4 large russet potatoes, pricked with a fork
4 teaspoons olive oil
1/4 cup milk
4 tablespoons (1/2 stick) unsalted butter
1/2 cup grated Gruyere
1/4 cup sour cream
1/4 cup chopped fresh chives
1/2 cup grated sharp Cheddar
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the potatoes on a baking sheet and rub with the olive oil. Bake until soft enough to yield to gentle pressure, about 1 hour. Let cool for 10 minutes.
  • Heat the milk and butter in a small pot over low heat. Slice the potatoes in half lengthwise and scoop out the flesh into a bowl, leaving just a little bit behind to give the skins some structure. Place the scooped-out potato skins back on the baking sheet and set aside.
  • Mash the potatoes with a masher until there are no large clumps. Add the heated milk and butter as well as the Gruyere, sour cream, half of the chives, and salt and pepper to taste. Mix with a wooden spoon until well blended and smooth. Scoop the mashed potatoes back into the potato skins and top each with some of the Cheddar.
  • Return the potatoes to the oven; bake for 20 minutes. Transfer to a serving platter, garnish with the remaining chives, and serve.

  • Place sweet potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook 20-25 minutes or just until tender. , Meanwhile, preheat oven to place 350°. Place Yukon Gold potatoes in another large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook 15-20 minutes or until tender. Drain; mash with 3/4 cup milk, half of the cream cheese and 1 tablespoon butter. Add onions, 3/4 teaspoon salt and pepper; mix well. 1 large egg
1 teaspoon vanilla extract

½ cup chocolate hazelnut spread
2 tablespoons cocoa powder
¼ cup strawberry jam
¼ cup cream cheese
½ cup chocolate cookie wafer
½ cup cookie cream filling
½ cup rainbow sprinkles

Steps:

  • In a medium bowl, cream the butter and sugar with a hand mixer until light and fluffy.
  • Add the egg and vanilla extract and mix until fully incorporated.
  • Add the flour, baking soda, and baking powder, and mix until the dough is crumbly, but holds together when squeezed.
  • Split the base dough in half, add your desired mix-ins, and incorporate them fully.
  • We used chocolate hazelnut spread and cocoa powder for one half and peanut butter for the other.
  • Roll out each dough between two sheets of parchment paper until it's ¼-inch (6-mm) thick. Chill both doughs for 30 minutes.
  • Place one half of flavored dough on top of the other and start to roll up the doughs into a swirl. Wrap the roll in plastic wrap and chill in the fridge until solid, about 4 hours.
  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Once chilled, unwrap the dough, slice into ½-inch (1 cm) thick coins, and place them on the baking sheet at least 2 inches (5 cm) apart, as the cookies will spread while baking.

5 tablespoons butter, divided
1 large vidalia onion, chopped (or sweet onion)
1 teaspoon sugar
2 1/2 lbs red potatoes, peeled and cubed
4 garlic cloves, peeled and left whole
2 1/2 lbs sweet potatoes, peeled and cubed
1 1/2 cups milk, divided
1/4 cup sour cream
1 1/2 teaspoons salt, divided
1 teaspoon brown sugar
1/4 teaspoon vanilla
1/2 teaspoon black pepper
6 ounces bacon, cooked crisp and crumbled (for garnish)

Steps:

  • CARAMELIZE THE ONIONS: Melt 1 tbsp butter in large skillet over med-high heat. Add onions and sugar and cook, stirring often, 25 minutes till onions are a golden brown and caramelized. Remove from heat, set aside.
  • BOIL POTATOES SEPARATELY: Meanwhile, while onions are caramelizing, place potatoes in two pots large enough for water to cover potatoes. Add the garlic cloves to the pot with the red potatoes. Bring both pots to a boil, reduce to med heat and cook until tender, about 20 minutes, then drain in colanders.
  • PREP RED POTATOES: Beat red potatoes and garlic with electric mixer till mashed. Add 1/2 cup milk, sour cream and 2 tbsp butter. Continue beating till smooth. Season with salt and pepper to taste.
  • PREP SWEET POTATOES: Beat sweet potatoes until mashed. Add remaining 3/4 cup milk and 2 tbsp butter, the brown sugar and vanilla. Beat till smooth, season with salt to taste.
  • ASSEMBLE: Preheat oven to 350°F Lightly grease a 3-quart baking dish. Place the red mashed potatoes in the bottom. Spread sweet potato mixture over red potato mixture. Swirl by cutting through mixture gently with the flat side of a knife. Top with the onion mixture. Cover and bake for 30 minutes. Sprinkle with bacon crumbs and serve.

Steps:

  • Preheat the oven to 325ºF (160ºC).
  • Microwave the potatoes for 1-1 ½ minutes, then leave in the microwave for a few minutes to cool down and soften. Insert a wooden skewer into the bottom of each potato and gently push it all the way through the top. Working in a spiral motion from one side to the other, hold a sharp, thin knife at an angle and cut in the opposite direction you are turning the skewered potato, cutting all the way down to the skewer. Take your time and work to make thin, even spiral all the way down the potato.
  • Gently fan out each potato down the length of the skewer, until you have even gaps between the slices. Brush the melted butter all over the potatoes.
  • In a medium bowl, combine the Parmesan cheese, pepper, garlic powder, paprika, and salt. Place each skewered potato over the bowl and sprinkle half of the spice mixture over each potato until they are entirely coated. Carefully set the potatoes on a baking pan, letting the skewers rest on sides of the pan so that the potatoes are suspended.
  • Bake for 25-30 minutes, or until nicely browned. Garnish with additional Parmesan and parsley. Let cool for 5 minutes before serving.
