Fresh Tomato Pesto Pasta Salad is a 5 ingredient cold side dish recipe perfect for your next picnic or grilled dinner.

Ingredients

12 oz. box bowtie pasta
3 Tbsp olive oil
1 c. prepared pestoge
1 pint cherry tomatoes, halved
2 oz. pine nuts

Steps:

Cook the pasta al dente and rinse under cold water to stop the cooking process. Rinse and toss the pasta with the olive oil.
While the pasta is cooking, toast the pine nuts in a small skillet over high heat for 2-3 minutes, or until golden.
Toss everything in a large bowl until well combined. Chill before serving.

Sometimes simple and fresh is best! That is for sure the face with this recipe that I put together while creating recipes for my vegetarian food blog - http://weekendcarnivore.com . For the pesto, I used Kittencal's recipe #144195 which really is great stuff! This is enough for one but can be very easily multiplied.

1 medium tomatoes, sliced fairly thickly
1 tablespoon pesto sauce, fresh is best
1/2 teaspoon pine nuts, toasted

Steps:

Lay the tomato slices out on a plate with the ends just overlapping.
Drizzle the fresh pesto liberally over the tomato slices.
Scatter with your toasted pine nuts and enjoy.

Make the pesto pasta salad dressing by whisking the pesto and champagne vinegar together in a bowl. Set aside.
When pasta is done cooking, add pasta and vegetables to a large bowl. Add pesto pasta salad dressing and mix together. Top with freshly grated parmesan cheese, basil, and a fresh crack of pepper. Store in the refrigerator for 2-3 days.
