16 medium sized empanadas discs, homemade or store-bought (see my Empanada dough recipe)
2 tablespoons butter
1/2 white onion, sliced thinly
1/2 bell pepper, sliced thinly
4 garlic cloves, crushed
2 tomatoes, diced
1/2 teaspoon ground achiote or annatto (I used 2 packages Sazón Goya con cilantro y achiote)
1 teaspoon ground cumin
2 cups turkey, shredded
2 tablespoons turkey gravy (I used 1 1/2 teaspoons Epicure gravy mix)
2 tablespoons balsamic vinegar
1/2 tablespoons fresh oregano or 1 teaspoon dried oregano
Salt, to taste
1 egg, separated

Steps:

  • Melt the butter in a medium size frying pan. Add the onions, tomatoes, bell pepper, garlic, achiote, and cumin. Cook for 10 minutes over medium low heat, stirring occasionally. Mix in the shredded turkey and stir well. Add the turkey gravy mix and balsamic vinegar; continue cooking over low heat for another 5 minutes. Let the turkey filling cool down, and then add in the chopped oregano. To assemble the empanadas spoon the turkey mixture onto the center of each empanada disc. Brush the edges of the empanada discs with the egg whites, you can also use water but the egg white acts as a natural "glue" that helps seal the empanada. Fold the empanada disc and seal the edges gently with your fingers, twist and fold the edges of the empanadas with your fingers. To seal the edges further you can use a fork to press down and finish sealing the empanadas. Let the empanadas rest in the refrigerator for at least 30 minutes or until ready to bake, this will help them seal better and prevent leaks. Lightly brush the top of the empanadas with the egg yolk; this will give them a nice golden glow when they bake. Pre-heat the oven to 400 F and bake for 20-25 minutes or until golden, exact time will depend on the size of the empanadas and your oven. Serve warm.

1 (14-ounce) package refrigerated pie crust sheets
1 1/2 cups cooked turkey (diced)
1/3 cup turkey gravy (cold, from leftover or a jar)
3/4 cup mashed potatoes (cold, seasoned)
2 tablespoons parsley (finely chopped)
3/4 cup ​ dressing (leftover, bread or cornbread)
Salt (to taste)
Pepper (to taste)
1 egg white
1 teaspoon of water
1 cup cranberry sauce

Steps:

  • Gather the ingredients and preheat oven to 400 F.
  • On a lightly floured surface, roll each pastry round to about 12 inches. Cut out three 6-inch rounds, then roll the remaining scraps out to cut out 1 more 6-inch round. Repeat with the remaining pastry sheet.
  • In a small bowl, combine the turkey with the gravy and set aside.
  • Combine the mashed potatoes with parsley in another small bowl.
  • On each 6-inch round, mound about 1 1/2 tablespoons of mashed potatoes .
  • Top with about 1 tablespoon of dressing, then about 2 to 3 tablespoons of the turkey mixture. Sprinkle with a little salt and pepper.
  • Cut a few slits in the top of each empanada and arrange on a parchment paper or silicone lined baking sheet.
  • Wet the edges with water, fold over, and seal with the tines of a fork.
  • Beat the egg white and water together and brush each empanada lightly with the mixture.
  • Bake for about 12 to 14 minutes, or until nicely browned.
  • Serve with cranberry sauce on the side.

1 (15-ounce) can black beans, drained
1/2 cup shredded pepper Jack or Monterey Jack cheese
1/2 cup shredded Cheddar
1/2 cup prepared salsa
2 tablespoons freshly chopped cilantro leaves
1 teaspoon ground cumin
2 (9-inch) refrigerated pie crusts
1 egg, beaten with water, if desired, for egg wash

Steps:

  • Preheat oven to 425 degrees F.
  • In a large bowl, combine turkey, black beans, both cheeses, salsa, cilantro, and cumin. Mix well to combine.
  • Unroll pie crusts onto a flat surface. Using 4-inch cutter, cut out 6 circles. Divide turkey mixture into equal portions and place each portion (in mounds) on top of the pie crusts. Fold over and pinch the edges together to seal. Using a fork, make hash marks on the edges of the empanadas to ensure they are sealed. Transfer empanadas to a large baking sheet. Using a sharp knife, make small slits in the top of each empanada to allow steam to escape during cooking. Brush with egg wash and place into preheated oven. 1 pkg. (16 oz.) frozen ground turkey, thawed
1 onion, chopped
1 carrot, peeled, finely chopped
2 cloves garlic, minced
1 can (15 oz.) great Northern beans, drained, rinsed
1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
1/4 cup finely chopped cilantro
1 pkg. (15 oz.) ready-to-use refrigerated pie crusts (2 crusts)

Steps:

  • Heat dressing in large skillet on medium-high heat. Add turkey, onions, carrots and garlic; cook 5 to 7 min. or until turkey is cooked through, stirring occasionally. Remove from heat. Stir in beans, cheese, cilantro and pepper; set aside.
  • Preheat oven to 400ºF. Unroll 1 of the pie crusts on large baking sheet sprayed with cooking spray. Spread half of the turkey mixture onto half of the crust to within 1 inch of edges. Fold crust in half to enclose filling. Fold over 1/2-inch-wide rim around pastry to seal all edges. Repeat with remaining pie crust and filling. Cut several slits in top of each to permit steam to escape.

1/2 cup chilled gravy
1 1/2 17.3-ounce packages frozen puff pastry (3 sheets), thawed
1 cup mashed potatoes, divided
1 cup stuffing, divided
1 egg white, beaten to blend with 1 teaspoon cold water (for glaze)

Steps:

  • Mix turkey with chilled gravy in small bowl. Roll out 3 pastry sheets to 12-inch long rectangles on floured work surface. Cut out 2 six-inch rounds from each pastry sheet, using small plate as guide (6 rounds total). Place each round on one 8- to 9-inch parchment square.

1 pound ground turkey
1 large onion, diced
1 8-ounce can tomato sauce
4 teaspoons Cajun seasoning mix
1/2 cup packed grated Monterey Jack cheese (about 2 ounces)
3 7.5-ounce cans refrigerated biscuit dough (10 biscuits per can)
1 egg, beaten to blend
Oil for deep frying

Steps:

  • Sauté turkey in heavy large nonstick skillet over medium heat until cooked through and brown, breaking up meat with fork, about 5 minutes. Using slotted spoon, transfer turkey to small bowl. Add onion to drippings in skillet and sauté until light brown, about 7 minutes. Return turkey and any juices to skillet. Add tomato sauce and Cajun seasoning; simmer until mixture is almost dry, stirring occasionally, about 8 minutes. Season with salt and pepper. Cool completely. Mix in cheese. (Can be prepared 1 day ahead. Cover and chill.)
  • On lightly floured surface, roll out 1 biscuit dough piece to 4-inch-diameter round. Place 1 tablespoon filling on round. Brush half of dough edge with beaten egg. Fold dough over filling to create half circle and seal edges by pressing with tines of fork. Set empanada on baking sheet and cover with damp cloth. Repeat with remaining biscuits and filling.
  • Pour oil to depth of 1/2 inch into heavy large skillet. Heat oil over medium-high heat to 350°F. Fry empanadas in batches until golden brown, about 2 minutes per side. Transfer to paper towels. Serve warm or at room temperature.

1 cup sifted all-purpose flour
1 cup fruit preserves
⅓ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • DAY BEFORE: Cream butter and cream cheese together until smoothly blended. Beat in the flour. Shape dough into a smooth ball, wrap in foil or cling wrap, and refrigerate overnight or up to a week.
  • AT BAKING TIME: Remove dough from refrigerator 30 minutes before using. Start heating oven to 375 degrees F (190 degrees C).
  • Roll chilled dough thin. Cut with 3 or 4 inch round cookie cutter. Place small spoonful of jam in center of each round, moisten edges with water.
  • Fold round over and press edges together. Bake on ungreased cookie sheet 15 to 20 minutes. Immediately roll in sugar mixed with cinnamon (traditional) OR in confectioners' sugar if preferred.

I wanted to create a new type of empanada using some middle-eastern spices and a healthier meat. These little babies would be great to take on a picnic, in a lunch, or to the beach. They are also a low-calorie, low-fat meal. These have no cheese or red meat, and would be fine for IBS sufferers.

1 lb lean ground turkey
1 red pepper, diced
4 ounces mushrooms, sliced
1 small onion, diced
2 green onions, sliced
3 garlic cloves, minced
1 teaspoon paprika
1 teaspoon baharat (see Baharat Aka Middle East Mixed Spices - the Real Mix)
1 teaspoon cumin
1/2 teaspoon salt
3 teaspoons curry powder
2 tablespoons tomato paste
1/4 cup water
2 (14 ounce) packages goya discos
1 egg, beaten

Steps:

  • Remove discos from freezer to defrost. Preheat oven to 450 degrees.
  • Brown ground turkey in skillet, drain fat.
  • Add green onion, onion, red pepper, garlic, and mushrooms. Cook until soft. Add salt, spices, tomato paste and water. If you have no tomato paste, you can use some tomato sauce. If you have no baharat, you can substitute with a small amount of clove, cardamom, coriander, and nutmeg (or leave it out if you prefer). When filling has been sufficiently mixed, remove from heat.
  • Take a disco from the packaging and place it on a piece of wax paper. Put a tablespoon or two of filling on one side. (You can use refrigerated biscuit dough or frozen pie crust if you cannot find discos, but you may need to adjust baking time and temp.) Seal edges using fork tines to go around the edge on the top and bottom of empanada. Then set aside on plate in fridge. Repeat this with the rest of the discos until all filling is gone.
  • Spray cookie sheet with cooking spray and lay the empanadas on the sheet. Brush tops of empanadas with beaten egg, for gloss. Bake empanadas ten minutes or until golden brown. Then bake second batch same way.

1 cup onion, chopped
1/2 green bell pepper, chopped

1/2 teaspoon red pepper flakes
1/8 teaspoon ground black pepper

1 (15 ounce) package refrigerated pie crusts
1 egg white, beaten

Steps:

  • In a large skillet over medium-high heat, saute turkey, garlic, onion, and green pepper until turkey is no longer pink in center. Stir in parsley, cilantro, cumin, oregano, red pepper flakes, and black pepper. Stirring occasionally, cook over medium heat about 15 minutes or until most the liquid is reduced.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Spray cookie sheet with non-stick oil. Unfold one pie crust on one side of cookie sheet. Carefully spread one half of meat mixture to within 1-inch of one-half pie crust. Brush 1 inch of pie crust with egg white. Encase meat by folding other half of pie crust over meat mixture. Using a fork, press edges of crust together and pierce top of crust to make holes to allow steam to escape.
  • Repeat steps with remaining ingredients and pie crust on other side of cookie sheet.
  • Bake at 400 degrees F. 20 to 25 minutes. To serve, cut each empanada into 3 wedges.

Add leftover turkey, cream cheese and green chilies to the onions and stir. The goal if for the cream cheese to melt and become creamy. Add your favorite salsa and stir to combine and lastly add taco seasoning and stir. Remove from heat.
  • Place a heaping tablespoon of filling into the middle of each puff pastry round and top with shredded cheese. Be sure to not over fill or the empanadas will not seal properly and they are hard to close. Fold the puff pastry over the filling in half and seal the edges together using the tines of the fork. You want to be sure and press hard enough to create a seal. Using the same fork, poke a couple of holes into the top of each empananda. This will allow steam to escape while the bake. To get the golden brown color on top, brush each empanada with egg wash. To make the egg wash just whisk the egg and water together.
  • Bake for 20-25 minutes or until your turkey empanadas are golden brown. Serve warm or store in the refrigerator for up to 3 days.
