- Combine the broth, bean mix, salt, pepper, celery, carrots, garlic, onions, bay leaf, thyme and 2 cups water in a slow cooker. Cover and cook on low for 7 hours. Add the barley and, if the broth looks low, another cup of water. Cover and cook on low an additional 1 hour (8 hours total).
- Just before serving, stir in the spinach to wilt. Serve in a big bowl with toasted crusty bread or baguette.

- Rinse beans and then soak overnight in water.
- Drain beans and place in crock pot.
- Add vegetable juice, wine, soy sauce, and apple or pineapple juice.
- Cover with vegetable stock or water; the amount added depends on whether you prefer a soup (more liquid) or a stew (less).
- The juice adds just a tad of sweetness and the soy sauce adds depth and the tang of salt.
- Cook on high for 2 hours.
- Add vegetables, herbs, and spices, and cook for 5 to 6 hours on low until carrots and parsnips are tender.
- When tender, add rice or pasta and cook for one additional hour on low.
- For beans use 3 or 4 kinds, such as black, red kidney, pinto, baby lima, lentil, and green and/or yellow split peas.

CROCK POT TACO BEEF STEW
This is a very simple and inexpensive beef stew which I found on lazygourmet.com. We like it in heated flour tortillas with cheese and salsa on top. You could also add sour cream, green onions, black olives, or what have you to them after you fill the tortillas. Ole!

- Roll beef pieces in the taco seasoning (I used cubes of round steak and put them in a plastic bag with the taco seasoning and turned it around and around to coat thoroughly).
- Place beef in crock pot.
- Combine remaining ingredients except beans and cheese and pour over beef cubes.
- Cover and cook on low for 6-7 hours.
- Fifteen minutes before serving, stir in beans (I had previously cooked a bag of dry black beans, which I used rather than canned).
- Cover and heat through,.
- Top individual servings with cheddar cheese, if desired.

TRACEY'S BEAN CROCK POT STEW RECIPE
My friend Tracey made this dish for a church function and I fell right in love with it. I have made a few changes since I don't like liquidy stews but I will leave that option up to you. It is warming, filling, and good for raising your HDL levels...if you leave out the bacon. Kids will love it!

- Brown the hamburger in a skillet, drain it, and rinse it with water (i use paper towels over a noodle strainer).
- Chop with the onion into the size you like.
- Brown the bacon until crispy with the onion.
- Drain bacon/onion mixture or pat with paper towels.
- Combine the hamburger and bacon mixture into a large crock pot.
- Add your beans (bean liquid optional depending on how liquidy you like your stews).
- There is no exact science for the last few ingredients. Each condiment can ruin the beans if overused. So, grab a spoon and start tasting but the amounts listed work just fine if you don't like to brave cold bean stuff.
- Stirring occasionally with the crock pot on a medium setting, let the bean mixture simmer in the crock pot for an hour or so until heated throughly. If you find it getting too thick, add some water.
- I like to serve it over hot brown rice which stretches the amount of serving but it can be eaten as just a soup/stew with crackers.
