tablespoons sweet basil, chopped
1/4 teaspoon white pepper
1/2 teaspoon ginger
1/2 teaspoon kosher salt
2 tablespoons olive oil

Steps:

  • Saute onion, celery and carrots with a small amount of oil over medium heat. Cook until onions are slightly transparent.
  • Remove main and axial ribs and cut kale into 1 inch strips. Stir in coating entirely and saute until kale begins to relax.
  • Add sugar and tomatoes and cook until all liquid is gone stirring constantly.
  • Add vegetable broth and bay leaf and bring to a low boil.
  • Add orzo and remaining spices and cook over medium low heat for 15 minutes.

2 (14.5 ounce) cans fire-roasted diced tomatoes with juice
2 (10.75 ounce) cans tomato soup
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can cannellini beans, rinsed and drained
5 teaspoons chicken bouillon powder
1 pinch crushed red pepper flakes, or to taste
1 bunch kale, chopped

Steps:

  • Bring beef stock to a boil in a stockpot; add orzo and cook for 5 minutes. 2 tbsp olive oil
1 onion, chopped
2 celery sticks, chopped
2 garlic cloves, crushed
1 tbsp tomato purée
400g can chopped tomatoes
400g can chickpeas
150g orzo pasta
700ml vegetable stock
2 tbsp basil pesto
crusty bread, to serve

Steps:

  • Heat 1 tbsp olive oil in a large saucepan. Add the onion and celery and fry for 10-15 mins, or until starting to soften, then add the garlic and cook for 1 min more. Stir in all the other ingredients, except for the pesto and remaining oil, and bring to the boil.
  • Reduce the heat and leave to simmer for 6-8 mins, or until the orzo is tender. Season to taste, then ladle into bowls.
  • Stir the remaining oil with the pesto, then drizzle over the soup. Serve with chunks of crusty bread.

1 tablespoon olive oil
½ onion, finely chopped
2 cloves garlic, minced
3 (14.5 ounce) cans diced tomatoes
1 (14.5 ounce) can fat-free chicken broth
1 tablespoon dried basil
1 tablespoon dried oregano
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
5 ounces crumbled Gorgonzola cheese
1 cup cooked orzo
⅓ cup sour cream

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add onion and garlic and cook until tender, 5 to 7 minutes. Add diced tomatoes, chicken broth, basil, oregano, cayenne, salt, and pepper. Reduce heat to low and let simmer for 20 minutes.

32 ounces vegetable stock

cracked black pepper
1 1/4 cups orzo pasta
1/2 cup reduced fat sour cream
2 tablespoons chopped fresh basil

Steps:

  • Add onions, celery, and carrots and olive oil to large stockpot on medium-high. Cook, stirring, 6-7 minute Add chopped garlic. Cook 2 min, until vegetables are tender.
  • Add all tomatoes; simmer about 10 minute Add stock; return to simmer. Season to taste with salt and pepper.
  • Add pasta. Simmer 8-10 min, stirring often, until pasta is firm but tender. Remove from heat.
  • Add sour cream to soup; fold in basil. Ladle into warmed bowls to serve.
