This is the most successful and versatile quick bread recipe I've found! You can also use chunky applesauce or a 15 ounce can of pumpkin for wonderful variations.

½ cup margarine, softened
1 cup white sugar
2 eggs
1 ½ cups mashed banana
2 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.
  • Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.
  • Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

Simply the perfect Banana Bread recipe. Moist, quick and easy to make with a soft, tender crumb. Truly the best Banana Bread I've ever had and our favorite way to use up ripe bananas!

2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 to 4 ripe bananas (mashed should be about 1 ¼ cups (anywhere from 1 to 1 ½ cups will work))
3/4 cup granulated sugar (can use a combination of brown sugar and granulated sugar (see post))
2 large eggs
6 tablespoons unsalted butter (melted and cooled)
1/3 cup sour cream (plain Greek yogurt can be used instead)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Spray with nonstick cooking spray or grease and flour the bottom and sides of an 8½ x 4½ inch loaf pan. (Can also butter pan and sprinkle with sugar or a combination of sugar and cinnamon.) Set aside.
  • Whisk together flour, baking soda and salt in a medium bowl.
  • Mash bananas in a large bowl using a potato masher, fork, or a mixer. There can be some small chunks remaining, it doesn't have to be completely smooth.
  • Whisk in sugar, eggs, melted butter, sour cream and vanilla extract.
  • Add flour mixture and stir in gently just until combined. Transfer to the prepared loaf pan and use the spatula to smooth the top.
  • Bake for 50 to 60 minutes or until an inserted toothpick comes out clean or with a few moist crumbs. If bread starts to get too brown on top, tent with foil for the last 10 minutes.
  • Let bread cool on cooling rack in loaf pan for 15 to 20 minutes. Invert the loaf pan and carefully remove banana bread. Let bread continue to cool on the rack for another hour or more. Slice and serve.

My Favorite Banana Bread image

With its super-moist texture, buttery banana and brown sugar flavors, and incredibly soft crumb, this is the best ever banana bread recipe. You'll need 4 ripe bananas to begin.

2 cups (250g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup (1 stick or 115g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light or dark brown sugar
2 large eggs, at room temperature
1/3 cup (80g) plain yogurt or sour cream, at room temperature (I use Greek yogurt)
2 cups (460g) mashed bananas (about 4 large ripe bananas)
1 teaspoon pure vanilla extract
optional: 3/4 cup (100g) chopped pecans or walnuts

Steps:

  • Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Grease a 9×5-inch loaf pan or coat with nonstick spray. Set aside.
  • Whisk the flour, baking soda, salt, and cinnamon together in a large bowl.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and brown sugar together on high speed until smooth and creamy, about 2 minutes. On medium speed, add the eggs one at a time, beating well after each addition. Beat in the yogurt, mashed bananas, and vanilla extract on medium speed until combined. With the mixer running on low speed, slowly beat the dry ingredients into the wet ingredients until no flour pockets remain. Do not overmix. Fold in the nuts, if using.
  • Spoon the batter into the prepared baking pan and bake for 60-65 minutes. Loosely cover the bread with aluminum foil after 30 minutes to help prevent the top and sides from getting too brown. A toothpick inserted in the center of the loaf will come out clean when the bread is done. Remove from the oven and allow the bread to cool completely in the pan set on a wire rack.
  • Cover and store banana bread at room temperature for 2 days or in the refrigerator for up to 1 week. Banana bread tastes best on day 2 after the flavors have settled together. See post above for freezing instructions.

Steps:

  • Preheat oven to 350℉ (180℃). Beat bananas, sugar and eggs together until light. Stir in milk. Add sifted dry ingredients and mix thoroughly. Stir in melted butter, vanilla, and nuts or raisins or chocolate chips if using. Pour into 1 standard or 2 smaller baking pans and bake one hour or until done. Baking time may need to be reduced for smaller pans. Done when toothpick tests dry. Cool thoroughly before slicing. Freezes well.

Steps:

  • Preheat oven to 325°F (170°C).
  • Mash bananas, then add applesauce or Greek yogurt, honey, egg, vanilla extract, and almond milk. Whisk until well combined.
  • In another bowl, mix whole wheat flour, baking soda, and salt together.
  • Add the dry ingredients to the wet ingredients and stir well.
  • Spray loaf pan with cooking spray or wipe down with oil. Pour mix into a loaf pan.
  • Bake 50-55 minutes.
  • Enjoy!

My husband is a great fan of banana bread, so I took a couple of his "sort of" favorites and came up with this one, which he raves about. You may use all vanilla extract if you don't have, or can't find the Vanilla Nut extract. Look for it if you can, it's a really nice flavoring.

1 cup all-purpose flour
3/4 cup whole wheat flour (can use all white)
1 teaspoon cinnamon
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
3 large very ripe bananas, mashed
1/2 cup milk
1 teaspoon vanilla
1/2 teaspoon vanilla nut extract
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 cup nuts (optional)

Steps:

  • Preheat oven to 350°F.
  • Butter and flour(or line with parchment paper)loaf pan.
  • Whisk together dry ingredients in small bowl. Mix bananas, milk, vanilla and vanilla nut extract in another bowl.
  • Beat butter and sugar in mixing bowl until light and fluffy. Add one egg at a time, mixing until incorporated. Then alternate mixing in dry ingredients in two batches starting and ending with dry ingredients.
  • Stir in nuts, if using. Pour into prepared pan.
  • Bake for approximately 1 hour and 10 minutes, (checking at 1 hour) until toothpick inserted comes out clean.
