Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 14

4 cloves garlic
1/2 cup plus 2 tablespoons extra-virgin olive oil
1 tablespoon minced salted anchovies
Pinch of crushed red pepper flakes
One 32-ounce can crushed tomatoes, drained and juice reserved
1 tablespoon capers
1 bunch basil leaves
3 tablespoons pine nuts, toasted
3 tablespoons golden raisins
Coarse salt and freshly ground black pepper
1 1/2 pounds squid, cleaned, tentacles removed and trimmed, and bodies cut into very thin rings
8 slices baguette, cut on a bias
Zest of 1 lemon
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 450 degrees. Thinly slice 3 cloves garlic. Heat 1/4 cup olive oil in a large skillet over medium heat. Add garlic, anchovies, and red pepper flakes; cook until garlic has browned. Stir in tomatoes; transfer to oven and roast until dried and thickened, about 20 minutes.
  • Add reserved tomato juice to cooked tomato mixture and stir to reconstitute sauce. Add capers, basil, pine nuts, and raisins; stir to combine. Season with salt and pepper; place over low heat to keep warm.
  • Heat a large skillet and add 3 tablespoons olive oil; heat until smoking. Add squid, cook, stirring constantly, until squid rings begin to open up and become firm, about 30 seconds. Season with salt and pepper. Add tomato sauce to skillet, bring to a boil, then reduce to a simmer. Cook until squid is opaque and sauce is hot, 2 to 3 minutes.
  • Preheat a grill pan. Drizzle bread with 3 tablespoons olive oil and season with salt and pepper. Grill until toasted on both sides. Rub cut sides of toasted bread with remaining clove of garlic.
  • Divide calamari evenly among 4 shallow bowls. Drizzle with olive oil and sprinkle with lemon zest and parsley. Serve immediately with toasted bread.

Categories     main-dish

Time 2h20m

Yield 6 to 12 servings

Number Of Ingredients 20

1/4 cup olive oil
1 large onion, sliced thinly (preferably sweet white Vidalia onion)
Salt and freshly ground black pepper
1/4 cup pine nuts
1/4 cup raisins
1/4 cup Italian or kalamata olives (preferably pitted)
1 teaspoon capers, optional
One 24-ounce can peeled crushed/ground tomatoes (recommended: Kitchen Ready)
5 or 6 basil leaves, torn
3 eggs
3/4 cup seasoned bread crumbs, plus extra for sprinkling
1 tablespoon raisins, coarsely chopped
1 tablespoon pine nuts, coarsely chopped
1/4 cup chopped squid tentacles
1 tablespoon caciocavallo cheese or Pecorino Romano, chopped into small cubes
12 cleaned fresh or frozen medium squid
Grated Romano
Dry seasoned bread crumbs
Salt and freshly ground black pepper
Extra-virgin olive oil

Steps:

  • To make the sauce: Pour the oil into a medium size saucepan, add the onion, a pinch of salt and pepper and saute at medium to medium-high heat until the onion becomes golden and tender and you can see through it. Add the pine nuts, the raisins and the olives, (for a tangy taste, add the capers). Saute for about 3 more minutes). Add the can of tomatoes (add about 1/2 can of water to thin the sauce for cooking) and cook at medium heat for about at least 1 hour, stirring occasionally. Lastly, add the basil leaves for a more fresh and tasty flavor.
  • Preheat the oven to 400 degrees F.
  • To make the stuffing: in a medium bowl, beat the eggs and gradually add the bread crumbs, raisins, pine nuts, tentacles and cheese. Mix to a soft consistency. Stuff squid loosely with the mixture and secure opening with a small skewer or toothpick. Place a single layer of squid in a medium baking dish (9 by 13-inches). Top with the sauce. Sprinkle a little grated romano, some dry seasoned bread crumbs, a pinch of salt and pepper over the sauce, then drizzle with some olive oil. Cover pan with aluminum foil and bake for about 45 minutes or until tender.

CALAMARI WITH TOMATOES, CAPER BERRIES, AND BASIL

Calamari with Tomatoes, Caper Berries, and Basil image

This slightly spicy sauce is referred to as all'acqua pazza in Italian, which means "crazy water."

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 14

1/4 cup extra-virgin olive oil, plus more for drizzling (optional)
4 garlic cloves, minced, plus 1 whole garlic clove
2 shallots, minced
1 can (28 ounces) whole peeled plum tomatoes with juice, crushed
1 cup dry white wine
1/2 cup water
1 small dried red chile, such as chile de árbol crumbled
8 fresh basil leaves, plus more for garnish
2 strips (each 3 inches) orange zest
Coarse salt
1 1/2 pounds small calamari (bodies and tentacles), rinsed and dried
1/2 cup large caper berries
6 slices rustic bread, such as pugliese or ciabatta
Freshly ground pepper, to taste

Steps:

  • Heat 1 tablespoon oil in a saute pan over medium heat. Add minced garlic and shallots, and cook until soft, about 4 minutes. Stir in tomatoes with juice, wine, water, chile, basil, orange zest, and 2 teaspoons salt. Bring to a boil, then reduce heat, and simmer gently until slightly thickened, 15 to 20 minutes.
  • Meanwhile, using a kitchen mallet, pound both sides of calamari bodies a few times to tenderize, then cut crosswise into 1/2-inch rings. (Leave tentacles whole, or halve if large.)
  • Add calamari and caper berries to sauce. Cook until calamari are opaque, 1 1/2 to 2 minutes. Remove from heat.
  • Heat remaining 3 tablespoons oil in another skillet. Rub bread with garlic clove. Add clove to oil, and cook 2 minutes. Add bread, and fry, flipping once, until golden and crisp, about 1 1/2 minutes total. Put 1 slice of bread into each serving bowl, and top with calamari and sauce. Season with pepper. Drizzle with oil if desired, and garnish with basil.

Yield Makes 4 servings

Number Of Ingredients 13

2 cups packed basil leaves
1/2 cup olive oil
2 tablespoons water
2 tablespoons fresh lemon juice, or to taste
1 pound cleaned calamari (squid)
1 (15- to 16-ounce) can cannellini beans, rinsed and drained
1/2 pound tomatoes, cut into 1-inch chunks
1 celery rib, chopped
1/2 small onion, finely chopped
1 (3 1/2 - to 5-ounce) package baby greens such as arugula or mâche
1 tablespoon vegetable oil
Equipment:
a large (2-burner) griddle (preferably cast-iron)

Steps:

  • Blanch basil in a small saucepan of boiling water 15 seconds, then drain in a sieve and rinse under cold water to stop cooking.
  • Drain basil and squeeze out excess liquid, then purée in a blender with olive oil, water, lemon juice, and 1/2 teaspoon each of salt and pepper until dressing is bright green and smooth, about 1 minute.
  • Cut each body sac of calamari lengthwise along seam to open into a flat piece; rinse well. Pat calamari dry, then cut body sacs into 1-inch pieces and halve any large tentacles lengthwise.
  • Toss beans, tomatoes, celery, and onion with 1/3 cup basil dressing, then gently toss with greens. Season with salt and lemon juice, then divide among 4 plates.

Divide calamari among salads; drizzle with some of remaining dressing.

CALAMARI IN RED WINE AND TOMATO SAUCE

Calamari in Red Wine and Tomato Sauce image

Italian Christmas eve favorite - use your favorite spaghetti or tomato sauce as the base. This recipe can be doubled or tripled easily. Serve as a side, appetizer, or over pasta. Buon Natale!

Provided by NCANGELONE

Categories     World Cuisine Recipes     European     Italian

Yield 6

Number Of Ingredients 10

2 pounds calamari, cleaned
4 cups tomato sauce
1 cup Chianti wine
2 tablespoons fresh lemon juice
1 tablespoon olive oil
2 teaspoons chopped garlic
1 teaspoon ground black pepper
½ teaspoon ground cayenne pepper
1 teaspoon dried basil
⅓ cup grated Romano cheese

Steps:

  • Separate the tentacles from the long body of the calamari, if not done already. Slice the body, or calamari tubes into rings about 1/2 to 2/3 inch thick, set aside.
  • In a saucepan, combine tomato sauce, red wine, lemon juice, olive oil, garlic, black pepper, cayenne pepper, basil, and cheese. Simmer on medium low for about 30 minutes to give the alcohol in the wine time to evaporate, and all the flavors time to blend.
  • Add the calamari to the sauce. Continue to slowly simmer for about another 20 - 30 minutes, stirring occasionally. Calamari is done when it is plump and more opaque. Do not cook on higher heat or for a longer period, as calamari is famous for becoming rubbery.
