GLAZED NUTS
These are so fast and easy to make and look so pretty in a nice candy dish. This recipe only makes 1/2 pound (the program will not allow me a 1/2 so I put 1 pound...please ignore) so prepare to make a couple batches. They will go very fast.

Steps:
- In a heavy 8 inch skillet combine nuts, sugar and butter.
- Cook over med heat, stirring constantly until sugar is melted and golden in color and nuts are toasted (about 7 minutes).
- Spread nuts on a butter cookie sheet or aluminum foil, separating nuts.
- Sprinkle lightly with salt.
MY MOM'S RAISED DOUGHNUTS
I used to make these with Mom as a little girl. She would make dozens a week and give to neighborhood kids. I would coat them with that ooey good frosting. I recently won a blue ribbon with this recipe. It was also featured and put in newspapers all over the U.S. Then it was voted as 1 of 100 top recipes to be put in the 2011 Members Choice cookbook. They are like eating a flavored cloud. So light and fluffy. Hope you enjoy them as much as we do.

Steps:
- Pour 1/2 cup of warm water into a small bowl, and stir in the yeast and 1 teaspoon of sugar. Allow the yeast mixture to stand until it forms a creamy foam layer on top, 5 to 10 minutes.
- Place milk and vegetable shortening into a small saucepan over medium-low heat and cook until the shortening has melted and the milk has tiny bubbles around the edge. Remove from heat.
- Place 1/4 cup of sugar and the salt into the work bowl of a large stand mixer and pour the milk and shortening into the bowl. Mix on low speed just to dissolve sugar; and allow mixture to stand until warm.
- Beat in the yeast mixture, eggs, and 1 cup of flour on low speed until smooth. Gradually beat in remaining flour to make a soft dough.
- Continue beating the dough on low speed until dough leaves the sides of the bowl, 2 to 3 minutes.
- Turn the dough out onto a well-floured work surface and knead until smooth and elastic, 2 or 3 more minutes.
- Form the dough into a ball and place into a large greased bowl. Grease the top of the dough, and cover the bowl with waxed paper. Set the bowl into a warm place; let the dough rise until doubled in size, 1 to 1 1/2 hours.
- Punch down the dough and roll out on a floured work surface to 1/2 inch thick. Cut doughnuts out of the dough with a 3 1/2-inch round doughnut cutter with a 1-inch smaller cutter in the center. Let the doughnuts rise on the work surface until very light and fluffy, 40 minutes to 1 hour.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Gently pick up and drop the doughnuts into the hot oil, working in small batches of 2 or 3 at a time, and cook until the doughnuts are light golden brown, turning once, about 2 minutes.
- Drain the doughnuts on paper towels to absorb oil.
- In a bowl, mix 1 tablespoon of warm water and vanilla extract, and stir in the confectioners' sugar to make a glaze. Spread a thin layer of glaze over the warm doughnuts.

EASY GLAZED NUTS

- Preheat oven to 350 degrees F.
- Spread the nuts out evenly over a small baking sheet. Bake for 5 minutes, or until nuts are fragrant and toasted.
- Remove the nuts from the oven and spread them out evenly across the bottom of a 10-inch non-stick skillet. Sprinkle the sugar evenly over the nuts. Cut the butter into 6 little pieces and scatter them over the top. Turn the heat under the skillet to MEDIUM-LOW. Cook, stirring occasionally, until the butter has completely melted and sugar is almost completely dissolved. Add water. Increase heat to MEDIUM and cook, stirring constantly, for two to three minutes, shaking the pan occasionally, until the water cooks completely off, the sugar has completely dissolved, and the buttery sugar mixture is mostly sticking to the nuts. Pour the nuts out on to a sheet of wax paper or foil. Use a wooden spoon to separate them a little so they don't all stick together as they cool.
- Allow the glazed nuts to cool completely before serving.

GLAZED MACADAMIA NUTS
I came across this recipe years ago, and it's been a hit ever since. Family and friends can't stop nibbling on the sweet coated nuts.

- Spread macadamia nuts in a single layer in a greased 15x10x1-in. baking pan. Bake at 250° for 5 minutes; set aside. , In a heavy saucepan, combine 6 tablespoons sugar, corn syrup, oil and salt; bring to a boil, stirring constantly. Boil without stirring until a candy thermometer reads 238° (soft-ball stage). , Remove from the heat; stir in butter until melted. Pour over nuts; stir to coat. Bake for 50-55 minutes or until lightly browned, stirring occasionally. Sprinkle with remaining sugar; toss to coat. Spread on foil to cool. Break apart and store in an airtight container.

I make these wonderful sweet nuts using pecans every year for Christmas. They are a true delight, especially if you are a lover of nuts. If pecans aren't your forte, substitute walnuts. Happy Holidays!

- Preheat oven to 325 degrees F (165 degrees C).
- Beat egg whites until soft peaks begin to form. Add sugar, salt and vanilla; beat until stiff peaks form and turn glossy. Fold in nuts and coat well with the egg white mixture.
- Melt butter in a 9x13 inch baking pan by placing pan in the oven. Evenly spread coated nuts over melted butter in pan.
- Bake for 30 minutes, stirring and turning nuts about every 8 minutes, or until butter no longer remains in pan. Place hot nuts on foil and allow to cool. May be stored in an airtight container for several weeks!

- Preheat oven to 350°. Cream butter, shortening and granulated sugar. Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt; gradually add to creamed mixture alternately with buttermilk and vanilla. Beat on low speed just until combined. Stir in ground walnuts. , Pour into three greased and floured 9-in. round pans. Bake until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool 5 minutes; remove from pans to wire racks to cool completely. , For frosting, beat cream cheese and butter. Add confectioners' sugar; mix well. Beat in vanilla until smooth. MY MOTHER'S GLAZED NUTS
I'm not sure where my mother got this recipe, but she made a big batch of these for Christmas this past year, and I kept going back to the jar for more! She used pecans for her batch, but I suppose that walnuts or any other kind of nut would work.

- Preheat oven to 325 degrees.
- Beat egg whites.
- Add powdered sugar (and optional brown sugar) and beat the egg white mixture until stiff.
- Add vanilla extract.
- Fold in nuts to coat with the glaze.
- Spread melted butter on a cookie sheet.
- Sprinkle nuts on buttered cookie sheet and spread them out.
- Put nuts in oven and stir every 10 minutes (to avoid burning) until they are crispy and a light cream color.
- Sprinkle lightly with salt to taste.
- Allow to cool.
