TORTILLA, BEAN AND CHEESE CASSEROLE ("ENFRIJOLADAS")



Tortilla, Bean and Cheese Casserole (

Number Of Ingredients 13

4 cups cooked pinto beans, (Frijoles De La Olla, recipe follows) drained
3 cups chicken broth
1 tablespoon olive oil
3/4 cup chopped onion
1 plum tomato, roughly chopped
1 medium serrano chile, seeded and minced
2 garlic cloves, minced
1/2 teaspoon dried oregano
Salt and freshly ground black pepper
8 corn tortillas
2 cups shredded Manchego, Swiss or Monterrey Jack cheese
Mexican crema or regular sour cream, for drizzling
2 thin slices red onion, separated into rings

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the drained beans and chicken broth in a large bowl.
  • In a saute pan, heat the olive oil over medium-high heat. Add the onion, tomato, chile, and garlic. Saute until the onion is soft, about 5 minutes. Rub the oregano, between palms of your hands and sprinkle over the beans. Add salt and pepper, to taste. Add the beans and broth to the pan and simmer for 10 minutes. Cool the beans for about 5 minutes before putting them in the blender. Carefully, pour the mixture into a blender and puree. Return the pureed mixture to the pan and gently reheat over medium-low heat, stirring frequently.
  • Using tongs, pass the tortillas 1 by 1 through the refried bean sauce until they are somewhat softened and coated on both sides with the sauce. Set aside on a plate. Fill each tortilla with 1/4 cup of shredded cheese. Fold in half and arrange them, overlapping, in a 9 by 13-inch baking dish. Top with an additional 1 to 1 1/2 cups of the bean sauce, just enough to cover the beans but allow the edges of the folded tortillas to show. Bake until cheese is melted about 10 to 15 minutes.
  • To serve, drizzle with Mexican sour cream lengthwise in a 2-inch thick strip down the center of the dish. Top with 8 overlapping red onion rings.

85g cheddar , grated
4 sundried or SunBlush tomatoes or 1 roasted red pepper from a jar
1 tbsp jalapeno chillies from a jar, drained and chopped
handful coriander , chopped

Steps:

  • Lay 2 tortillas side-by-side on a grill pan. Scatter over all of the ingredients, then top with remaining tortillas. Cook under a medium grill for 3 mins until slightly crisp and golden. Turn, then cook the other side for 3 mins until the cheese has melted. Cut into wedges to serve. Great with guacamole or salsa.

1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 cup chunky salsa
1 ½ cups shredded Cheddar cheese
10 (10 inch) flour tortillas

Steps:

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
  • To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

These parcels are a great snack, picnic food or starter. I normally serve them with home-made salsa or a spicy chutney and a salad of mixed greens. I've tried them fried and grilled and both are lovely, although grilling definitely saves on fat.

8 soft wheat flour tortillas
vegetable oil
150 g feta cheese, crumbled
150 g mozzarella cheese, crumbled
150 g cheddar cheese, grated
3 tablespoons sour cream
1 -2 chile, chopped (optional)
3 tablespoons coriander, chopped
1 teaspoon oregano

Steps:

  • Mix together all the filling ingredients.
  • Place a heaped quarter cup of filling in the centre of each tortilla, then fold over the sides to form a square parcel.
  • Shallow fry in hot oil until brown and crisp.
  • Or brush with oil, then toast under a pre-heated grill, not too hot or too close.

6 boneless pork chops
1 tablespoon olive oil, for brushing
250 g pancetta, cut into thin slices
1 small red apple, peeled, cored and cut into thin slices
150 g brie cheese, sliced

Steps:

  • Remove any visible fat from chops, flatten them lightly with a meat mallet and brush with olive oil. Season with black pepper.
  • Sear the chops for 2 minutes on both sides in the hot grill pan on. Put aside to cool slightly.
  • Lay out 4 slices of the pancetta so they overlap. Place a seared chop on top of each pile of pancetta.
  • Divide the sliced apple and Brie between the pancetta piles, on top of the pork.
  • Wrap the pancetta around each of the pork, apple and brie parcels to hold it all in place. Place the pancetta parcels on a baking tray and bake in the oven at 200°C for 15 minutes, or until the pork is cooked through.
  • Serve with mashed potato and cooking juices from the parcels.

225g fresh spinach , washed
1 tbsp groundnut oil
1 large shallot , finely diced
25g walnuts or pine nut , roughly chopped
75g vegetarian cheddar , grated
pinch freshly grated nutmeg
2 tbsp double cream
1 tsp walnut oil
25g butter , melted
12 squares filo pastry , each measuring 16cm x 16cm

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Place spinach in a pan and stir over a high heat until wilted. Strain, squeeze out as much liquid as possible, then roughly chop.
  • Heat oil in a frying pan, sauté shallot until softened. Add walnuts, then fry for 2-3 mins. Remove from heat, stir in spinach, cheese, nutmeg, cream and seasoning.
  • Mix walnut oil with butter. Brush a thin coating on a piece of pastry. Place another piece on top with corners at a different angle, brush with the butter and repeat with one more piece. Place a spoonful of spinach mix in the centre, bring up corners of pastry and pinch in the middle to form a parcel. Repeat to make remaining parcels, then transfer to a greased baking tray. Brush parcels with remaining butter and oil. Bake for 20 mins until golden.
