There is French toast, and then there are torrijas, the Spanish version. The origins of both are undoubtedly the same: yet another way to make good use of bread that's no longer fresh. Though torrijas, like French toast, can be served at breakfast, they can also be a knockout dessert.

Olive oil as needed
2 cups milk
Pinch salt
1/2 cup sugar
2 eggs
2 large, very thick slices eggy bread, like brioche or challah, preferably stale, cut in half, or 4 smaller slices
Cinnamon sugar
Warmed maple syrup or honey, optional

Steps:

  • Pour olive oil to a depth of 1/2 inch in a broad, deep skillet over medium-high heat; bring it to a temperature of about 350 degrees. When ready, a small cube of bread dropped into oil will sink to bottom, then immediately rise to top.
  • Meanwhile, whisk together the milk, salt and sugar in a broad bowl. In a separate bowl, beat eggs. When oil is ready, soak a piece of bread in milk, then dip in egg. Shake off excess liquid, then transfer to oil. Stand back, as it will spatter. Repeat with remaining bread.
  • Cook about a minute on each side, turning carefully; bread should be very crisp on edges. When done, transfer to a plate, sprinkle with cinnamon sugar and serve immediately, with honey or maple syrup if you like.

1-liter milk
Bread from the previous day
3 to 4 eggs
Extra Virgin Olive Oil
Lemon and orange peel
Sugar
Cinnamon (powder)
1 cinnamon stick

Steps:

  • 1. Cut the bread in slices Cut the bread in slices of around one inch or 2.5 centimeters. I recommended using bread from the previous day or even bread that is two or three days old. If the bread is hard, it can soak up more milk. 2. Cut off a few small pieces of fresh lemon and orange peel. 3. Let the bread soak in milkMix the milk with the cinnamon stick and the orange & lemon peel. Afterward soak the slices of bread in the milk and let it rest for around four hours. The longer you soak the bread in the milk the juicier the Torrijas will get. 4. Dip the bread in the eggAfter four hours, take the pieces of bread out of the milk and let them drain for a few minutes. Meanwhile, beat the eggs in a shallow bowl. In the next step dip the bread slices with both sides one by one in the egg. 5. Deep fry the soaked bread slicesHeat up around 1 inch of olive oil in a pan and carefully transfer the soaked bread slices into the oil. I recommend using a spatula and a fork as the bread will be very soft and can break easily. Fry the slices for around two to three minutes on each side until they are brown. 6. Put the bread on a paper towelOnce the bread is done take it out and put it for a few minutes on a paper towel. 7. Dunk the bread in a sugar & cinnamon mixture Mix sugar and cinnamon on a deep plate and dunk the bread slices into it. 8. Enjoy your home-made Spanish Torrijas!

Torrijas are basically Spanish 'French toast', or eggy bread in English! Serve with honey and yogurt for breakfast, or fruit and ice cream for dessert

2 medium eggs , plus 1 egg yolk
2 tbsp double cream
2 tbsp whole milk
3 tsp golden caster sugar
3 tbsp sweet sherry
4 thick slices of soft white bread or brioche
olive oil , for frying
icing sugar , for dusting
crème fraîche or Greek yogurt, to serve

Steps:

  • In a wide, shallow bowl, beat the eggs with the cream, milk, golden caster sugar and sherry. Cut each slice of bread in two and dip them into the egg mix, turning to make sure they get a good coating on either side. Soak bread in egg mixture for 10 mins to absorb the liquid (carefully turn them over from time to time and make sure they don't get too soggy).
  • Heat 1½ tbsp olive oil in a large frying pan and cook the bread for about 3 mins on each side until dark golden and crisp on the edge. Keep the slices warm in a low oven as you cook the rest.
  • Divide the torrijas between plates and dust with the icing sugar. Serve with crème fraîche or Greek yogurt on the side.

Torrijas are a delicious Spanish style French toast that is typical around Easter. Here's my favorite torrijas recipe!

4 large eggs
1 liter (about a quart) of whole milk
1 cup of sugar (200g)
2 teaspoons of cinnamon
3 tablespoons of honey
Extra Virgin Olive Oil ((good quality))
1 strip of lemon peel
1 strip orange peel
1 teaspoon of cardamom seeds ((optional))
1 star anise ((optional))
A thick bar of slightly stale French bread

Steps:

  • Bring the milk, ½ cup of sugar, lemon and orange peel, and spices (cardamom seeds and star anise) to a slow simmer.
  • Cut the bread in thick slices.
  • When the milk mixture has been simmering for about 15 minutes, turn off the heat and soak the slices of bread in this mixture. Be careful not to completely wet them to the point that they will break apart, but try to get them to absorb as much milk as possible.
  • Let the slices of wet bread rest and cool (some liquid may be lost).
  • Beat the eggs in a shallow bowl and dip the bread slices in the egg mixture. In the meantime, heat up about ½ an inch of the olive oil in a deep, heavy pan on medium-high heat.
  • Fry the slices two by two, flipping them halfway so that both sides are nice and crisp.
  • Let the torrijas rest on paper towels to absorb excess oil. In another bowl mix the remaining sugar (1/2 cup) with the cinnamon.
  • Cover the slices in the cinnamon sugar mixture and reserve.
  • Finally, make the syrup. Take the remaining cinnamon and sugar from coating the torrijas and add it to a medium-sized pot. Add a bit more sugar to completely cover the bottom of the pot if necessary.
  • Add 2 cups of warm water to the sugar and bring it to a boil.
  • Add the honey (you can add more or less depending on preference).
  • Allow the syrup to simmer for about 30 minutes until it reduces to a syrup-like consistency. It won't be a very thick syrup, but it shouldn't be too watery.
  • Take the syrup off of the heat and after about 15 minutes spoon it over the French toast. The torrijas should be completely soaked in syrup. Allow them to completely cool before putting them into the refrigerator.
  • Refrigerate the torrijas for at least 4 hours, but preferably overnight.
  • Enjoy within two or three days for best quality! (I doubt they'll last that long anyway!)

Torrejas or Torrijas, the Spanish version of French toast, are traditional Easter fare in Spain. It is said the dish was originally conceived in the South of Spain as a way to use up left over bread. Here, the stale bread seeps up sweetened, cinnamon-spiked milk. The bread is then coated in beaten eggs, fried in olive oil, and dipped in cinnamon sugar. The results: a delicious breakfast or dessert with a sweet, crunchy exterior and a creamy, pudding like middle.

2 cans (12 oz. each) GOYA® Evaporated Milk
1¼ cups sugar, divided
1 stick GOYA® Cinnamon Stick
1 day-old plain round loaf white bread (10-12 oz.), like Italian, French or Cuban bread)
3 large eggs
⅓ cup GOYA® Extra Virgin Olive Oil
1 tsp. GOYA® Ground Cinnamon

Steps:

  • Step 1 In medium saucepan over medium heat, add evaporated milk, 2 cups water, ¼ cup sugar and cinnamon stick. Bring milk mixture to simmer, stirring occasionally to dissolve sugar. Remove pot from heat; let seep 5 minutes. Remove and discard cinnamon stick. Step 2 Meanwhile, cut bread into ¾"-1" slices. In large casserole dish, arrange bread slices in single layer. Pour half of hot milk mixture over bread slices; let sit until bread absorbs milk, about 10 minutes. Using spatula, gently flip bread slices. Pour remaining milk over bread slices; let sit until bread is completely saturated, about 20 minutes more. Step 3 Meanwhile, in medium dish, beat eggs; set aside. In separate medium dish, using fork, stir together remaining sugar and ground cinnamon until well combined; set aside. Step 4 Heat oil in large, non-stick skillet or griddle over medium-high heat. Using spatula, gently transfer bread to egg mixture (bread will be very soft); flip to coat completely. Carefully lift bread slices out of egg mixture, letting excess egg drip back into dish. Cook bread slices in batches, flipping once, until puffed and golden brown on both sides, about 6 minutes. Step 5 Immediately transfer bread slices, one at a time, to dish with cinnamon sugar. Flip to coat. Serve warm.

6 slices bread, French cut into 1-inch slices
3/4 cup milk
3 eggs
4 tablespoons butter
1/2 cup water
1/4 cup honey
1/2 cup sugar
1 lemon, peel and juice
1 cinnamon stick
1 orange peel

Steps:

  • Get syrup started by boiling water, honey, sugar, lemon peel and juice, cinnamon stick, and orange peel together for a couple minutes.
  • Let steep; remove peels and cinnamon stick.
  • Get pan hot with a light coating of butter.
  • Dip bread in milk; soak for a minute but so it does not break.
  • Dip in egg.
  • Put in pan to cook until lightly browned.
  • They serve this warm or cold and the syrup is soaked in, or just served with honey or plain.
