1 Pound FROZEN Boneless Skinless Chicken Thighs
4 tbsp Trader Joes Island Soyaki Sauce or Equivalent
4 tbsp Water
1/2 tsp Sesame Seeds
2 tbsp Chopped Scallions
1 Cup Soy Sauce
2/3 Cup Sugar (or to taste)
1 inch Piece of ginger minced, smashed, or sliced
2 to 3 cloves Garlic minced, smashed or sliced
1 stalk Green Onion
1/2 Tbsp. Toasted Sesame Seeds (Optional)

Steps:

  • THIS IS MADE FROM FROZEN CHICKEN. If you would like to make this from fresh chicken the cook time is the same but you would add an extra 1/2 cup of water.Open Instant pot and put in your FROZEN chicken,soyaki or teriyaki sauce and water. Seal lid on to Instant Pot and turn valve to SEAL. Push POULTRY button and set pressure to HIGH and set TIMER to 15 MINUTES. When cooking is complete do a QUICK PRESSURE RELEASE. Open your Instant Pot and remove chicken. Push CANCEL on your Instant Pot to stop its current process. Then Press SAUTE till the MORE setting is lit up. Wait for sauce to come to boil and then let REDUCE and thicken for about 5 to 7 minutes. When complete press Cancel on the Instant Pot to stop the sauce process. Return chicken to Instant Pot to coat with sauce. When you are ready to serve the chicken put sauce over chicken then sprinkle chicken with sesame seeds and chopped scallions.....Enjoy.
  • Add All ingredients to blender or food processer and pulse until combined.

2 lbs. fresh salmon (about 1 inch in thickness (you can cut into serving sizes or larger pieces))
1 cup favorite teriyaki marinade (I use Trader Joe San Soyaki)
1 Tbsp. dried ginger
1/3 cup dark brown sugar

Steps:

  • In a small bowl, combine the teriyaki sauce, dried ginger, and dark brown sugar; whisk together. Pour into a ziploc bag; add the salmon.
  • Preheat the broiler to high. Place the salmon on a prepared (sprayed) broiler pan or baking sheet. [Toss out the marinade]
  • Broil for 5-6 minutes, flip, and then broil for another 5-6 minutes more. (With skin, I broil for about 8-10 minutes total, skin-side down. It will be a little darker on top than if you are flipping it).
  • Remove and serve!

  • Make the guacamole ahead for serving stir fry with wontons. Remove skin and pit from avocado. Dice avocado and add it to a bowl. Add garlic salt, pepper, and cilantro. Use a fork to mash avocado and seasonings together. Set aside.
  • Pan fry the wontons stir fry. Heat a medium skillet on the stove to medium-high heat. Add olive oil. Add raw diced vegetables. Add frozen potstickers onthe stove for a few minutes, stirring occasionally so the ingredients don't stick to the pan or burn, and so they cook on all sides.
  • Add teriyaki sauce and simmer. Once wontons are browned, add teriyaki sauce to the pan. (I used Trader Joe's Soyaki Teriyaki). Then add water, cover, and reduce to medium low. Simmer wontons for 3-5 minutes until almost all of the liquid has evaporated. Remove cover from pan and stir pto sticker stiry fry until all water evaporates.
  • Plate and serve. Remove from heat and plate the stir fry with guacamole and a sprinkle of fresh Thai basil.
