MEXICAN MILANESE STYLE SANDWICHES ("TORTAS")



Mexican Milanese Style Sandwiches (

Four 4-ounce chicken, beef or pork cutlets
Salt and freshly ground black pepper
1 cup all-purpose flour, for dredging
1 cup plain bread crumbs, for dredging
2 eggs, beaten
Vegetable oil, for shallow frying
4 Bolillo or Telera rolls or French bread
Chipotle Mayonnaise, recipe follows
4 lettuce leaves optional
Eight 1/4-inch slices tomato
Twelve 1/4-inch slices avocado
12 thin slices white onion
12 pickled jalapeno slices or 4 canned chipotles in adobo
8 lime wedges, for garnish
1 canned chipotle chile in adobo sauce or 1/2 teaspoon hot sauce
1 teaspoon fresh lime juice
1/4 cup mayonnaise
Salt and freshly ground black pepper

Steps:

  • Season the cutlets with salt and pepper, to taste. Put the flour in a dinner plate and season with salt and pepper. Put the bread crumbs in a second plate and the beaten eggs in a shallow bowl. Dip the cutlets into the flour, then the eggs and finally into the bread crumbs, pressing down on both sides so that the bread crumbs adhere to the meat.
  • Heat 1/2-inch oil in a large skillet to 350 degrees F. Pan-fry the cutlets in batches until golden, about 2 to 3 minutes per side depending on the thickness. Set aside to drain on paper towels.
  • To assemble the sandwiches, halve the rolls horizontally. Pull out the soft center of the slices and discard. Spread each roll evenly with the Chipotle Mayonnaise. Put the cutlets on the bottom halves of the rolls and top with lettuce, tomato, avocado, onion and jalapeno. Arrange the sandwiches on serving plates and garnish with lime wedges.
  • In a small bowl mash together the chipotle chile, lime juice and mayonnaise. Season with salt and pepper, to taste.

8 rebanadas de tocino (tocineta) de corte central OSCAR MAYER Center Cut Bacon
4 pechugas de pollo deshuesadas y sin pellejo pequeñas (1 lb)
4 rebanadas de KRAFT Singles, cortadas diagonalmente por la mitad
1 baguette (barra de pan francés) (12 oz), con sus puntas recortadas, cortada en 4 pedazos
1/4 taza de mayonesa KRAFT Real Mayo Mayonnaise
4 hojas de lechuga verde rizada
8 rebanadas de tomate (jitomate)
1/2 taza de salsa para asar original KRAFT Original Barbecue Sauce

Steps:

  • Cocina el tocino en una sartén grande hasta que quede crujiente. Retíralo de la sartén y reserva en la sartén 1 cda. de la grasa. Escurre el tocino en toallas de papel.
  • Agrega las pechugas a la grasa que reservaste en la sartén; cocínalas de 5 a 6 min. por lado o hasta que se cueza (temperatura interna de 165°F). Ponles los Singles; tápalas. Retíralas del fuego. Déjalas reposar 1 min. o hasta que se derritan los Singles.
  • Úntales la mayonesa a los pedazos de baguette; ponles las pechugas, el tocino, la lechuga y los tomates. Sirve los sándwiches con la salsa para asar.

½ pound skinless, boneless chicken breast
1 ½ tablespoons cornstarch
1 egg
⅓ cup bread crumbs
2 tablespoons chopped fresh cilantro
1 teaspoon ground chipotle pepper
1 teaspoon dried Mexican oregano
1 teaspoon ground cumin
¼ teaspoon coarsely ground black pepper
2 bolillo rolls, sliced in half lengthwise
3 tablespoons mayonnaise
1 tablespoon hot sauce (such as Valentina®)
2 tablespoons sunflower seed oil
½ avocado, sliced
3 slices tomato
2 lettuce leaves
1 tablespoon pickled carrots
1 tablespoon pickled jalapeno peppers

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C).
  • Seal chicken breast in a resealable zip-top plastic bag. Pound flat to 1/4-inch thickness. Add cornstarch and shake to coat.
  • Whisk egg in a shallow bowl. Dredge the chicken breast through the egg; leave it in the bowl. Add bread crumbs, cilantro, chipotle, oregano, cumin, and pepper to the bag; shake well. Lift chicken from the bowl, letting any excess egg drip off. Add to the bread crumb mixture. Shake and press the seasoned bread crumbs over the chicken breast.
  • Place bolillo buns in the preheated oven until warmed through and toasted, about 12 minutes.
  • Meanwhile, mix mayonnaise and hot sauce together in a small mixing bowl.
  • Heat oil in a skillet over medium heat. Cook chicken until browned, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cut the chicken in half lengthwise.
  • Assemble the sandwiches. Spread the spicy mayonnaise over both sides of the rolls. Add equal amounts of avocado, tomato, lettuce, carrots, and jalapenos to 2 halves. Add chicken and the tops of the rolls. Serve with the remaining spicy mayonnaise for dipping.

2 poblano peppers
1 tablespoon vegetable oil
2 boneless, skinless chicken breast halves, halved horizontally
Coarse salt and freshly ground pepper
1/2 white onion, sliced
2 cloves garlic, minced
1 teaspoon ground cumin
4 ounces white cheddar cheese, shredded (about 1 cup)
4 ounces Monterey Jack cheese, shredded (about 1 cup)
4 crusty white sandwich rolls, such as Kaiser rolls, split and top half hollowed out
Carrot, Jicama, and Red Cabbage Slaw
Mexican crema, for serving
Plantain Chips, for serving

Steps:

  • Preheat broiler.
  • Roast peppers directly over a low gas flame or under the broiler, turning frequently with tongs, until blackened on all sides. Place in a bowl; cover tightly with plastic wrap. Let cool. Peel off charred skins; discard seeds and stems. Thinly slice crosswise and set aside.
  • Heat oil in a large cast-iron skillet over medium-high heat. Season chicken with salt and pepper and cook, turning once, until browned, about 2 minutes per side. Remove chicken from skillet and transfer to a rimmed baking sheet. Add sliced poblanos, onion, garlic, and cumin to skillet; season with a pinch of salt. Cook, stirring, until onion is soft and translucent. Top chicken with poblano mixture and sprinkle with cheeses. Place under broiler; broil until cheese is melted and bubbly, about 2 minutes.
  • To assemble, place chicken on bottom halves of rolls; top with crema and slaw. Sandwich with top halves of rolls; serve.

16 cloves garlic, minced
2 tablespoons minced fresh oregano
2 teaspoons salt
2 teaspoons ground black pepper
9 pounds boneless pork butt
4 dried chipotle chili peppers
6 tablespoons vegetable oil
8 cloves garlic, minced
4 onions, chopped
20 Roma tomatoes, chopped
1 cup water
5 teaspoons minced fresh oregano
¼ teaspoon white sugar
salt, to taste
12 Mexican bolillo rolls, lightly toasted, cut in half lengthwise
2 pickled jalapeno peppers, sliced

Steps:

  • Preheat an oven to 475 degrees F (245 degrees C).
  • Mix the 16 cloves of minced garlic, 2 tablespoons of minced oregano, 2 teaspoons of salt, and pepper in a bowl. Rub garlic mixture over the pork butt, and place pork in a shallow roasting pan.
  • Roast in the preheated oven for 20 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Continue roasting until pork is tender and no longer pink in the center, about 2 hours and 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Cover the meat with two layers of aluminum foil, and allow to rest in a warm area for 20 minutes before rough chopping or shredding it. Reserve pan drippings.
  • Place the chipotle peppers in a bowl, and cover with hot water. Allow peppers to soak until softened, about 3 minutes; drain. Set aside. Heat the vegetable oil in a skillet over medium heat. Stir in 8 cloves of minced garlic and the chopped onions; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the Roma tomatoes, 1 cup of water, chipotle chili peppers, 5 teaspoons of oregano, sugar, and salt to taste. Add the reserved pan drippings. Simmer, uncovered, over low heat for 15 to 20 minutes, stirring frequently.
  • Pour the chipotle sauce into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the sauce moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the sauce right in the skillet. Strain the sauce through a sieve.
  • To serve: Hollow out the bottom half of each bolillo to make a shallow bowl for the chopped pork. Scoop about 2 tablespoons of the chipotle sauce over the bottom of each roll, then arrange the chopped pork over the sauce. Top each sandwich with a couple slices of pickled jalapeno, followed by the top half of the roll. Pour about 1/4 cup of additional chipotle sauce over the entire sandwich.
