Provided by Jordan Kenna

Categories     Lunch

Yield 6 servings

Number Of Ingredients 13

4 oz bacon, 4 slices, chopped
2 cups onion, diced
1 cup celery, diced
1 cup carrot, diced
⅓ cup all-purpose flour
1 teaspoon black pepper
1 teaspoon dried thyme
4 cans minced clam, with juice
1 ½ cups chicken stock
2 potatoes, peeled and cubed

1 bay leaf
oyster cracker, for garnish

Steps:

  • Place a fine mesh strainer over a medium bowl and strain the 4 cans of minced clams, separating the meat from the juices.

  • Add onion and sauté until softened and translucent, about 3 to 5 minutes.
  • Reduce heat to low and add carrots, celery and flour, stirring constantly for 3-5 minutes to avoid lumps.

Time 1h30m

Yield 8 servings

Number Of Ingredients 15

3 dozen small hard-shell whitewater Manila clams
1 medium yellow onion, finely diced
1 large celery stalk, finely diced
3 ounces applewood smoked bacon, about 1/2 cup diced
1 bay leaf
2 tablespoons minced fresh thyme leaves
2 large garlic cloves, minced
3/4 cup dry white wine
1/3 cup sifted all-purpose flour
1 cup water
1 large red bliss potato, finely diced
1 large Idaho potato, finely diced
1 cup clam juice
3/4 cup heavy whipping cream
1 tablespoon freshly chopped flat-leaf parsley

Steps:

  • Wash and scrub clams under cold running water, remove any that are open or have broken shells. In a heavy duty pot, place the onions, celery, bacon, bay leaf, thyme, garlic, and the clams. Slowly cook for 10 minutes. Add white wine, and deglaze. Add flour and mix thoroughly, cook for about 10 minutes and then add the water and clam juice. After 5 minutes add the potatoes and cover the pot, and cook over medium-high heat until all of the clams have opened, about 10 minutes.
  • Drain clams into a strainer and reserve the liquid and vegetables in a large bowl. Once the clams are cold enough to handle, remove the meat from the shells and reserve, discarding any clams that did not open fully. Place the cleaned clams in a cup container and reserve.
  • Put the liquid in a large stock pot and bring to a simmer. Add the vegetables and bacon. Season with salt and pepper. Cook, stirring occasionally, the potatoes and cooked through and tender. Slowly add the heavy cream and bring back to a simmer. Reduce. Add the clams and serve. Garnish with chopped parsley.

NEW ENGLAND CLAM CHOWDER

Provided by Food Network Kitchen

Time 50m

Yield 4 servings

Number Of Ingredients 11

30 littleneck clams (about 3 pounds), scrubbed
4 slices thick-cut bacon, chopped
2 tablespoons unsalted butter
3 stalks celery, finely chopped
1 medium onion, finely chopped
2 teaspoons chopped fresh thyme
1/3 cup all-purpose flour
1 large russet potato, peeled and cut into 1/2-inch cubes
2 cups half-and-half
Kosher salt and freshly ground pepper
Chopped fresh chives, for topping (optional)

Steps:

  • Rinse the clams several times under cold running water. Transfer to a large pot and add 3 cups water. Bring to a simmer over medium-high heat, then cover and cook until the clams open, about 6 minutes. Strain through a fine-mesh sieve into a large bowl; reserve the broth. Transfer the clams to a bowl and cover with plastic wrap so they don't dry out.
  • Cook the bacon in a large pot over medium heat until crisp, about 10 minutes; remove with a slotted spoon and drain on paper towels. Melt the butter in the same pot over medium heat. Add the celery, onion and thyme and cook, stirring occasionally, until soft, about 10 minutes. Add the flour and cook, stirring, 1 minute. Stir in the reserved clam broth, 1 1/2 cups water and the potato. Bring to a simmer and cook until the potato is tender and the soup thickens slightly, about 15 minutes.
  • Meanwhile, remove the clams from their shells and roughly chop.
  • Reduce the heat under the soup to medium low. Whisk in the half-and-half and warm through (do not boil). Remove from the heat. Stir in the chopped clams; season with salt and pepper. Ladle the soup into bowls and top with the reserved bacon and chives.

1 tablespoon canola oil
1/2 pound slab bacon, cut into 1/2-inch dice
1 cup canola oil
2 medium okra, cut into 1/4-inch-thick slices
Kosher salt and freshly ground black pepper
1 cup yellow or white cornmeal
2 tablespoons canola oil
2 shallots, finely diced
1/4 cup finely diced carrot
1/4 cup finely diced celery

2 cups clam juice
2 tablespoons finely chopped fresh parsley, plus more leaves for garnish
1 teaspoon finely chopped fresh oregano

Fry in the oil, in batches if needed, until golden brown and just tender, about 4 minutes. Remove to a plate lined with paper towels and season with salt.
  • For the chowder: Heat the oil in a large saucepan over medium heat. Add the shallots, carrot and celery and cook until soft, about 4 minutes. Add the anchovy and chile flakes and cook for 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly.
  • Add the clam juice and reserved clam broth and bring to a boil. Reduce the heat to low, add the reserved littleneck clams and cook for 10 minutes. Add the parsley, oregano and thyme and cook for 1 minute. Whisk in the creme fraiche and lemon zest until smooth. Season with salt and pepper to taste.
  • Ladle the soup into bowls, top with some of the potatoes, bacon, okra and reserved cockles. Garnish with parsley leaves.

TRACI'S FAMOUS NEW ENGLAND CLAM CHOWDAHHHH

Traci's Famous New England Clam Chowdahhhh image

This tasted like the real deal New England Clam Chowder to us. Super creamy and savory, it's filled with potatoes, corn, and clams. Using pepper bacon adds a little spice and smokiness. Serving the chowder in a bread bowl makes for a pretty presentation. The bread soaks up all the flavors of the New England Clam Chowder and is tasty to eat afterward.

Provided by Traci Howard @clintraci

Categories     Chowders

Number Of Ingredients 14

3 cup(s) onions, diced
3 cup(s) celery, diced
5 pound(s) potatoes, diced
6 can(s) corn cream-style (14.75 oz each)
6 can(s) corn (15.25 oz each) or 6 ears of fresh corn kernels
6 can(s) minced clams with juice (6.5 oz each)
4 1/2 stick(s) butter
2 1/4 cup(s) unbleached white flour
3 quart(s) heavy cream
4 1/2 teaspoon(s) Kosher salt
4 1/2 teaspoon(s) pepper, freshly ground
3 pound(s) pepper bacon, cut into 1/2 inch pieces
2 tablespoon(s) hot pepper sauce
6 or so - round bread bowls, gutted. Reserve the bread and make croutons.

Steps:

  • Drain the clams, but reserve the juice. Also, if you are using canned corn, drain well.
  • Add the bacon to a large stock pot, and cook the bacon until almost crisp. I do not drain the fat. If you wish, I suppose it would be okay. However, the flavor is adds to the whole.
  • Add the onions and celery to the bacon, cook until tender. Then add the potatoes, clam juice, and just enough water to barely cover the veggie/ bacon mixture. Cover and simmer. Cook potatoes until JUST fork tender; careful not to over cook the potatoes.
  • In the meantime, in a 5 qt pan, melt the butter. Add the flour, whisk to blend, and cook for about two minutes. You want to make sure that you cook the flour taste out. Add the cream, cook, and stir until smooth and thick, using a wire whisk. I tend to do this until I reach the thickness I desire.
  • Once your "chowda" is as thick as you wish, remove the pot from the stove. And add the cream mixture, drained corn, creamed corn, clams, and hot sauce. Stir to combine and ENJOY!

Provided by Karen in MA

Categories     Chowders

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 17

2 dozen littleneck clams
2 dozen cherrystone clams
1 quart water
1 cup water
2 garlic cloves, smashed
2 bay leaves
3 tablespoons unsalted butter
3 ounces pancetta, cut into cubes
1 stalk celery, diced
1 onion, diced
10 sprigs fresh thyme (leaves only)
1 cup all-purpose flour
3 yukon gold potatoes, peeled and cubed
1/2 cup heavy cream
1 cup milk
fresh ground black pepper
1/4 bunch fresh chives, minced

Steps:

  • Wash and scrub the clams to get rid of the dirt. Set the littlenecks aside in the refrigerator, and combine the cherrystone clams with the water, garlic, and bay leaves in a large pot. Cover, and steam over medium-high heat until the clams have all popped open, about 15 minutes. Check every 5 minutes to pull out the clams that have opened (some take longer than others), and give the pot a stir. Pull the opened clams out of their shells and chop them roughly. Cover them and set aside. Pour the broth into a big bowl through a strainer that you've lined with cheesecloth, just in case there is leftover sand; set the broth aside.
  • Rinse out the pot and melt the butter over medium heat. Add the pancetta, celery, onion, and thyme. Sauté this together for 5 minutes, until the vegetables soften. Sprinkle the flour into the pot; stir and coat everything well. Gradually pour in the strained clam broth, whisking constantly to break up any lumps of flour. When all the broth is incorporated, fold in the potatoes, and bring to a boil, stirring constantly for about 15 minutes. The soup will start to thicken from the potato starch.
  • Toss in the littleneck clams and cover the pot to let them steam open, about 5 minutes. Reduce the heat to low and fold in the chopped clams, cream, and milk. Season the soup with many turns of freshly ground black pepper and stir everything together to heat through, but do not let it boil. Serve this in nice big bowls with some chives and Parmesan Oyster Crackers.

MY BEST NEW ENGLAND CLAM CHOWDER

My Best New England Clam Chowder image

My husband and I love soups and chowders. This is one of my husband's favorites. Originally from a magazine clipping, I've "futzed" around with it until it suits our tastes. It makes one Dutch oven full and the servings depend on how much you eat. I usually eat one bowl and my husband finishes off the rest. (He loves it!) Start to finish it takes less than an hour to make.
