Weeknight Tortellini With Arugula & Crispy Prosciutto image

Mmmm! Is this good! It tastes very gourmet without much work. I got this in an e-mail recipe exchange (similar to a chain letter) where each person shares one of their all-time recipes! Jenny who sent this to me said she adapted it from a recipe in Cottage Living Magazine.

Time 22m

Yield 4 serving(s)

Number Of Ingredients 9

4 tablespoons extra virgin olive oil
1/8 lb prosciutto, thinly sliced and cut into strips
1 small onion, minced (about 1/2 cup)
1/2 cup sun-dried tomato packed in oil, drained and sliced
2 garlic cloves, minced
2 tablespoons fresh sage or 2 tablespoons fresh rosemary sprigs, minced
1/8 teaspoon red pepper flakes
1/4 lb arugula (about 2 cups) or 1/4 lb baby spinach leaves, rinsed and dried (about 2 cups)

  • Combine the ricotta, Parmesan and Large eggs using a wire whip to fully mix together. Add in the basil, parsley and well washed arugula to the cheese by folding with a spatula. Mix in the prosciutto and other seasonings and chill for 20 min.
  • Cut the pasta sheets into 1 1/2-inch wide strips. Cover with a cotton towel. Cut the strips into squares 1 1/2- by 1 1/2-inches. These are basic tortellini before filling and folding. It is necessary to work quickly in order to prevent the pasta from drying out. The moistness of the fresh dough is necessary to help the dough seal itself closed.
  • Place 1/4 to 1/2 tsp. of the filling in each square. Fold the square in half to create a triangle, encasing the filling. Press to seal the edges. Water can be used to help seal edges if they are drying too quickly. Fold the two opposite points toward each other and healthy pinch closed to create the final seal. This is the basic tortellini shape and should resemble a bishops cap. Continue till all of the pasta has been filled.
  • Cook in boiling salted water for 4 to 5 min or possibly till the tortellini float to the surface. Drain tortellini and serve with a Basic Tomato Sauce.

  • With the motor running, drop garlic through the feed tube of a food processor; process until minced. Turn it off and add arugula, cheese, oil, 1/4 cup pine nuts, lemon zest and salt. Process, scraping down the sides as necessary, until the mixture is fairly smooth; leave the pesto in the food processor while you cook the tortellini.
  • Cook tortellini in the boiling water until just tender, 6 to 8 minutes or according to package directions. Place broccoli in a colander and set it in the sink. Reserve 1/2 cup of the pasta-cooking liquid, then pour the tortellini and the rest of the cooking liquid over the broccoli in the colander. (Pouring the hot pasta and cooking liquid over the broccoli "flash-cooks" it, leaving it bright green and tender-crisp.)
  • Add the reserved 1/2 cup cooking liquid to the pesto in the food processor; pulse to combine. Transfer the tortellini and broccoli to a large bowl. Toss with the pesto. Serve sprinkled with the remaining 2 tablespoons pine nuts.
