This quick and easy tomato salad recipe is the best way to highlight the natural flavor and sweetness of fresh summer tomatoes!

4 cups halved cherry tomatoes (or chopped larger tomatoes)
¼ cup finely diced red onion
2 tablespoons snipped fresh basil (or more to taste)
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Kosher salt and freshly-ground black pepper, to taste

Steps:

  • Combine tomatoes, onion and basil in a bowl.
  • In a separate bowl or jar, whisk or shake together olive oil and vinegar. Pour over tomatoes and toss to coat. Season with salt and pepper, to taste.
  • Serve immediately, or allow the salad to marinate for about 30 minutes - 1 hour at room temperature or in the fridge (if you prefer a cold salad).

It doesn't take much to create a delicious tomato salad. Here we pair juicy grape tomatoes with sliced onion, fresh basil and balsamic vinegar for a flavorful side dish. Once you've mastered this basic tomato salad recipe, you can try adding in extra ingredients to amp up the flavor even more. Think olives, feta cheese, beans or other herbs. While you can certainly eat this tasty salad right away, the flavor gets even more delicious if you let it sit in the fridge overnight.

  • Whisk vinegar, oil, salt and pepper together in a large bowl. Add tomatoes, onion and basil (or parsley); stir to combine. Refrigerate, stirring once or twice, for at least 1 hour.

1 small cucumber - peeled, quartered lengthwise, and chopped
3 green onions, chopped
¼ cup fresh basil leaves, cut into thin strips
3 tablespoons olive oil

salt and freshly ground black pepper to taste

Steps:

  • In a large bowl, toss together the tomatoes, cucumber, green onions, basil, olive oil, balsamic vinegar, and feta cheese. Season with salt and pepper.

Maui Onion Tomato Salad with Pancetta and Basil Balsamic Vinaigrette image

1/4 cup extra virgin olive oil
1 ounce pancetta, diced
1/4 teaspoon finely minced garlic
1/4 teaspoon finely minced shallot
1/4 cup balsamic vinegar
6 large basil leaves, julienned
3 Maui onions, julienned
6 large rip Kula beefsteak tomatoes
6 cups washed and torn baby mixed greens
6 sprigs fresh basil, for garnish

Steps:

  • Make vinaigrette: heat the olive oil in a large saute pan and saute the pancetta, garlic and shallot over medium-high heat for 1 minute. Remove from the heat and stir in the vinegar and half of the basil. Add the onions and return to the heat for about 30 seconds. Remove from the heat and stir in the remaining basil.
  • Core the tomatoes; cut a slice off the tops and bottoms and discard. Cut each tomato into 3 thick slices. Try and keep the slices in order!
  • To assemble: place a bottom tomato slice on each serving plate. Place a layer of the greens on top of the tomato, using up about half the greens. Place a layer of the onions and a little of the vinaigrette over the greens, and then the center tomato slice. Add another layer of the greens (use the rest), onions (save some for garnish) and top with the last slice of tomato. Garnish with onion and a basil sprig.

If you love tomatoes like I do, then you may enjoy this recipe. It's a quick side dish/plate filler that doesn't have too many ingredients, it's healthy and tastes nice. Original recipe calls for Roma and Plum tomatoes but I use what is in season. This recipe comes from a book called "Purely Golden Door" by The Golden Door Health Retreats.

6 roma tomatoes or 6 plum tomatoes, halved
1 tablespoon balsamic vinegar
2 tablespoons fresh basil, chopped
salt (to taste)
black pepper, freshly cracked (to taste)

Steps:

  • Preheat the oven at 180oC/350oF/Gas 4.
  • Place tomatoes on oven tray with the cut side facing down.
  • Dash over the balsamic vinegar, basil, salt, black pepper to taste.
  • Bake for about 15 minutes for semi firm (still holding shape) and 30 minutes for well done (extra soft).
